The regulations in Scripture against eating cat fish, shrimp, pork and some materials are found in the Mosaic Law (aka the OLD covenant) given to the nation of Israel by Moses. The Old Covenant was only binding on Israel. It was intended to set Israel apart from the Gentile world. After Jesus died on the cross, believers are saved by the grace found in the New Covenant, and as Paul taught, believers are not bound by the regulations of the Law found in the Old Covenant. So should you go eat a buffet full of catfish? No. That’s not healthy but if you want a couple pieces then go for it.
