The Romans, of course, added pasta and Parmesan, and a classic was born. In many Roman restaurants these days, the softer flavor of &lt;i&gt;pancetta&lt;/i&gt; or salted pork jowl (&lt;i&gt;guanciale&lt;/i&gt;) is substituted for smoky bacon. The choice is yours.
