Everards Tiger Sausage & Mash burger

Sausage and mash cooked on the BBQ? Surely the mash would fall through the grill? Not when the mash is encased in a herbie, juicy minced pork patti Not only does the mash ooze out in a molten, buttery way when you cut into it, but it prevents the classic bbq problem of drying out burgers or leaving them raw in the middle.

Makes 4 hefty burgers

200g mash potato

600g minced pork

1 onion, finely chopped

2 cloves garlic, crushed

1 tsp sage, finely chopped

1 tsp chives and parsley, finely chopped

75 ml Everards Tiger

Salt and pepper to taste

Instructions

Combine all the above ingredients, except the mash and divide into 8 equal sized patties.

Make a well in 4 of them and add a spoonful of mash to each recess.

Put on the lids and seal well around the edges.

Re-shape into a pattie, brush with oil and cook on the bbq for several minutes on each side until nicely caramelised on the outside and the mash is heated through in the middle.

Serve in a seeded burger bun and coleslaw or salad. Discover more great tasting recipe’s using Tiger Best Bitter by clicking here

The Beacon shines through to double award

After claiming the top prize in the Best Pub and Hotels category in 2011 at the first time of entry, it’s a double delight for The Beacon in 2012. It cements the pub’s place as the finest fauna and flora hostelry in Loughborough.

The hanging baskets, six foot high displays and flower filled tubs and boxes helped the pub shine for the visits of the judging panel during the summer. A certificate to mark the achievement will be given to the pub in September.

Sharon Johnston, who has been licensee at the pub for the last two years, said: “It’s wonderful to have won the award for the second year running. “Winning the award is recognition of all the hard work we put into the displays.

“It’s great to have the pub looking so beautiful and appealing with all the different flowers, baskets and boxes we have and our customers really seem to appreciate our efforts.”

The latest award continues the shining success of The Beacon pub, since Sharon took over two years ago. Only last year the pub underwent a £90,000 refurbishment, which included a brand new kitchen and a new menu for the first time in its history.

A trip down memory lane

Brenda Norris, 85, returned to see the pub in its present day and share her child memories before receiving a book chronicling the history of Everards Brewery. She was presented with the book by current licensee Paul Blatchley, her first visit to the pub since 1937.

Back in 1937, the then eleven year-old Brenda was a far more frequent visitor to The Somerville Arms. She would attend the pub with her brother to visit their grandfather Walter Arthur and grandmother Clara Arthur, who were licensees at The Somerville Arms at the time.

The two children would look forward to their visits to the pub – at the time a genuine spit and sawdust-style traditional inn – with Brenda recalling fond memories of her time there. She has vivid recollections of reciting poetry to the ladies in the tap room and helping pump water from the on site well at the pub.

Brenda, who lives in Coventry, said: “It’s wonderful to come back to the pub after all of these years. There are quite a few things that have changed since I was last here.
“The tap room was not as big and there literally was spit and sawdust on the floor. I used to help my grandparents pump in the water and watch my grandmother cook on the big range at the back of the pub.

“I was also allowed occasionally into the tap room, which is where the ladies would exclusively sit. I would recite poetry to them and they would give me money. If they were sad poems, they would cry and they would give me more money. I realised quite quickly it was a good idea to read sad poems to them!”

Brenda also recalled how she and her brother had spent a couple of Christmas holidays at the pub. It was a time when the pub was the hub of the community’s festive celebrations.

Brenda, adds: “I remember Christmas visits would involve my grandparents being very busy in the daytime, when they would open up the pub. They would close again in the afternoon and we would all go off to sleep – you had to go to sleep – in preparation for opening up for the evening.

“I remember that my grandparents would tell me how the pub would be full at Christmas, with everyone locally coming along to join in the celebrations.

“In coming back here, it has brought back all these memories. I want to thank Everards for the book and Paul the licensee for arranging for me to come and visit the pub.”

Paul Blatchly, who has run The Somerville Arms for nine and a half years, said: “It was great to have Brenda back here at The Somerville Arms, 75 years since she last set foot inside the pub.

“She has some wonderful memories of her time here and it’s a real living history lesson to hear Brenda talk about her time here and how the pub has changed between then and now. It’s a privilege to have her visit and I hope she enjoyed her day.”

The Somerville Arms, was a hub of the community in the 1930s and it continues that way in 2012. It’s celebrating after being named CAMRA Best Heart of Warwickshire 2012 Pub of the Year for the second year running.

Hail the ale at The Midlands Best Kept Cellar

The Cradock Arms have even more reason to hail the ale as the pub has won the best kept cellar in the Midlands and Wales.

The Knighton-based pub in Leicester has just received The Publican’s Morning Advertiser’s Great British Pub Awards, Best Kept Cellar in the Midlands and Wales region. The prestigious award recognises the immaculate condition of the Cradock’s cellar and bar. Proving to be the best in the Midlands, licensees Jonathan and Leah Wainwright are now set to compete for the ultimate prize of Best Kept UK cellar.

They will attend a special awards ceremony at the Hilton Park hotel in London to find out if they have beaten the other 7 finalists to become the UK best kept cellar, however, whatever the result, winning the midlands title is a remarkable achievement for Johnathan and Leah Wainright.

Jonathan Wainwright, licensee at The Cradock Arms, said: “It’s the first time I have ever been entered into a competition like this and we are delighted to be named the best kept cellar in the Midlands and Wales. It’s especially pleasing as the Great British Pub Awards are recognised as the Oscars of the industry and so it’s fantastic we have made it through to the final.

“After only being at the pub for eight months the support from Everards Technical Services team has been great. Their on-going training has really helped us get to grips with raising the standards of the cellar and the bar areas and it was great to see this be acknowledged by the judges.

Mark Tetlow, Quality Assurance Manager at Everards, said: “Jonathan and Leah have worked extremely hard to ensure that their pub cellar is maintained to an excellent standard. The award is a reflection of their dedication to serving only the highest quality beers in their pub.

“Our Technical Services Team work with all our licensees to ensure Everards cellars are maintained to the highest standards and this is reflected inthe quality of beers our licensees serve to their customers.”.

This year a total of five Everards pubs featured in the regional judging stages of the competition, three of which were based in Leicestershire including The Rutland & Derby, Leicester, The Elephant & Castle, Thurlaston, The Greyhound, Burton on the Wolds, The Winstanley Arms, Leicester and Nottingham based The Sun Inn, Gotham,

“ The judges commented that the standards all of our pubs in the competition were outstanding and its fantastic one of them has been shortlisted for the UK finals.”, said Mark Tetlow.

The competition saw independent auditors from Innserv, working in conjunction with the awards organisers, inspect the Cradock’s cellar and bars scoring it against a rigorous criteria. The judging process looked at beer dispense lines, dates on barrels, temperature checks and the quality and standard of equipment used, before arriving on a final score.

Discover our latest pub refurbishments

The Ratby-based Bulls Head has thrown open its doors again following a £380,000 makeover, one of the largest joint pub investments in 2012. The major structural alterations undertaken include joining the front bar to the middle lounge and rear dining area creating a more open feel for customers to drink and dine. In turn there has been a new link at the rear of the pub to join to a brand new triple level decking area and beer garden.

A refurbishment of the skittle alley has taken place with improvements made to the skittle alley court yard and side terrace. A large open catering kitchen has been created, disabled access has been improved to all trade areas and a new disabled toilet has been added.

Stephen Gould, Managing Director of Everards, said: “We are delighted to see the results of this major investment into two of our Leicestershire pubs.

“The Bulls Head project is one of our of biggest refurbishment projects undertaken this year. The joint-investment has helped to transform this pub into a larger, more open plan establishment and we are sure that customers will enjoy and appreciate the new look.

“Similarly The Globe’s retro refurbishment will create an exciting, new experience for people. By delving into the pub’s past and bringing that history to life, we have helped to create an environment to be enjoyed by customers now and in the future.”

Back in Leicester centre, the city’s oldest pub The Globe has taken inspiration from the past as part of £100,000 retro refit designed to celebrate the history and character of the pub, which first opened in 1720. The highlight of The Globe’s makeover is the return of the original gas wall lamps, which along with chipping off decades of paint to reveal the original wooden features, has helped create a truly retro feel to the inside of the pub.

Tom Lawton, The Globe’s General Manager, said: “We didn’t want to turn it into a modern bar or anything like that – this is a proper drinker’s pub.

“The gas lamps are a lovely touch. They give off a lovely white glow. They have a white gauze inside and the parts all have to be sourced from special places. I think there are only four pubs in the UK with gas-powered lighting.”

Other major changes include a revamp of the toilets and the installation of a dumb waiter to help kitchen staff, who previously had to carry food down from the upstairs kitchen. The work for the six figure refurbishment took seven weeks to complete and the pub has just re-opened in July.

Seven Stars set to shine

The Rugby based pub opened its doors for the first time following a £200,000 makeover at an official opening in July. The Seven Stars is a joint venture between Everards Brewery and the B & T brewery – the second such collaborative project between the two brewers following on from the award winning The Albion pub, in Ampthill South Bedfordshire, which opened in April 2010.

Everards Chairman Richard Everard was in attendance to officially open the Seven Stars as the latest Everards Project William pub. He was joined by B & T brewery owners Martin Ayres and Mike Desquesnes, Northampton CAMRA representative Dave Austen and a range of dignitaries and customers at the champagne buffet event.

For the new look Seven Stars, the four week refurbishment has included the creation of a new front entrance lobby, with improved vision and access to bar and snug. Internally the Project William makeover has introduced new wall panelling, oak flooring and the formation of a new fire place to the lounge.

There has also been replacement windows to the front elevation including the large bay window. An upgrade of the toilets and external decoration and signage has also taken place as part of the overall refurbishment project.

Stephen Gould, Managing Director of Everards Brewery, said: “We are delighted to be opening our 24th Project William pub in Rugby

“We believe that together with B&T brewery we have created a great pub for local drinkers and look forward to seeing the Seven Stars shine as a beacon for great quality cask ale. The initial reaction from the many people who came along for the opening has been really good and we look forward to enjoying the success already achieved with The Albion, our first partnership pub with B&T Brewery.”

The Albion’s achievements began earlier in the year as it was named South Bedfordshire CAMRA Pub of the Year. The Ampthill based pub added to its accolades in April by claiming the main prize of Bedfordshire CAMRA Best Pub of the Year.

Martin Ayres and Mike Desquesnes who own and operate B & T Brewery, which is located in Shefford, Bedfordshire have been brewing award winning cask ales since 1982 and supply around sixty outlets direct. The Seven Stars is their 6th pub, The Brewery Tap in Shefford, The Wellington Arms in Bedford, The Globe, Dunstable, The Elm Tree Cambridge and the Albion Amptill.

Everards have developed the Project William scheme since 2007, whereby the company teams up with local publicans or brewers to turn struggling or closed pubs into thriving ale houses. As part of the agreement, there is a flexibility to offer a large number of ales, including the brewery’s own range or other local brews, alongside Everards flagship beer, Tiger Best Bitter.

The latest accolade completes four seasons of awards, following last year’s win in the same category, Pub of the Season in Autumn 2010 and Pub of the Season in Summer 2009. On all occasions, the Crown received their awards in recognition of its great customer service and overall welcoming environment, along with providing an impressive collection of real ales.

The Crown Inn licensee Alan Pickersgill said, “I came to the pub 5 years ago and it looked completely different. The framework has now been put into place to create a pub to be enjoyed by its customers and the CAMRA awards are a vindication of the work we have put in.

“I am very thankful to all the staff and customers and the CAMRA committee for recognising all our hard work and supporting us in what we do.”

The Crown Inn will now go through to the final of CAMRA’s Rutland Pub of the Year, where it will compete with the three other seasonal winners for overall title of Pub of the Year. If successful, it will mean a second consecutive year as CAMRA’s Rutland Pub of the Year, having first claimed the title in 2011.

Golden girls brew tribute to female versatility with new Malty Tasker beer

The Malty Tasker ale was the result of three days of multi-faceted working by the six female licensees as part of the Everards Gold Course. The super six sisters of the pumps participated in various aspects of the brewing process before conjuring up their Malty Tasker beer – a 5% golden blonde ale, made with Challenger and Saaz hops with a bitter sweet taste and dubbed ‘liquid sunshine’ by the female licensees.

It’s only the second time in the history of Everards Gold Course, all of the delegates training to create their own beer were women. The Everards golden girls consisted of three three Nottinghamshire based licensees, Elaine Delaney, Admiral Rodney, Calverton, Sue Woolley, Sun Inn, Gotham and Alison Ryan, Hearty Goodfellow, Southwell and three Leicestershire based licensees – Helen Foster, Bulls Head, Clipston, Dawn Moore, Coach and Horses, Lubenham and Sarah Cunnington, Black Horse, Aylestone along with Emma Grigor-Taylor and Julie Brewster from Everards.

Elaine Delaney, licensee, said: “We had a great time on the course learning about the entire brewing process. I really enjoyed finding out more about how and why Everards uses only premium ingredients in their ales and of course in our brew.”

“We worked really well as a team and even had an exam at the end, which we all passed. It was great to name to come up with as we all know that women are good at multi tasking, so it was apt that was the name we settled on.

“The course was fantastic and really helpful as an experience for a female licensee. It was designed to get the best out of us and we can now see the fruit of labours each day as we have the Malty Tasker beer here on tap in the pub.”

Everards Gold Course is an advanced beer and cellar management training course available to licensees and employees. Those taking the course get the opportunity to design, brew and name a brand new ale for distribution across the participating licensees’ pubs. There is then further possibility to distribute the new ale across the Everards pub estate.

Go for Gold with our latest seasonal ales

Everards is going for gold with its latest ale as it launches a new beer to celebrate this year’s summer of sport.

Named after the element for Gold in the periodic table, Au is a celebratory light golden ale designed to be the perfect liquid accompaniment to this year’s golden sporting summer. Au is brewed with both Cara and Crystal malts to give it a delicate malty toffee body.

The addition of Galena and Saphir hops bring peachy, soft fruit and citrus characters to the ale to compliment the malts. Ideal for drinking on long, hot summer evenings, it will be available in Everards pubs from July 4

Alongside the launch of AU, drinkers looking to toast any British sporting success this summer will be spoilt for choice with Everards beers as the Leicestershire brewery also welcomes back Whakatu (3.7% ABV). Offering a zesty crisp taste with a hint of fruitiness, the New Zealand ale (pronounced “fakatu”) returns in 2012, having been first launched last summer.

Erika Hardy, Everards Head of Marketing, said: “We are really looking forward to the launch of Au and hope it proves a real gilt edged winner with our customers.
“The return of Whakatu makes it double delight of a summer for those who enjoy their golden ales. Both ales will provide the perfect complement to this year’s summer of unique sporting activity.”

The name “Whakatu” derives from the Maouri name for ‘Nelson’ where the Nelson Sauvin hops originate. It is brewed from malted barley and wheat hops and contains hints of kiwi and gooseberry to give it a crisp, fruity flavour.
