Lightly grease a 9x5 inch loaf pan.

2) In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.

3) Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

Optional:

Try adding some chocolate chips, white chocolate chunks or chopped nuts to the mix for a variety of flavor!

Makes a super great and healthy snack for the kids for breakfast, before or after lunch or after dinner! Try it out and let me know what you think!

2 For 1 Deal Thursday & Friday

Today I am looking after one of my neighbor's children along with my own...let me tell you, sometimes it's easier...like when they watch a movie and let me fold laundry or clean the apartment, but holy moly, they get LOUD and they get crazy. Not to mention everything I clean is in shambles by the time the boy goes home...

Are two kids better than one? I used to think, "Man, it would have been nice if I had 2 kids instead of one so my daughter would always have someone to play with." but now, I am SO glad I only have one to deal with alone.

I highly respect any mom who has more than one child to look after during the day! So today is almost over (thank god) and tomorrow I have the two again, but tomorrow night I finally get to go out after a long break from a social life...and I get to go to Metalfest Saturday night, so I am pretty darn excited!

I can't wait until tomorrow is over...I am going to sleep so well tonight!

Hiding The Important Stuff

I don't know about you, but I get right mad when my daughter hides, takes, touches my stuff, especially things that are extremely important...

For example, my keys have now gone missing AGAIN, and my credit card is still missing...I have OCD and put everything where it needs to be. Yet, my daughter will take my stuff and hide it on me and when I ask her where it is, I get the "I Don't Know". I think it's the fact that she says it with a smile that makes me even more angry...

Does everyone have this problem? I'm sure not everyone...but for those who do, what are some of the things your child has taken that you absolutely need, or don't want taken from you?

The Single Mom Story

I'm sure you have all heard similar stories, or have gone through this yourself, but since I want to connect with other moms, I figure I should tell my story on how I became a single mother to begin with.

Well, I had just turned 15 and also just started dating this much older man that my mother didn't approve of...anyways, I started sleeping over, and running away from home, smoked pot a couple times, and then started having you-know-what.

Well half a month of doing that and I got pregnant...which isn't a surprise because I had planned on getting pregnant. I talked it over with him and he pretty much said let's go for it. So we weren't using protection and voila!

When I found out I was pregnant, I had just gotten back from a lengthy trip with my parents in the United States where I was throwing up in every restaurant bush I could find. I came back, told the father I needed to take a test and then told him he was going to be a dad. He seemed really excited at first, and then I think reality hit him a couple days later.

I got dumped for one of my old best friends, and then lied to that anything between them was ever going on...but I knew. I think that is when I first realized I was going to be a single mother, even though after that we had been off and on.

I ended up having my daughter without him in the hospital, even though I phoned him, he seemed to be with his other girlfriend he got pregnant, and so I had my mother by my side, my father by my side, and a good friend come and visit.

I'm still single to this day, and I guess I really don't mind it anymore...less of a hassle I guess. I have time with my friends when things get lonely.

I have to say one thing though: "I thought it was supposed to get easier as they got older!" Nope.

Take Care,

The Single Mom
