Tofu with beet root is not only a delicious dish but its luminous color is very appetizing because a friend chef of mine said once that before putting the food into our mouth and tasting it. We first have it with our eyes. There are few such dishes looking at them you get the vibes of goodness and health. Beetroot is superstore house of Vitamin C and iron and the root. The beta cyanin in beetroot can help detox your liver, it have a knock on effect for our blood stream and help the body to eliminate toxin and potentially preventing the buildup of fatty deposits. Tofu on the other hand is low in fat, calories and cholesterol. It is an excellent source of high quality protein from non meat foods. Tofu is also rich in calcium and good source of Vitamin B. So tofu with beetroot is not only a yummy dish, but a pack of healthy goodness.

Ingredients:

Egg 1
Onion 1tsp chopped
Green bell pepper 2 tsp
Tomato 1tsp chopped
Chicken seasoning cube a pinch
Olive oil 4 to 6 drops
Black pepper freshly crushed

Procedure:
In a small bowl take chopped onion, green bell pepper, tomato and pinch of seasoning cube and 2 drops of olive oil. Mix well. Now heat your nonstick pan and add then add 4 drops of olive oil. Break the egg gently so that it breaks in half. Hold it over the frying pan as you break it, and let it gently drop into the hot oil. Immediately lower the heat and add the chopped onion, bell pepper, tomato mixture in the white part of the egg. Cover and cook for a minute. Then sprinkle salt and freshly crushed pepper. Have this delicious sunny side up egg with bread toast.
One more yummy cheesy finger food from my weekend party. This one is simple and even the kids can try their hand to make this yummy food definitely under their Mom’s supervision. A very simple to make food but skewers of prawn and grapes is loaded with goodness of juicy grapes and spicy prawn and cheese.

Ingredients:

Black grapes 20
Shrimp 20
Small cheese cube 20
Capsiko/ red pepper sauce 1tsp
Black salt a pinch
Sugar a very small pinch
Lemon juice ½ tsp
Butter 1tsp
Small skewers 20
Mint leaves 1tsp finely chopped

Procedure
Clean and devein the shrimp. Now marinate the shrimp with black salt, sugar and red pepper sauce. Melt butter in a pan and sauté the shrimp till cooked. Put off the flame. Sprinkle lemon juice. Mix well.
Now take the small skewers first put the black grapes then the sautéed prawn and then the cheese cube. When you finished with all then place them on a serving plate and sprinkle chopped mint leaves.
The sweet black grapes will balance the peppy taste of the shrimp if you are making it for the kids use sweet sauce instead of red pepper sauce.
Serve it with any of your favorite mock tails it’s just too yummy!

I was looking for an easy side dish and I found one that is healthy soothing and goes perfectly with my taste. Honey and mustard glazed carrot goes well with pork chops but I take grilled lamb chops with it some mashed potato and garlic croutons. Sound a bit crazy combo but that’s the way I go, you can try it my way or take this delicious honey mustard glazed carrot in whatever way you like. This dish is just scrumptious.

Ingredients:

Baby carrot 8 to 10
Honey 1tbsp
Mustard paste 1tbsp
Lime juice 1tsp
Butter/ canola oil 1tbsp
Salt and pepper to taste
Parsley finely chopped 1tsp
Grated cheese 1 tsp

Procedure:
Take a all the peeled carrot in a pan filled with water and then boil the carrot till they are fork tender. Now strain all the water. In a bowl mix honey and mustard, salt and pepper. Heat oil or butter in a pan then add the carrot and then the honey mustard mixture. Toss and cook till they are well coated. Put off the flame and sprinkle lime juice, chopped parsley and grated cheese. I am sure you will love the taste of honey and mustard glazed carrots.

This Sunday I threw a very simple party for few of my close friends. Yes it is just a simple snacks party in the afternoon with tall glass of spiced up lemon sodas and few batches of finger foods and lots of chats and good moments shared. I am sharing the one which catch the eye and the tastes of all my friends. This one is healthy but bit different and I hope you all will love it. I use date paste to make this sweet and salty cheesy bites. Dates as you all know are rich in fiber which can slow blood sugar spikes down and are good source of potassium, iron, numerous antioxidant and Vitamin- A. I am sharing this successful healthy experiment of mine with you and I am sure if you try sweet and salty cheesy bites just once, you will like it.

Ingredients:

Pitted dates 1 cup
Light cheese crackers 30
Cheese cube 8 to 10
Ginger juice ½ tsp
Back salt ¼ tsp
Small Tomato cubes and spring onion chopped for garnish

  Procedure:
The twist of this simple recipe is the dates paste and this need a little time to make once made you are on. To make dates pastes take 2/3 of hot water over the dates and let them soak for an hour and then put them in your blender and blend. While you are blending add the ginger juice and the black salt. Your date paste is ready. If you don’t want gingery smell then you can go without it. Take the crackers and place a small size of cheese cube above it put a some dates paste. Then to give a little color place a small cube of tomato and spring onion you can also garnish it with sprigs of fresh mint. Bingo your delicious sweet and salty cheesy bites are ready to munch!

Chicken soup is one thing that needs no special occasion to make. Whenever I need a to comfort myself I make chicken soup, but one thing is for sure every time I try to combine different spices to make it more delicious. This time I am inspired from Portuguese piri piri sauce. So these chicken pepper soups have a Portuguese touch but as this sauce is bit too hot so I replaced chilly with black pepper and hope you will like this spicy tangy chicken pepper soup.

Tomato sauce 1 tbsp
Ginger garlic paste 1tsp
Chicken seasoning cube 1

Stir and cook for minute or two then add 2 cup of water, you can add more or less according to your choice. When it comes to boil add the seasoning cube and tomato sauce. Mix well. Cook for 1 to 2 minutes then add grated cheese and lemon juice (you can add more or less according to your choice). Put off the flame and serve hot. I hope you will love this spicy cheesy tangy chicken pepper soup.
Stir fried vegetables with some hot garlic bread is one of my favorite. To make simple stir fried vegetable is not always that easy but today I am sharing with you one that is too simple and extremely delicious and quick to make. In this dish I use lots of broccoli and carrots as they both are very good for health. Carrot infuse good nutrition and flavor in your diet as it helps to reduce cholesterol and good source of vitamin A. Broccoli on the other hand is a versatile vegetable loaded with down home goodness and super nutrients, good for bone health, nervous system and rich in fiber. I am sure you will love the healthy combo in my stir fried vegetable dish.

Ingredients:
Onion 2 big cut in to chunks
Broccoli 1 cut into florets
Carrots 2 cut into chunks
Garlic 2 cloves chopped
Green peas ½ cup
Chicken seasoning 1
Salt and pepper to taste
Canola oil 2 to 3 tbsp

For stir fry sauce
Tomato sauce 1 tbsp
Chilly garlic sauce 1tbsp or to taste
Mustard sauce 1 tsp
Soy sauce 1/2 tsp
Lemon juice 1tbsp
Brown sugar ½ tsp

Procedure:
Take a small bowl and mix all the sauces , sugar and lemon juice. Mix in such a way so that sugar completely dissolves. Adjust these flavors to suit your taste. Now heat oil in a pan add chopped garlic sauté then add the onion and sauté for a minute till they get little transparent. Add carrots and broccoli and green peas. Sprinkle the chicken seasoning. Toss and cook for a minute then add the stir fry sauce. Toss and cook in such a way so that the veggies get well coated with the sauce but the veggies retain it crispiness. Adjust seasoning. Now put off the flame, if you want you can add little fresh lemon juice at the end and finish off. Have this yummy stir fried vegetable with garlic bread or any bread roll of your choice. Happy Valentine’s Day to all my beloved friends, readers and visitors. Today I thought why not share with you a very delicious mock tail recipe Mississippi Blue which is mainly a mock tail with blue Curacao . I think such colorful drink can work wonder in a cozy dinner table. There is also a trick behind this glass, if you’re not getting any way to tell your beloved that you want a to go for a beach holiday or want to join a crazy beach party then such blue color drink can be a good indicator (haha).
For the day of love I raise the toast for all my friends all over the world saying– Where ever you go and whatever you do, May love and luck be there with you. Enjoy the mocktail and sink in the deep ocean of love.

Ingredients:

Blue Curacao 5tbsp
Lemon juice 3 tbsp
Lychee juice 600 ml
Lime juice 1tbsp

Procedure
Take your shaker or put all the juices in your blender and blend it well or give some good shake. You can rim the glass with some powdered sugar. I skip this as I don’t like too much sugar while taking the drink. Now serve the chilled drink mix in any of your chosen cocktail glasses. This blue Curacao mock tail is very tasty and I am sure your beloved will be surprised to have such super loving bartender by his or her side, who can play so well with drinks.
The month of January ends up so quickly and season of love starts. For this season I have some special recipes for you, today I am sharing with you my first Valentines recipe rosemary garlic shrimp. I hope you will like this rosemary garlic shrimp. For this recipe I use Indian scampi or small lobster you can use any big size shrimp or prawn.

Ingredients:

King prawn/jambo shrimp 3 to 4
Fresh rosemary or dried 1 tsp
Garlic paste 1 tsp
Olive oil 1tbsp and 1 tsp
Paprika powder ¼ th tsp
Lemon juice ½ tsp
Salt to taste

Procedure:
Marinate the prawn with fresh rosemary, salt, garlic paste and paprika and 1tbsp of oil for a hour or two. This will help the prawn to incorporate all the flavors. Now heat remaining oil in a skillet and then slightly fry both side in such a way so that the prawn remain soft, juicy and well cooked. Serve it with a dash of lemon juice and fresh coriander.

It is not always recipes that I want to share with my readers and friends, today I want to share with you a guest article from Julia Wisniewski where she point out a serious issue-Fibromyalgia and Gluten Allergy. I hope you will find something helpful from this guest article of Julia.

                                               Fibromyalgia and Gluten Allergy
As scientists are learning more and more about chronic pain syndromes, such as fibromyalgia,
they are discovering a link between some FM symptoms and gluten allergy.

To understand the link between gluten allergy and fibromyalgia we need to outline the symptoms
of each.

Fibromyalgia Symptoms

1. Chronic Pain- this is the most common and defining symptom of FM
2. Numbness or tingling in the extremities
3. Sleep Disturbances – that can lead to the next symptom, which is,
4. Fatigue

Gluten Allergy Symptoms

1. Abdominal pain - the gluten that you are sensitive irritates the bowels and causes pain
2. Fatigue – this is due to the fact that you aren’t absorbing all of your nutrients
3. Joint Pain
4. Weight Loss

Connection
There has been research that shows that diseases of the digestive system, such as irritable
bowel syndrome or the irritation that a gluten allergy produces in the digestive tract, lead to
muscoskeletal disorders. The study linked certain digestive conditions to rheumatic diseases. All of these conditions are linked to each other, and this study proves that people with fibromyalgia should be screened for gluten allergy or even intolerance.

Conclusion
If you are experiencing some or all of these symptoms, you should talk with your doctor about
being tested for a gluten sensitivity or even Celiac Disease. Talk with her or him about slowly
taking gluten out of your diet. Keep a journal about how you feel each day without (or less)
gluten to see if the switch is helping your quality of life. If a gluten-free diet turns out to be the right choice for your lifestyle, try a gluten free bread machine or recipes for comfort foods that you can still enjoy on a restricted diet.
It’s time to go simple yet delicious food. This dish can be served as both lunch or dinner as this has both protein and crab neatly combined in it. I hope you will like this simple fish croquettes recipe accompanied with grilled zucchini.

Ingredients:

For fish croquettes
Meaty white fish (boiled deboned and mashed) 2 Cup
Boiled potato mash ½ cup
Garlic paste 1 tsp
Ginger paste ¼ tsp
Egg 1
Bread slice 1
Bread crumb 1 cup
Salt and pepper to taste
Oil for frying
For pan grilled zucchini
Large yellow zucchini 1 cut into one inch round slice
Onion 1 sliced
Olive oil/ canola oil 1tbsp
Mustard powder ½ tsp
Salt and pepper to taste

Procedure:
Take a bowl and put the boiled mashed fish, mashed potatoes and salt and pepper and ginger and garlic paste with a bread slice. You can mix well with your hands or put it on your food processor and mix until well combined. Meanwhile beat the egg with a pinch of salt and pepper. Now take portion of the fish mixture and give them the shape of croquettes. Give each fish croquettes a generous egg wash. Now roll them in the bread crumb. Let it rest in the refrigerator for half an hour. Now bring them out and you can deep fry them or shallow fry them (this is what I have done) or you can even bake them.
Now take another cast iron skillet and heat 1 table spoon of oil over high heat. Then place the sliced zucchini and onion in the skillet to form layer. Cook carefully being sure not to burn them. Flip over every now and then to ensure even cooking. Once they begin to soften and blacken remove from skillet and season with salt pepper and mustard powder. Serve hot fish croquettes with hot grilled zucchini with some green sliced cucumber and I hope you will love the combo.
I hope you all have great time during Christmas, swimming in delicious cakes and cookies. Now let me add another baking delight from my treasure box for the New Year 2012. The whole credit for these chocolate stuffed cookies goes to my aunt, who helps me to bake the lime cake. She was by my side to make this wonderful delight but I must admit the first batch was a funny disaster, my aunt went to attend a phone call and brilliant me add something more and the result was broken batch of cookies. But finally she takes the charge to teach me the perfect chocolate filled cookies and you can see the result. The last batch of the cookies came out perfect and I think they knew that they are the models for the last photo shoot for 2011.They posed perfectly like a super model, now it’s your turn to give them an opportunity to walk on the ramp of your serving dish!

Ingredients:

Unsalted butter softened 1cup
Brown sugar 1cup
Granulated sugar 1cup
Vanilla extract 2tsp
Peanut butter ½ cup
Egg 2 large
All purpose flour 2 ½ cup
Unsweetened coco powder 1cup
Baking soda 1tsp
Chopped chocolate for stuffing the cookies

Procedure
Preheat the oven to 350 F and line cookie sheets with parchment paper. In a bowl mix flour, coco powder and baking soda. Cream butter using a electric mixture at medium speed in a bowl. Now with this gradually beat granulated sugar, then brown sugar and peanut butter until everything is well blended. Then add the egg, vanilla extract and continue beating until this whole thing is well combined with each other. Then fold the flour mixture into the butter mixture. Now wrap the dough in a cling film and let it rest in the refrigerator for 30 minutes. Next roll the dough and then cut out circles of 1.5 inch. Place the chopped chocolate and gather together the side to enclose the chocolate. Place on the cookie sheet and bake for 8 to 10 minutes. Remove on a cooking rack and just enjoy.
You all know by now that I am not a person who excels in baking. Soups, salad and various other easy quick dish and Indian dishes are my forte but when its Christmas there is something magical about baking. So this year I went to my baking expert aunt, asked her to help me out to make a delicious cake but which will be super easy. She suggested me to make lime cake, this is easy for her but not for me..(haha)... it took lot of patience but worth the effort. I make this cake in her house under her supervision which I must admit one of the best cake I ever made till date. I hope you will like this lime cake too!
Ingredients:

All purpose flour 11/2 cup
Baking powder ¼ tsp
Baking soda ¼ tsp
Salt ½ tsp
Sugar 1 cup or to taste
Eggs 2
Lime zest ¼ cup
Lime juice ¼ cup
Unsalted butter softened ½ cup
Whole milk ½ cup
Vanilla extract 1tsp
Lime syrup:
Sugar ¼ cup
Lime juice ¼ cup

Lime Butter Cream Frosting
Unsalted butter softened ½ cup
Lime zest 1 tsp
Vanilla extract 1tsp
Salt 1/8 tsp
Lime juice 3 tbsp
Milk 2 tbsp
Powdered Sugar to taste

Garnish
Strawberry jam 1 tbsp
Chopped almond 1 tbsp
Lime zest 1 tsp

Procedure:
Preheat the oven to 350 degrees. Grease and flour a loaf pan (8 ½ by 41/4 –inch) and line the bottom by parchment paper or with waxed paper to fit the bottom only. Take flour, baking powder, baking soda and salt in a bowl. Mix well. Keep aside. In another bowl take butter and sugar and with a stand mixture beat until fluffy for about 4 to 5 minutes. Turn the speed down to medium and then add the eggs one at a time, after adding each egg mixed for about one minute. After that add lime zest and mix well. In another bowl whisk the vanilla extract, lime juice and milk. Now come the tricky part alternatively add the flour and the wet ingredients to the large mixing bowl starting and ending up with flour mixture. Pour the batter into the loaf pan and bake for 45 minutes or until a cake tester comes out clean from the cake. Remove and let cake slightly cool in a pan on a rack. After about few minutes remove the cake from the pan and put it on the rack. It should be still warm, but not hot. Now, simply whisk the sugar and the lime juice together, and slowly spoon this lime syrup on top, so it soaks into the cake. You can skip the lime butter frosting and relish the cake like this but to give this cake a more festive look I make the lime butter frosting. For that beat butter, lime zest, vanilla extract and salt at medium speed with an electric mixer until creamy. Gradually add the powdered sugar and the lime juice and 1tbsp of milk beating at a low speed until blended and smooth. You can add more milk to get desired consistency. Now spread evenly over the cake you can also put some in a piping bag and make a design and to add more color top with strawberry jam and sprinkle some lime zest and chopped almond. Your delicious lime cake is ready to relish.

I came across an extraordinarily wonderful site that all food lovers will love to try - Smorgie.com. I must say thanks to Foodie Blogroll for giving me the wonderful opportunity to test and review this site. The best thing about this site is, it helps to keep track of the restaurant one have eaten or like to try. The database is huge, you only name the restaurant and the nearby location and it will show all the possible names found and from that you can easily choose the one you are looking for. It will give the type of cuisine that is served , their address, phone number and the best is, there is an automatic map that's generated of all the restaurant locations on the list. You can make a list of your favorite restaurant and also share it with your friends.

Friends of mine who live in USA send me the names of all the delicious restaurant which prepares awesome Indian meals with the name of all the special menus prepared there, I am telling you it’s very hard sometime to remember them in time of need. So I create a list of the Indian restaurant. I create this list so that next time when I will visit USA for vacation or any other reason I will not miss my home food. The fun part is I can share this list with my Facebook friends, twitter followers, pinterest and send email to a friend or relatives who are looking for Indian food in USA.

Smorgie is on iPhone too so there is no way you can miss track on the list of your favorite restaurant. One more feature of this site is, you can add friends from Smorgie.com and search their list and add restaurants from their list. This way you can come across many new food spot that are worth remembering and keeping track on.

For me Smorgie com is not only a user friendly site but also very helpful for all foodies who love to eat out. I am fan of Smorgie.com.

It is a brand new site and I hope it will add many new and interesting features that will make this site more fun filled and exciting in coming days. I want in near future, Smorgie add restaurant from all over the world so that traveler or tourists can easily get the name of restaurant and foods they are looking for. I am looking forward to see more of my foodie friends on Smorgie .com.

I am recommending all my blog readers and friends to try this new website it is absolutely free and easy sign up. I want to see a large Smorgie community where we food lovers can explore new food destination and keep track on our favorites.
Winter means lots of fresh veggies in the farmers market and one of my favorite is sweet fresh peas. The other day when I visited the market I can’t resist buying a large lot of fresh peas. Now the game begins after I buy the lot I could not found out any suitable recipe. Then one of my favorite chef came into my thoughts and she helped me ……. Guess who? Its Julia …..our Julia Child. This recipe is inspired from her buttered peas from her book the Art of French Cooking.
I just add chicken chunks with this recipe and I am telling you when peas and chicken are mixed in such a friendly ambience they work wonder.

Ingredients:

Shelled fresh green peas 2 ½ cups
Chicken cube ½ cup
Garlic 1 clove
Sugar 1 tsp
Butter 3 tbsp
Fresh mint leaves 3 tbsp finely chopped
Lemon juice 1 tsp
Kosher salt to taste
Freshly ground pepper to taste

Procedure
First take the chicken chunks and boil with chopped garlic and salt till they are tender. Drain. Now in a pan boil water and drop the peas and cook uncover for 5 minutes until they are almost but not quiet done. Now in a pan take ½ tbsp of butter and roll the boiled chicken chunks in it with a little salt and pepper. Keep aside. Now in that pan roll the peas over moderate heat for a moment so that the moisture evaporates. Then roll them with sugar, salt pepper and butter and cover and cook over low heat for about 6 to 8 minutes, tossing occasionally, till the peas are tender. Now add the chicken chunks adjust seasoning. Put off the flame. Mix freshly chopped mint leaves and lemon juice. Take it in your serving dish and serve hot as soon as possible. I hope you will like my version of buttered peas.
