It's my go-to recipe whenever I run out of ideas to cook or if I have a midnight hankering for something I can't put a finger on. What's great with pancit canton is that you can make it with almost anything. You can make it quite special with a bazilion ingredients or really simple with just a couple of things you have in your fridge.<br /><br />Here's a quick and easy pancit canton recipe that came to me out of necessity. . . at 1 A.M. in the morning . I needed a quick fix and just used what I had on hand. This one is literally That's It Pancit!<br /><br />WhatYahNeed:<br /><br />2 tablespoons oil<br />1 small onion sliced<br />2 cloves of garlic crushed<br />1 tablespoon light soy sauce<br />1 tablespoon oyster sauce<br />1/2 cup water or more if too dry<br />1/2 teaspoon white sugar<br />dash of pepper<br />a couple of frozen kikiam (Filipino fish sticks)<br />half a small carrot shredded<br />a quarter of a small cabbage shredded<br />1 250gram pack of cooked canton noodles<br /><br />a dash of sesame oil, just because I saw it next to the soy sauce ;-)<br /><br />WhatYahGottaDo:<br /><br />1. Wash your noodles in hot water then drain and leave it alone. Meanwhile, heat the oil in a shallow pan over medium heat. If you have a giant strainer to drain the noodles in and a wok to cook in, feel good about yourself, you're kitchen is better equipped than mine ;-)<br /><br />2. When the oil is hot enough but not smoking, saute the onions first then add the garlic after a minute or two. Letting the onions sweat it's juices prevents your garlic from burning. Burnt garlic just won't do, like EVER. When you start smelling the garlic pour in the soy sauce, oyster sauce, water, pepper and sugar. Let it simmer.<br /><br />3. Throw in your fish sticks or fish balls or squid balls or left over roasted chicken or pork, well you get the point, you can add whatever left ever meat you have as long as it's still good to eat. At least, learn to start the car. Sofie is going to big school soon and it will be difficult for hubby to drive her everywhere. So, with butterflies in my stomach we went to the cemetery (can't do much damage there) for a little driving lesson after dropping off the diva. </span></div><br /><div style="text-align: justify;">See, ignoring the law really brings you no good. Right at the gate there's this big sign that says "No, practice driving". Rules schmules! Ignored it right off. We went around and paid a little visit to my brother then hubby handed me the keys and made me sit in the driver's seat. He told me about the gears, the clutch, gas and break. I made sure I remembered the break well. He told me to step on the clutch and put the key on the ignition. Tadaaaa! I started the car! Now, it's time to get moving. Right. Hubby said that it should be the right mix of stepping on the clutch and the gas. In my head all I kept thinking was "The break is in the middle, just hit the breaks and nothing will happen." I tell myself, "Your father and brother are really good drivers, it's in the genes" I stepped on the clutch and slowly stepped on the gas... well maybe not slow enough. The car lurched forward really fast, I freaked and stepped on the gas. Thank God for seatbelts! Hubby said that I should step on it slowly,said something that implied it's better to learn from a driving school and for about 30 seconds he freaked. Well, maybe not so much. But in my head, he really freaked. I went over to the passenger side and pouted myself silly. Yeah, pouted like a teenybopper that I'm not. </div><div style="text-align: justify;"><br /></div><div style="text-align: justify;">For some stupid reason, I started crying. Hubby was saying sorry and tried to comfort me. Even offered shopping. Bribery! I still kept crying and it was hubby who told me that it was no longer about driving anymore. He was right. My dad and my eldest brother were really good drivers. I always thought that I would learn from them. When my Dad taught my brother how to drive I was often in the back seat, listening to his gentle instructions. Together, they made it look really easy. Too bad they're no longer here to teach me. So, I cried and cried and cried. Hubby cried with me too. </div><div style="text-align: justify;"><br /></div><div style="text-align: justify;">After so many years, I'm still not done mourning. Then I thought about my mom, my dad and my brother and the things we didn't get to do and can't do anymore and it hit me. Even at 33, I still feel like an orphan. I had my egg on the side which the staff were very happy to accommodate. The meal was hefty and delicious, the strawberry jam was something they could improve on though. It would have been better if it was more like Good Shepherd and a little less like those little packets often served with hotel breakfast toast. In my experience, it is never a good sign since that means A) the food is not that good B) Service sucks and C) Chances are, the food you'll be eating has already served it's jolly time in the resto freezer. NONE of these things apply to Stacy's, it turns out we were lucky we got there before the lunch crowd. By the time we started with our meal the place was packed and as much as we wanted to linger, we took pity at a couple of grandpa's sitting patiently at the kiddie table.<br /><br />Over all we loved the food, the ambiance, the service and it's very kid friendly. In a non-reactive bowl mix the vinegar and baking soda, don't be surprised when it sizzles, mix the flour, water, salt and pepper. During this time, I've known and interviewed a lot (and I mean a LOT) of people who could have been hired, except that they were not able to express themselves well in English. In college, I made extra cash from teaching </span><span style="background-color: white;">English as a Second Language to Koreans, most of my students wanted to study the language to enhance their careers. </span></div><div style="text-align: justify;"><span style="background-color: white;"><br /></span></div><div style="text-align: justify;"><span style="background-color: white;">When we had Sofie, we didn't want her to have the same problem, regardless of what field she may want to get into when she's older, so we taught her to speak in English. The rationale was, when she's old enough to attend school, she'll be able to learn Filipino anyway. </span><span style="background-color: white;">This theory would have worked except that her school uses English to teach preschool and almost everywhere we go, specially in urbanized areas, you can hear kids speaking in fluent English instead of Filipino. At home we can not watch a Filipino program without my daughter needing an interpreter. We do this once a week, although it still a Tag-lish day at this point since Sofie only knows a handful of </span><span style="background-color: white;"> </span><span style="background-color: white;">words like "Opo", "Hindi po", "Salamat", "Walang anuman" and "Tubig". We know she can understand a bit already since she often joins the conversation when her Dad and I speak in Filipino even if she answers in English. It's not much but it's a start, baby steps. </span></div><div style="text-align: justify;"><span style="background-color: white;"><br /></span></div><div style="text-align: justify;"><span style="background-color: white;">3. <b>Filipino Activities / Worksheets.</b> Even though she is already attending regular school, we still do home school at least 3 times a week. It can be done with chicken, pork, fish, beef and even vegetables. I stirred in 1 pack of McCormick Adobo Pula mix along with half cup of water. I let it simmer until cooked and served with steamed rice. What's the point of all the art materials? What are kiddie scissors for? And by gawd! What is the point of my beautiful new shoes?!"</div><div style="text-align: justify;"><br /></div><div style="text-align: justify;">I'm not saying that my folks were wrong in raising me, I turned out okay after all. All I'm saying is that hearing "NO" all the time can get really old and most of the time, with kids these days it really doesn't work. I've learned this from experience as well as from parenting books that kids are unique, inquisitive, creative and intelligent human beings. Children are PEOPLE, not mini-walking-talking-things that you can just order around. Saying "no" all the time prevents them from blossoming into the great people that they are. Sometimes, it's even easier to parent this way than having constant battles and cry-fests. Who needs all of that, really. </div><div style="text-align: justify;"><br /></div><div style="text-align: justify;">Don't get me wrong, I'm not after raising a spoiled brat. There are certain values that hubby and I are strict about and can not compromise. However, for the little things, I just think that there are ways in working around the word "No". Explaining why certain things can not be done and letting the child know the consequences of such behavior often gets more results. <span style="background-color: white;">I find that this approach is more effective than flat out saying "NO". It works for my four year old as well as most adults I know. </span><span style="background-color: white;">For example w</span><span style="background-color: white;">hen my child is running crazy in the mall or any public place, I say </span><span style="background-color: white;">"I know you're excited to play in the mall but can we walk properly to the play area so we will not have an accident?".
