<b>Boldly Flavored French Onion Soup #RecipesInternational</b></div><br />
<b>Ingredients:</b><br />

4 large onions, thinly sliced<br />
50g/2oz low-fat spread or butter<br />
450ml or 3⁄4pt vegetable stock<br />
450ml or 3⁄4pt skimmed milk<br />
2 egg yolks<br />
1⁄2 teaspoon freshly squeezedlemon juice<br />
2 thick slices wholemeal bread,cubed<br />
salt and freshly ground black pepper<br />
<br />
<b>Procedures:</b><br />
<br />
• Preheat the oven to 200°C/400°F/Gas mark 6.<br />
<br />
• Melt the low-fat spread or butter in a heavy saucepan, add the onions and cook gently, covered, for 10 minutes, stirring from time to time, until soft. Add the stock, and season with a little salt and pepper. Bring to the boil, reduce the heat and simmer gently for 30 minutes.<br />
<br />
• Stir in the milk and heat through.<br />
<br />
• Whisk the egg yolks with the lemon juice. Add 2 ladlefuls of the hot soup and whisk well. Stir the egg and lemon mixture into the soup, and heat through gently, still stirring, until slightly thickened. Do not allow the soup to boil or the egg will curdle.<br />
<br />
• To make the croûtons, spread out the bread cubes on a baking tray, and bake in the oven for 10 minutes until a deep golden brown.<br />
<br />
• Ladle the soup into warm individual bowls, and sprinkle with the croûtons just before serving. Serves 6<br />

<b>Procedures:</b><br />

1. The day before you want to make the lamb, combine the salt, sugar, cumin and garam masala in a small bowl and stir to combine. Rub this mixture all over the lamb, wrap tightly in plastic wrap, then put the whole thing in a bowl to prevent spills, and put it in the fridge. Rinse the dried chickpeas in cold water several times, then cover the chickpeas with about 3" of water and let them rehydrate overnight.<br />
<br />
2. Preheat the oven to 250 degrees F.<br />
<br />
3. Heat a tablespoon of olive oil in a large dutch oven or other heavy bottomed pot until hot. Add the lamb, discarding any juices that have accumulated. Fry until a brown crust has formed on one side, then flip the roast over using tongs and fry the other side until a brown crust has formed on that side as well. Transfer the lamb to a plate.<br />
<br />
4. Add the garlic and onions. Fry until the onions are wilted and turning brown at the edges. Add the lamb back in along with the pomegranate molasses and chicken stock. Drain the chickpeas and add those in as well.<br />
<br />
5. Find a non-reactive (glass or stainless steel) lid that fits inside your pot, the idea is to allow steam to escape, so you want the meat covered, but there should be gaps around the lid. Cover the meat with the lid and stick the pot in the oven. Braise until the meat is very tender and the chickpeas are cooked (about 3 to 4 hours). Be sure to check it periodically and add water if the pot starts looking too dry.<br />
<br />
6. When it’s done, remove the meat from the pot and shred it into medium chunks. If there’s a bunch of liquid left, let it reduce on the stove until it forms a nice thick sauce. Add the meat back in and stir to combine. <br />
<br />
7. Yield: 4 servings<br />
<br />
Note: Serve this with some rice, cous cous or a flatbread like naan or lavash. The leftovers make great sandwiches or wraps with some salad greens mint and yogurt.<br />

Often times we don't think that much of these traditions while we are young, and take them for granted. But as we grow older we appreciate the richness these holiday traditions have added to our lives. And as adults we have the opportunity to create our own traditions, those special times together that will become cherished memories for our own children to remember.<br />

Here are two holiday recipes that may become family favorites at your house and may form part of your family's memorable Christmas traditions.<br />

2 squares (ounces) semi-sweet chocolate<br />
1/4 cup corn syrup<br />
1/4 cup icing sugar<br />
1/3 cup orange juice<br />
2 cups vanilla wafers, finely crushed<br />
1 cup chopped pecans<br />

<b>For the outer coating:</b><br />
Toasted pecans, finely chopped<br />
icing sugar<br />
chocolate, finely grated<br />

<b>Procedures:</b><br />
<br />
1) Melt chocolate squares in a pot over hot water and stir until melted. Add corn syrup, wafer crumbs and nuts. Mix well. Chill this mixture until it is firm enough to handle.<br />
<br />
2) Shape into 1 inch balls. Roll in one of the coatings.<br />
<br />
3) Store in an airtight container in the fridge for at least one week to meld flavors.<br />
(Use an equal amount of dark rum for rum balls).<br />
<br />
4) Makes about 30 balls<br />
<br />
<b>Surprise Inside Hint:</b><br />
<br />
Place one well drained maraschino cherry into the center of each rum ball as you are rolling them. Roll rum mixture around the cherry evenly.<br />

1/2 cup sugar<br />
1 egg<br />
1/2 cup molasses<br />

1 teaspoon baking soda<br />
1/4 teaspoon salt<br />
2 teaspoons ground ginger<br />
1 teaspoon cinnamon<br />
1 teaspoon ground cloves (optional)<br />
sugar<br />
<br />
<b>Procedures:</b><br />
<br />
1) Preheat oven to 325F.<br />
<br />
2) Lightly grease baking sheets.<br />
<br />
3) Place shortening and sugar in bowl and beat until mixture is creamy. Beat in egg and molasses. In another bowl, use a fork to stir flour with baking soda, salt and spices. Gradually stir into shortening mixture until just smooth. Do not over mix.<br />
<br />
4) Take dough by the tablespoonful and roll into a 1" ball. Roll in sugar and place 2" apart on baking sheet. Do not press down.<br />
<br />
5) Bake for 15 to 18 minutes, until lightly browned and tops are cracked. Cool then store in an airtight container for up to 2 weeks or freeze.<br />

6) Makes 48 cookies<br />

•1/2 cup fresh lime juice<br />

•1 cup cilantro, finely chopped<br />

•1/4 cup lightly packed mint leaves, finely chopped<br />

•8 garlic cloves, minced<br />
<br />
•1 tablespoon minced oregano (2 teaspoons dried oregano)<br />

•2 teaspoons ground cumin<br />
<br />
•Kosher salt and pepper<br />
<br />
•3 and 1/2 pounds boneless pork shoulder, in one piece<br />
<br />

1. If you have a food processor: Add the orange juice, cilantro leaves, mint leaves, and smashed (not minced) garlic cloves, and pulse until everything is finely chopped. Add this mixture to a ziplock bag, along with the rest of the oil, zest, lime juice, oregano, and cumin.<br />
<br />
2. If you don't have a food processor: In a large ziplock bag, combine olive oil, orange zest, orange juice, lime juice, chopped cilantro, chopped mint, minced garlic, oregano, and cumin. Shake it around a bit to mix it up, then add the pork shoulder.<br />
<br />
3. Place the zipped up bag in a baking dish, and put it in the fridge overnight, or several hours at least.<br />
<br />
4. Preheat oven to 425 degrees F. Place a wire rack (I used a cooking rack) over a rimmed baking sheet.<br />
<br />
5. Place the pork on the rack and discard the marinade. Salt and pepper the pork well.<br />
<br />
6. Roast the pork for 30 minutes. It should be lightly browned.<br />
<br />
7. Turn the oven down to 375 degrees F. Roast for another 1 hour and 20-30 minutes, or until a meat thermometer reads 160.<br />
<br />
8. Transfer to a cutting board, cover with aluminum foil and let rest at least 20 minutes.<br />
<br />
9. Carve against the grain and serve. Yield: Serves 6<br />

Melt 1 tablespoon butter in pan. When it foams, ladle 1/4 cup batter for each pancake and cook until bubbles cover the top, about 3 minutes. Flip and cook until golden brown, another 1 minute. Repeat with remaining batter. Serve immediately topped with Blueberry Maple Syrup.<br />

3 cups blueberries<br />

Combine 1 1/2 cups berries and syrup in a small saucepan over medium heat. Cook until berries are slightly softened, about 2 minutes, then mash using the back of a spoon. Simmer until mixture foams up a bit, about 1 to 2 minutes more.<br />

Remove from heat, strain to remove blueberry solids, stir in remaining 1 1/2 cups berries, and use to top pancakes, waffles, or French toast.<br />

<b>How to Make a Perfect Grilled Chicken</b></div><br />
Grilling can be a fun, family activity during weekends. Spend your lazy afternoons in your backyard, and take out those grillers for a grilled chicken for your dinner. <br />
<br />
Learning how to grill is not as hard as you would see on television. All you need is the proper temperature for your griller especially if you are using an electric grill. Nevertheless, if you have the conventional griller, try to find some dried wood or charcoal. Ignite the coals or wood by placing crumpled papers below each coal and then set the papers on fire. Do not pour gasoline on the coals or dried wood. The smoke coming from the coals will give a gasoline-like aroma to your grilled meat. These are your best weapons in grilling. <br />
<br />
Choose the best part of the chicken. I usually use chicken thighs and legs since they are the fattiest parts of the chicken. These parts will yield a juicy, barbecued chicken. Although these may sound unhealthy, the taste is incredibly delicious. Some would still prefer grilling chicken breasts with the skins on. <br />
<br />
Before you start grilling your chicken, do not forget to marinate them at least overnight. Yes, overnight. This is because the longer you marinade your meat, the better absorption of flavors happens. I prefer to use store-bought marinades as these save much preparation time in the kitchen. The downside of most ready-made marinades is their high sodium content. But if you have time, you can make your own marinade from scratch. In the recipe below, the marinade and the chicken were simmered together to speed up the process of grilling and also to let the flavors marry together. I like Asian-style marinades such as this: <br />
<br />
<b>For every kilo of chicken: </b><br />
<br />
<b>½ cup light soy sauce (available in the Asian section of grocery stores) <br />
<br />
2-3 tablespoons of freshly squeezed lemon or lime juice <br />
<br />
4 tablespoons brown sugar <br />
<br />
1 medium stalk of lemon grass (pounded) <br />
<br />
3 cloves crushed garlic <br />
<br />
1 teaspoon sesame oil (optional) </b><br />
<br />
Combine all the above ingredients in a heavy skillet and let it boil for two minutes. Add in the chicken and simmer for another five minutes. Drain the chicken in a colander and reserve the marinade for basting during grilling. Basting is necessary so that the chicken won’t dry out. The marinade can also be made as a sauce by making a basic roux. This is simply done by placing a tablespoon of butter on a non-stick pan and let it cook for minutes. Pour over the marinade and whisk until the sauce thickens. Taste the sauce and adjust the seasonings accordingly. <br />
<br />
You can also opt to make a dry, rub marinade. This dry rub is comprised of herbs and spices and a little oil. For chicken, dried or fresh tarragon and rosemary blends together very well. If you want a spicier, grilled chicken, add a pinch of chili powder and cayenne pepper. There are limitless marinades for grilled chicken. A little imagination and creativity are the keys. Make sure that when grilling the chicken, never let the flame flare up. This will result in burnt chicken. This does not appeal both to the eyes and to the palate. If this occurs, sprinkle a little water over the flame. Some also like their grillers to be covered during the grilling process. <br />
<br />
Personally, I liked mine uncovered. There is just something about the smoke which is, for me, the essence of grilling. Grilled foods are best served warm, right off the grill with some salads or other vegetables of your choice.<br />
<br />
<b>What You Need for another Grilled Chicken Recipe:</b><br />
<br />
4 small boneless skinless chicken breast halves (1 lb.)<br />
1/4 cup KRAFT Sun Dried Tomato Vinaigrette Dressing, divided<br />
1 zucchini, cut into chunks<br />
1 red pepper, cut into chunks<br />
1 cup cut-up fresh asparagus spears<br />
1 small red onion, cut into chunks<br />
<br />
<b>Procedures:</b><br />
<br />
HEAT grill to medium-high heat.<br />
<br />
BRUSH chicken with 2 Tbsp. dressing. Let stand 10 min.<br />
<br />
MEANWHILE, poke holes in bottom of disposable aluminum foil pan. Toss vegetables with remaining dressing. Place in prepared pan.<br />
<br />
PLACE chicken and pan of vegetables on grill grate. Grill 20 min. or until chicken is done (165ºF) and vegetables are crisp-tender.<br />

<b>Char Siu roasted pork is also called barbecued pork, partly because of its reddish brown and slightly charred look around the edges. Also, called Chinese Barbecued Pork mostly found from Chinese Restaurants worldwide. Serves 4</b></div><br />
<b>Ingredients:</b><br />
<br />
• 2 1/2 lb (1 kg) fillet of pork<br />
• 2 tablespoons maltose or honey, dissolved with a little water<br />
• For the Marinade:<br />
• 1 tablespoon soft brown sugar<br />
• 1 tablespoon yellow bean sauce (Guide Note: also called brown bean sauce, not to be confused with the yellow bean sauce used in Thai/Southeast Asian cooking)<br />
• 1 tablespoon light soy sauce<br />
• 1 tablespoon dark soy sauce<br />
• 1 tablespoon Hoisin sauce<br />
• 1 tablespoon oyster sauce<br />
• 2 tablespoons brandy, whisky or rum<br />
• 1 teaspoon sesame oil<br />
<br />
<b>Procedures:<br />
</b><br />
1) Cut the pork into strips about 1 (4 cm) thick and 7 - 8 inches (18 - 20cm) long, and marinate, covered, for at least 8 10 hours, turning occasionally.<br />
<br />
2) To cook: preheat the oven to 220 degrees Celsius/450 Fahrenheit/Gas mark 7, and place a roasting or baking tin filled with about 1 pint (600 ml) boiling water at the bottom. Take the pork strips out of the marinade, drain them well and reserve the marinade. Put the tip of an S-shaped hook through one end of each strip, then hang the strips on the top rack in the oven, making sure they dangle freely.<br />
<br />
3) Roast for 10 15 minutes, then baste with the marinade, reduce the heat to 180 degrees Celsius/350 F/Gas 4, and cook for a further 8 10 minutes. Remove the meat from the oven, let it cool down for 2 3 minutes, then brush the strips with the maltose or honey syrup, and lightly brown them under a medium hot grill for 4 5 minutes, turning once or twice.<br />
<br />
4) To serve: cut the meat across the grain into thin slices, and make a sauce by boiling the marinade and the water and drippings from the baking tin together for a few minutes, then strain into a gravy boat. Serve hot or cold.<br />
