<p>Bansko town snow melting for a few days. Warmer temperatures in town of around 4 C have were feeling positively tropical. Here&#8217;s a video of the conditions. But read on for the amazing snow news.</p>

But this should be only a temporary moment. It&#8217;s dumping snow hard in Sofia.</p>
<p>Whilst up on the Pirin the slopes are delivering. High winds closed the Plato area yesterday.  My views on the The FIS Women&#8217;s and Men&#8217;s <a title="World &amp; European Cup FIS Alpine Skiing Comes Bansko In 2012: Heaven Or Hell?" href="http://banskoblog.com/2011/07/world-european-cup-fis-alpine-skiing-comes-bansko-in-2012-heaven-or-hell/">Ski World Cup</a> events are mixed. It is frustrating that some slopes are shut until the end of the month. Short term sacrifice for the long term image and confidence for the development of Bansko&#8217;s facilities.</p>
<p><strong>Snow forecast is&#8230;</strong></p>

<p>January was excellent and now February is already turning out to be very good too. We are set for three days of <strong>SNOW</strong>. Monday sees temperatures fall again and the town of Bansko made white again. Happy days.</p>
<p>There is a series of snow storms passing through. I am not sure I have seen such weather charts ever before for this region.</p>
<p>As I type this, it is already hard in Sofia and snowing up on the mountain. It is a series of storm depressions centring themselves near and over Greece. They will work their snowy magic on Bansko&#8217;s slopes.</p>
<p>My forecast: another <strong>50cm</strong> of fresh snow falling between today and Wednesday.</p>
<p>There may be <strong>MUCH</strong> more snow than this. Possible over 1 metre will fall on Todorka.</p>
<p>The ski conditions by Thursday will be just fabulous. The week commencing the 13th February is now assured to be excellent snow conditions.</p>
<p><strong>Too much of a good thing</strong></p>
<p>The downside is&#8230;</p>
<p>Closed plateau (Plato) lifts due to high winds again today. The isobars are close together indicating storm winds for the coming days. We&#8217;ll see.</p>
<p>The other concern are travel plans. Some flights may get diverted or delayed due to snow. Although I rarely hear for Bulgaria Air being diverted, but this week we saw 1 cm of snow in Heathrow cause disruption in BA&#8217;s schedule. Far more problems than 20 cm in Sofia.</p>
<p>The Bulgarian snow ploughs, tractors and gritters have been very visible in town. They are also doing a fabulous job keeping open the main E79 and the Predela pass road from Simitli to Bansko.</p>
<p>That said, I only just made it over the pass last week during a snow storm, some didn&#8217;t. Whilst high quality winter tyres make all the difference, snow chains may be required for packed ice and snow. Coming by car? Then chains in the boot that you know how to fit&#8230;</p>
<p><em>&#8230; Sapiens qui prospicit</em> (Wise is the person who looks ahead).</p>
<p><strong>Special equipment rental</strong></p>
<p>Skimania&#8217;s WhiteDot skis continue to rent well this season &#8212; as well as the whole advanced range. Same goes for the VIP range; with a good choice of twin tips and all mountain skis and premium snow boards. Skiers should go wide for this fresh powder snow.</p>

<p>Watching others on the live web cam is nice. The slightly hassled look. Folks striding expectantly to the lift. Nicely cold. It is torture to watch.</p>
<p>I know that torture, I remember that end of ski holiday feeling.</p>
<p>When it is all over for another year. A year of waiting lies ahead.</p>
<p>I remember that it&#8217;s just &#8220;too far away to contemplate&#8221; moment when trying to look forward to the next time in the snow. Which is a too far.</p>
<p>One YEAR away.</p>

<p>But I have a tip. Don&#8217;t wait that long. Grab a flight. Then book your discounted ski snow board hire, lessons, passes and transfer deal right here. So, my tip of the day, is grab some quality Bansko mountain time as soon as you can but book another trip in March soon.</p>

But it was a shame to see that not every skier was making the most of this fresh powder. On days like this it is virtually impossible to groom a piste, and such times mean many skiers struggle.</p>
<p><strong>The Preacher: a ski solution that works</strong></p>

<p>So it was time to try this season&#8217;s WhiteDot &#8220;The Preacher&#8221; off piste ski. David, the Bulgairian importer of these British designed skis arranged for the full 2012 collection to be available for rental at skimania (a free swap for all advanced ski renters). So a quick set up from Evtim, a breakfast toasty from the takeaway up from skimania and we were all set.</p>
<p><strong>Width is good</strong></p>
<p>Now I think most people would look at the width and think these must be just for pros. Well the truth could not be more different. These wide skis are super easy to use in deep snow. Any intermediate skier would be fine on these. The positive interest from others with all mountain skis heightened the pleasure of being out on these beauties. Okay, beauty is in the eye of the beholder &#8212; but I like the platypus look!</p>
<p>With all the excitement of getting up the mountain to try the WhiteDot Preachers, I forgot the GoPro Hero camera to show this wonderful powder snow up close.</p>
<p><strong>Snow forecast</strong></p>
<p>The skies will be clear although there is another pressure system that could bring some more snow Saturday.</p>
<p>Conditions are set to remain good. 9.5/10 was today&#8217;s rating</p>
<p><strong>Tips Of The Day</strong></p>
<ul>
<li>Book Sing Sing, at the Kempinski Grand Arena, next weekend. The fabulous iGroove are playing there Friday.</li>
<li>Try Hotel Shiligarnika, 100m behind Bla Bla. Two bars, upstairs has more room and better menu. The mulled wine (hot wine) works well with the rather good home made wine sold here.</li>

<p>Bansko snow conditions delivered another fine day. The occaisional worn patch, droping the conditions to a 8.5/10. So not perfect; but very good.</p>
<p>The cloud cover is increasing as you see from the picture just taken at 17:25 outside SkiMania shop. A dramatic rise in temperature, so the town&#8217;s snow is melting. However, we will see some snow sprinkle from the clouds high up tonight and tomorrow. Will fall as rain in town.</p>
<p>Another few hours today up the mountain saw me trying to master the carving technique. I was taking no chances. So I took time out with six ski instructors. Humbling &#8212; but all offering me fab tips &#8212; and me working hard to keep up. Any improvement, well I need plenty more hours to claim that. It&#8217;s like so many things, the more you know the more you realise how little you really know.</p>
<p><strong>Improving</strong></p>

<p>And so it comes down to instruction.</p>
<p>Skimania have the nicest ski and snowboard instructors I&#8217;ve ever known. With more positive feedback than Jimi Hendrix, you&#8217;ll be glad you booked you and your family for some guidance from the pros.</p>
<p>As I type this, in the skimania shop, I feel excited that it is ski instruction in Bansko that is not only such value for money, but it&#8217;s pure quality. It&#8217;s a place for improving skiers to hone their technique.</p>
<p>And that includes me.</p>
<p>After learning the old way some xxx years ago, I&#8217;m fortunate that I have such partners. So, here goes, in a wave of apres ski enthusiasm, the biggest secret to a perfect Bansko ski holiday,  is now out&#8230;</p>
<p>&#8230;grab yourself a lesson.</p>
<p><strong>The bad news</strong></p>
<p>We have just two more days of accepting bookings for group lessons between the 5th and 27th February. So please be quick to book. All pre book group lessons (and private lessons end Sunday 22nd). We&#8217;re just so nearly full for these busy periods.</p>

<p><strong>The Bansko snow report</strong> contains just video action from my GoPro helmet cam. Saturday and today saw some icy patches and exposed areas. Morning is best with the piste getting carved up by mid afternoon.</p>
<p>It was cold too. Those with thin cheap gloves were paying the price with hands colder than the snow around us.</p>
<p>My GoPro camera has been out of action for a while. So now fixed I&#8217;m again appreciating how much fun these little cams are. If you make your own GoPro or others ski movies in Bansko, then let me know and I&#8217;ll be happy to link to them.</p>
<p>I&#8217;m now thinking that, whenever possible, the latest snow reports will get more of this type of stuff in.</p>
<p><strong>A musical evening</strong></p>

<p>I enjoyed a good night out with friends looking for live music. So we chose the Happy End live. The live band here delivered plenty of all time favourites as usual.</p>
<p>Kempinski&#8217;s Sing Sing piano bar was next. A more chilled atmosphere, a top trio singing the favourites. A relaxing way to round off a great day.</p>
<p><a href="http://banskoblog.com/wp-content/uploads/2012/01/DSC_0132.jpg"><img class="wp-image-5244 alignright" title="Happy End" src="http://banskoblog.com/wp-content/uploads/2012/01/DSC_0132.jpg" alt="" width="262" height="165" /></a>Both venues are popular and reservation is advisable for the best tables. Both were surprisingly free of smoke. The Happy End more youthful and at higher volumes. But it is still very popular with DJ Shark doing a fine job to make the party.</p>
<p>When in the Happy End it can be challenging to avert one&#8217;s gaze away from the podium dancers.</p>
<p>So I didn&#8217;t.</p>
<p>Here&#8217;s a peek at one such lady, the mighty fine Malinka, dancing in the Happy End.</p>

<p>Over 40cm has fallen so far today and I expect, by Tuesday 10th January well over 80cm of snow to have fallen.</p>

<p><strong>The snow is falling</strong> in Bansko and the party has already started. I have rarely seen so many people in Bansko and, this year, we have the combination of great skiing, more white stuff falling from the sky and more food choice than ever before.</p>
<p>Happy Bansko days and nights are here.</p>
<p>All but one lifts are open. The gondola queues are inevitably growing longer &#8212; time your trip to the lift using the live <a title="Web Cam Bansko" href="http://banskoblog.com/web-cam/web-cam-bansko/">queue cam</a>. I am expecting another 30 cm of snow to fall today. Ski conditions are set to be really good. Powder skiing for today and tomorrow. Stay tuned for video snow blog updates.</p>

<p><strong>New Year warnings</strong></p>
<p>I recently spent several hours in the medical centre. This was a timely reminder that holidays in ski resorts are not without hazard. Be sure to have full winter holiday insurance. You pay for what you get for insurance, please be careful to have adequate cover before you travel to Bulgaria. Some of the pavements are icy so its not just for skiers who find their way needing medical attention.</p>
<p>Call European <strong>emergency</strong> number 112. They speak English and will forward your call to the relevant department &#8212; police, ambulance, mountain rescue, fire.</p>
<p>I advise that wearing a helmet is now just plain essential. I wear a Giro brand and can vouch for it. It is so comfortable that I now prefer skiing with it on than off. No helmet? Our <a title="Ski Packages" href="http://banskoblog.com/lift-pass-ski-packs%e2%80%8e/">ski packages</a> enable you to rent a helmet (mostly new ones) for your period of ski hire. Plenty of place in town to buy one.</p>

<p><strong>The advertisement for Soprano&#8217;s restaurant</strong> is difficult to ignore as it&#8217;s draped over the Happy End, just opposite the gondola lift. But, when trying to find in depth reviews of of this place, I was getting mixed messages.</p>
<p>So I asked my top foodie friend, James for his opinion of Soprano&#8217;s. James  joined me for a review of the <a title="St Ivan Rilski, Preslav and the Sushi" href="http://banskoblog.com/2011/12/st-ivan-rilski-preslav-and-the-sushi/">Preslav&#8217;s sushi</a> at the new sushi bar, St Ivan Rilski.</p>
<p>Here is James&#8217;s review:</p>
<p>&#8220;Soprano&#8217;s has just started their second year in Bansko. The head chef, <strong>Tomasso</strong>, is from Bari in Italy adding a touch of real Italian flavour to the Bansko scene. Italian restaurants fall into one of two categories. They&#8217;re run by people who are either Italian, or have lived and worked in Italy or by those that think that simple cooking, with few ingredients, means cheap and easy cooking.</p>
<p>I wish more chefs recognised that a sauce with only two ingredients like butter and sage is a lot harder to make than a sauce with ten strong flavours.</p>
<p>Soprano&#8217;s is definitely the former.</p>
<p>Soprano&#8217;s is upstairs inside the Happy End après ski Bar. But even at the top of the stairs, stood in front of the entrance, we struggled to find the way in! Fortunately one of the waitresses was there, and showed us inside.</p>
<p><strong>Classic ski chic interior design</strong></p>
<p>The interior is classic ski chic; loads of oversized wooden panels, surprisingly comfortable red leather banquettes and retro ski photos. Soprano&#8217;s has been designed so that even though we were the only diners, it didn’t feel empty. Even if it was full, I think it wouldn’t feel crowded.</p>
<p>The tables were well spread out and the banquettes offered a cosy privacy. My father finds banquettes, in general, unpleasant. However he grudgingly admitted that these were the most comfortable he had ever sat in.</p>
<p>We started with some freshly baked bread and an <a href="http://en.wikipedia.org/wiki/Amuse-bouche">amuse bouche</a> of mini lasagna and piped crowns of cream cheese with flakes of Parma ham. Both were a little uninspired &#8212; but were acceptable. The lasagna was a little heavy and the flavour too subtle for a two bite experience.</p>
<p><strong>Tour de force cooking</strong></p>
<p>After this slightly disappointing start, the rest of the meal was a tour de force of great Italian cooking.</p>
<p>The antipasto piatta misto was simply done with a great selection of cured meats, great big chunks of crumbly rich parmesan, explosively tasty sun dried tomatoes in oil, tender artichokes, kalamata olives and a torn ball of mozzarella with some cream and nuts. In with the olives were some giant electric green olives. The like of which I have not seen before.</p>
<p>Great showmanship; but slightly weird!</p>
<p><strong>Starters</strong></p>
<p>Father expected a Parmigiano to be served as he remembered from a haunt of his in London that used to layer aubergines and mozzarella on a skewer and then fry it in a batter coated with a tomato sauce. I was really pleased to see ours served in a more traditional Italian style with layers of aubergine, mozzarella and tomato sauce baked like a lasagna. Little pools of Basil sauce lifted the dish nicely.  Using the bread we wiped the plate this rich unctuous combination.</p>
<p>A wonderfully satisfying winter dish.</p>
<p>I am a great fan of sage butter sauce, so the Ravioli was a hit with me but the &#8220;old man&#8221; and my dearly beloved found it “too simple” and “too pasta-ry”. For me, this sort of three or four ingredient Italian cooing is great; clean bold flavours, balanced well on made pasta, with a classic filling.</p>
<p>What more could you want?</p>
<p><strong>Chicory pleasure</strong></p>
<p>The second Secundo of  <strong>lamb with chicory</strong> was more to prove a point to Dad that chicory could be cooked and enjoyed. By now we knew we were on to a winner, so he was happy to risk the chicory! A splendid choice. The lamb was cooked to a turn; the dauphinoise creamy and cheesy.</p>
<p>The<strong> rosemary jus</strong> with pine nuts and sultanas made for a great sweet sour combination. And a really satisfying deep demi glace flavour. The only criticism could be the cheese on the potatoes, which was slightly over powering. But hey &#8212; we were on a roll and really struggling to find fault!</p>
<p><strong>Sorbet rediscovered</strong></p>
<p>The waitress, manager and chef all suggested a combination of all the sorbets for dessert, and I wanted to try the Semifreddo. So we ordered both.</p>
<p>The sorbets were exceptional with their clean bright flavours. Semifreddo, as the name suggests, is a half frozen moose / parfe / nougat. This is a difficult combination to do well, but when done well the rich full body contrasts well with the nuts and the silky warm chocolate sauce. I loved it.</p>

Secundo:   Ravioli Burroe Salvia and a Costolette di Agnello con cicori<br />
Dolce:        Semi fredo alle nocciole and three types of home made sorbets</p>
<p>I was shocked that such a good restaurant has been under my nose for so long.</p>
<p>No one is talking about it. (until now, ed). I would happily have paid double for the quality of food. The head chef Tomasso promises he will be making a new menu every month show casing a different Italian region, so I will be back at least once a month.&#8221;</p>
<p>Thanks James for your review. I&#8217;m booked in. But with high expectations. It&#8217;s going to be tough, as I absolutely love the <a title="Christmas and New Year in Bansko: a foodie special" href="http://banskoblog.com/2011/12/christmas-new-year-bansko-food/">Kempinski&#8217;s Sushi and Teppanyaki</a> bar and grill as an alround dining experience. But it&#8217;s time to go Italian!</p>

<p><strong>Bansko sushi cravings</strong> continue. And it&#8217;s the new sushi bar at the St Ivan Rilski hotel that is the subject of our review. To help me, I brought along my friend, James Hughes.</p>
<p>James is a fully trained chef, and has worked in the hospitality business since leaving school. He is one of the early British expat settlers in Bansko, and owner of <strong>Trip Advisor&#8217;s</strong> best rated hotel in Bansko, the Avalon hotel. A fabulous achievement.</p>
<p>James&#8217;s palate for tasting food has been refined over the years and I believe his passion, and appreciation for food, are second to none in Bansko.</p>
<p><strong>St Ivan Rilski</strong></p>

<p>St Ivan Rilski hotel is part of the <strong>FPI</strong> group. FPI have made the market theirs for quality hotels in Bulgaria. They have five hotels in Sofia, including the Crytal Palace and the Serdica di Arena and the large Santa Marina complex in Sozopol, on the Black sea. It was here I stayed in the summer when I tried out their new La Veranda restaurant, including their sushi.</p>
<p>James&#8217;s positive experience when staying quite regularly at the Crystal Palace in Sofia some seven years ago. So he also had found their balance of luxury, quality and great customer service alluring.</p>
<p>Heading up the hill with a degree of anticipation. It was sushi night for us.</p>

<p><strong>Preslav: the sushi chef</strong></p>

<p>The new sushi chef in Bansko is a young man called <strong>Preslav</strong>. He has trained as a sushi chef for the last eight years in Sofia, and the Black sea. With his Japanese sushi knife I watched our sushi being skillfuly prepared.</p>
<p>His years of experience shone through. His presentation of the selection of hosomaki, futomaki, maki-sushi and California rolls was as good as I have seen anywhere.</p>
<p>The <strong>California rolls</strong> especially were beautiful, and really stood out.</p>
<p>One roll was coated in spiced dry tuna, a real flavor sensation, slightly crisp, spicy, hot and full of rich <a href="http://en.wikipedia.org/wiki/Umami">umami</a> flavour. These were contrasted by the Avacado California rolls with their smooth creamy texture.</p>
<p>The third sushi was filled with an assortment fish and was coated in orange cod roe, not only vibrant, but a lovely texture. I will never tire of the mildly salty explosions of any sort of caviar!</p>
<p><strong>Overall impressions</strong></p>

<p>Here in Bansko, like most sushi bars in the world, we are at a distance from a fish monger that specialises in Sushi grade fish. The Maki and Sushi were a little lacking in the bold spanking fresh flavours of a fish that only hours before was splashing around in the ocean. However, bear in mind that this is a mild criticism considering the overall quality of the food.</p>
<p>Preslav does a fantastic job with the ingredients available and obviously choses only the best of that which is on the Bulgarian market.</p>
<p>Food:    18/20</p>
<p>Service: 18/20</p>
<p>Overall: 18/20</p>
<p><strong>Highly Recommended</strong></p>

<p><strong>Christmas and New Year in Bansko</strong> is followed by thoughts of three questions:</p>
<ol>
<li>will there be <strong>snow</strong>?</li>
<li>is everything open?</li>
<li>where is good to eat?</li>

<div><strong>1. Will there be Christmas snow?</strong></div>
<div>Ohhh YES indeed there will be. Although after last week&#8217;s false hope, even I was  beginning to wonder. It&#8217;s snowing right now. See live <a title="Web Cam Bansko" href="http://banskoblog.com/web-cam/web-cam-bansko/">web cam</a>. The weather charts are looking very promising for a lot more snow over the next few days.</div>
<div><strong>2. Is Bansko open at Christmas?</strong></div>
<div>Yes. Absolutely everything that can be open to serve a Bansko visitor is open. Some exceptions, such as banks and utility services aside, Christmas sees Bansko in full swing. And this year is no exception.</div>
<div><strong>3. Which restaurants are good in Bansko?</strong></div>
<div>The good news is that eating out both here in Bansko and in <a href="http://sofiarestaurants.bg">Sofia</a> have moved up a gear. Greater <strong>diversity</strong> of food, improved service.A better Bansko.</div>

<div>After a few years of not really going that much into the Kempinski, this year I am returning regularly. Apart from one occasion when a set menu meal was not so good, I have had both excellent food and service here.</div>
<div>I think I have turned Japanese. The Sushi and <strong>Teppanyaki</strong> bar and grill is now my favourite restaurant in Bansko. I combined a visit here with the <strong>Sing Sing</strong> piano bar. My top tip is to reserve both to guarantee a very tasty and entertaining evening. Booking usually essential for both.</div>

<p>This year, the Kempinski have laid on some mouth wateringly tasty sounding menus for Christmas Eve, Christmas Day and <strong>New Year</strong> in both their <strong>Galleria</strong> buffet restaurant and <strong>Come Prima</strong> restaurant. The prospect of tucking into the scallops starter is good. I&#8217;m reckon that the lamb main course, washed down with a decent <a title="Bulgarian Wine: Midalidare A New Wine Estate" href="http://banskoblog.com/2011/10/bulgarian-wine-midalidare-wine-estate/">Bulgarian wine</a> will make for a fine Christmas dinner. The Garlleria Christmas lunch is €44 or 88 lev per person.</p>

<p><strong>New Bansko restaurants</strong></p>
<p>The five new large restaurants opening their doors for the first time this season:</p>
<ul>
<li><strong>Gastros restaurant. </strong>Dimitros and Petros serving up fresh fish and Mediterranean dishes. Recommended. Located at the entrance of town opposite the Valon supermarket.</li>
<li><strong>Queen&#8217;s</strong> pub, up from ice rink on Pirin street (large, live bands). Reports please.</li>
<li><strong>Stone Flower </strong>Barbeque located on Pirin Street by ice rink (traditional music, too noisy for me to try)</li>
<li><strong>Euphoria</strong> bar and grill right at lights before gondola, (looks nice: more upscale, <strong>Chinese</strong> restaurant upstairs &#8212; opening any day now).</li>
<li><strong>Mezze</strong> restaurant. Now in the location of  ByTheWay. Lavina complex. Reports please.</li>
</ul>
<p>I recently took a look at <a title="Sushi in Bansko: Turning Japanese" href="http://banskoblog.com/2011/12/sushi-in-bansko/">sushi in Bansko</a>, including the <strong>St Ivan Rilski</strong>, but also there&#8217;s now sushi at <strong>Vila Roka</strong> and, like last year, at the <strong>Florimont</strong> hotel.</p>
<p>Will Bansko soon become a gourmet and party destination? I think it already is getting very close to this. These new restaurants make a welcome change from the generally reliable <a title="The Victoria Restaurant In Bansko" href="http://banskoblog.com/2009/01/victoria-restaurant-bansko/">Victoria</a> restaurant (opposite the Kempinski).</p>
<p><strong>Tips Of The Day</strong></p>
<ul>
<li>When eating out, a gratuity on top of the bill (cheque) is much appreciated by your waiter or waitress. Wages are still low here, and the Bansko cost of living is not so low!</li>
