Depois que a água secar completamente, deixe fritar por mais alguns minutos, até que a carne esteja bem sequinha. Junte a noz-moscada, o sal, a pimenta e o extrato de tomate e misture bem. &lt;br /&gt;

&lt;li&gt;pimenta-do-reino a gosto&lt;/li&gt;
&lt;li&gt;1 colher (sopa) rasa de colorífico&lt;/li&gt;
&lt;li&gt;2 folhas de louro&lt;/li&gt;
&lt;li&gt;2 colheres (sopa) de óleo de coco, azeite ou outro óleo de sua preferência&lt;/li&gt;
&lt;li&gt;2 dentes grandes de alho ou 3 dentes médios&lt;/li&gt;
&lt;li&gt;6 xícaras (chá) de água&lt;/li&gt;
&lt;/ul&gt;
&lt;br&gt;

&lt;strong&gt;Modo de preparo:&lt;/strong&gt;&lt;br&gt;&lt;br&gt;

Escorra o feijão, coloque em uma peneira e lave em água corrente. &lt;br&gt;
Aos poucos, coloque pequenas porções em um prato e retire as cascas, grãos estragados ou outras impurezas. Após escolher cada porção, vá colocando em uma panela de pressão. Faça isso até escolher todo o feijão.&lt;br&gt;
Na panela de pressão com o feijão, coloque a água e os outros ingredientes. Tampe a panela e deixe cozinhar por 5 minutos após pegar pressão. Desligue o fogo e espere que a pressão saia, sem abrir a válvula.&lt;br&gt;

Quando a pressão já tiver saído completamente, abra a panela e veja se os grãos já estão macios, Se ainda estiverem duros, tampe a panela novamente e leve ao fogo por mais 5 minutos.
&lt;br&gt;
Desligue o fogo e espere a pressão sair naturalmente. &lt;br&gt;
Abra a panela, retire os dentes de alho e amasse-os em um prato. Volte o alho amassado para a panela, misture bem e sirva. Se o caldo não estiver grosso o suficiente, deixe o feijão ferver por alguns minutos, com a panela destampada.&lt;br&gt;&lt;br&gt;

Obs: Se preferir, coloque uma cebola pequena inteira pra cozinhar junto, depois amasse-a e coloque-a de volta na panela.

Em uma panela grande, coloque bastante água para ferver com um pouquinho de sal e um pouquinho de óleo. &lt;br&gt;
Em uma tigela coloque as batatas cozidas e espremidas. Espere esfriar e junte as gemas, o sal, a manteiga, o açafrão e as raspas de limão. Em uma superfície enfarinhada, junte a farinha aos poucos, misturando com as mãos até dar o ponto.&lt;br&gt;
Passe a massa pela nhoqueira ou faça um cordão com a massa e corte na espessura de um dedo.&lt;br&gt;
Coloque uma porção dos nhoques já cortados (mais ou menos 20) dentro da panela com a água fervente. Espere subir, retire com uma escumadeira, coloque num escorredor e passe imediatamente por água fria em abundância. À medida que for escorrendo, vá colocando em um refratário.&lt;br&gt;

Dependendo do alho, em cinco minutos já está bom pra descascar, uns demoram mais, outros demoram menos mas, geralmente em 1 hora de molho a casca já desprende facinho, facinho.

Tempere os bifes com os temperos e deixe pegar gosto por, pelo menos, 20 minutos.&lt;br /&gt;
Em uma frigideira grande e em fogo alto, aqueça bem o óleo e coloque os bifes, de um em um ou de dois em dois, para não juntar água (se juntar água, espete os bifes com um garfo grande e erga-os, mantendo-os fora da frigideira até que a água seque, então coloque-os novamente na frigideira). Frite os bifes até dourarem, dos dois lados. 
Se preferir os bifes mais dourados, depois de fritos, retire-os e reserve-os aquecidos. Mantenha a frigideira no fogo até que esteja bem dourada. Coloque um pouquinho de água na frigideira (cerca de 1 ou 2 colheres (sopa)), e mexa bem para que o dourado da frigideira se desprenda. Quando a água estiver evaporado quase toda, coloque os bifes rapidamente, passando-os por toda a frigideira, dos dois lados, até que estejam bem dourados. Sirva em seguida.&lt;br /&gt;
&lt;strong&gt;Dica: &lt;/strong&gt; Ao colocar de volta na frigideira os bifes fritos reservados, se os bifes soltaram água, junte essa água ao caldo da frigideira e espere secar quase toda, aí então coloque os bifes e faça o processo de incorporar o dourado aos bifes.

Misture todos os ingredientes, menos o azeite e reserve.&lt;br /&gt;
Forre uma assadeira com papel alumínio e unte o papel com azeite. Disponha as batatas, lado a lado, sem deixar uma em cima da outra. Regue com um fio de azeite e feche o papel alumínio. Leve ao forno médio (180°C) por aproximadamente 20 minutos ou até que as batatas estejam macias. Abra o papel alumínio e confira se não tem nenhuma batata grudada no papel. Aumente o fogo para  200°C ou acima e espere as batatas dourarem.&lt;br /&gt;
