Mascarpone Cream Cake

My little one has been making a new food request almost every other day! He’s even been sending me recipe videos, hoping we could try them together. This time, he had his heart set on baking a cake.

So, I gathered all the ingredients, set everything out on the kitchen counter, and encouraged him to take the lead. With a little guidance and a lot of excitement, he mixed, poured, and baked his very own cake.

The moment he saw the final result, he burst into giggles, and that made every bit of the mess worthwhile. Creating these sweet little memories together is exactly what makes moments like these so special.

So, a dear German friend of ours, who meant so much to my family, recently passed away. We are heartbroken by his loss, and no one can ever fill the void he has left behind. Our thoughts and deepest sympathies are with his family during this difficult time. We will continue to offer our support in every way we can as we all try to heal from this heartbreaking loss.

May 14th Fathers day

Today is Ascension day and fathers day together.. Its public holiday today in Germany. We went for a short Bicycle tour. On the way we came across this beautiful church. Its the Roman Catholic parish church of St. Aureus and Justina in Bommersheim. It is located in Oberursel in the Hochtaunus district of Hesse.

After an hour trip we came back home.

Its little bit windy and cold outside. The perfect weather for hot tea and banana fry. Ended the day with positiv vibes! 💚

Apple cake

We have an apple tree which didnt bear any fruits for 12 years. Once i wished about plucking Apples from this tree and make some fresh cakes. This wish has finally become true. Yaay!!

The best part was the plucking . Some were hanging low, so i could pluck enough for 2 Cakes.

We celebrated our Vishu in a humble way. The Vishukani arrangement was with Rice, Vegetables , Mirror, Money etc. Sad that we don't get kanikonna flowers here. But still had a nice time!!

Badam Halwa - Winter Dessert

ALMOND HALWA

Almond Halwa is a rich and delicious Indian dessert made primarily from almonds, sugar, ghee (clarified butter), and milk. Everybody likes it for its smooth, creamy texture and healthy Benefits. Almonds are packed with essential nutrients like vitamin E, magnesium, and healthy fats. Almond Halwa is not just indulgent but also offers a nutritional boost, providing energy and antioxidants.

It’s a perfect dessert to enjoy during the winter months, as it provides warmth and comfort while packing a nutritional punch!

Things Needed:

Badam - 250 gm

Milk - 1 cup

Sugar - 3-5 tbsp (as per need)

Cardamom - 4 pods crushed

Ghee - 5 tbsp

Saffron - 2 pinch , soak them in milk.

Preparation Method:

Soak almonds for around 3 hours. Peel off skin. Soak saffron in little milk.

Grind adding milk to make a coarse paste.

Heat ghee in a nonstick pan. Pour almond paste to this & saute continuously.

Mix in sugar , saffron , keep sauting.

Finish off adding cardamom.

Decorate with sliced almonds.

Starfruit pickle

The Star fruit tree on backyard was full of fruits and flowers. The ripe ones was very juicy and perfect for making juice. Plucked some raw ones to make pickle.

Starfruit Pickle

Starfruit Pickle Recipe - Chop coarsely 5-6 Raw or semi ripe Starfruits. Mix in salt and keep it aside. Heat oil, splutter some mustard seeds, add 1/2 tsp Asafoetida powder, 1 tsp chilly powder. Remove from heat. Add the chopped star fruit to this and mix well. Don't need to cook.

Star fruit pickle is very tasty and crispy and it goes well with rice and jogurt.

Made this on a buzy Weekday.

If you didnt get time to cook Eggs separately you can also add them with the cooked onions directly.

Either way its very yummy.

Strawberry Cream Cake - Erdbeer Sahne Torte

Strawberry Cream Cake

Another Onam season!! Its Kid's Birthday!! This time he wished for Strawberry cream cake.

So I found a Recipe with simple Ingredients and decorated with Strawberries, Blueberries, Grapes

and it somehow ended up looking like the Flower arrangement we put on Onam ;)

Things Needed

Base Layer:

2 Eggs
80 g Sugar
1tsp Vanillaflavour
80 g Flour
2 tsp Backingpowder
40 ml Oil
40 ml Milk

Strawberry Cream:

300 g Strawberry

3 EL Sugar

400 ml Whipping Cream

1 Packet Gelatine

Decorations

Some Strawberries, Blueberries, Grapes

Some Cream

Preparation method:

Beat well eggs, Sugar, Vanillaessense or vanillasugar until creamy.

Pour in Oil & Milk.

Finally add all purpose Flour, Backingpowder using a sieb.

Mix well all ingredients and bake in oven until done. (180 degrees, 20 min)

Meantime puree the Strawberry& sugar.

Mix Gelatine & Strawberry uniformly. If you are using instant gelatine powder, mix in directly.

If you are using Gelatine sheets, allow to soften it in Water for sometime and then mix into the Strawberry.

Beat cream in a separate bowl.

Add the cream to the Strawberry carefully and mix in using a spatula.

Allow the cake base to get cool down completely.

Apply the Strawberry cream over it.

Decorate with the cut fruits and refrigerate for at least 6 hours.

German Birthday Cake

My Son is a football freak and so does his Friends. So this time I made a Fotoball themed Cake for his Birthday party which was the same day of the German Portugal match. Luckily enough Germans won the game with 4 Goals😊 and just one week after they lost to England 😕

I didnt get much time so actually used the Recipe for Eintracht Frankfurt Cake from the last Year. Just made a few adjustments and it changed the decorations and it worked out 😊
