Baconsalt Experiment

Ok... by now I would expect that you all have heard about this wonderful little invention called Baconsalt.

It is this wonderful salty spice that tasted like... you guessed it.... Bacon!

This is good stuff... I put it on popcorn all the time...

So I'm sitting here the other day looking at the Baconsalt and wondering what else I might do with it. I decided to season some thick cut Hickory Bacon with the Black Pepper Variety of Baconsalt.

First, I spread the bacon out on a cookie sheet for baking. Baking gives you a nice consistant texture and keeps the bacon from curling up when you cook it. I then sprinkled the Black Pepper Baconsalt over the strips.

I then baked the Bacon (I like to call it Oven Roasting) at about 350 degrees for about 20 minutes and magially.. out comes this delicious Pepper Bacon.... Delicious.

Bacon Marinara

I work in Second Level Technical Support for a Large Cable Television, Telephone and Internet Provider. Being second level support, my job is in part to try and teach the first level support agents how to do a better job, and with that, to also try and make it so they enjoy their job more. Being a first level telephone support agent can be pretty stressful because, let's face it.... people who are happy and have no problems simply do not call for technical support, so these agents deal with angry customers all day long, every day.

One of the things that I do to help with this is hold a FoodFest once each month. This started out as a few people from my group just wanting to do something nice for everyone and relieve some stress by providing a delicious meal and serving it to them.

Management took notice of how popular this became with the agents and a marked improvement in attitudes after we had served them a good meal. We used to do this out of our own pockets... which also meant that it didn't occur every month simply because it can get pretty pricey... and well... I have to save some of my money to keep my stockpile of Bacon up.

Anyway.. Management decided to give us a $100 budget for these FoodFests each Month so that we could keep doing this. YAYYYYY!!!

Recently, we decided to do a Pasta Fest... Basically just a nice selection of various different Pastas and different sauces. These events always turn into a little bit of a competition to see who's creation is the most popular. Being "The Bacon Guy"... I always try to put bacon into whatever food am contributing. Since this was a PastaFest... I decided to go with Bacon Marinara.

I started with two pounds of thick cut Hickory Bacon...

I then chopped up the Bacon into large chuncks... can't have small chunks in Marinara... Bigger is Better!

I decided to make the Marinara from scratch.... I can't tell you the exact recipe, because well... that would be giving away my secrets...

Of course the other reason is that I never make things the same way twice. I am the type of cook that doesn't measure anything. I simply add ingredients in amounts that look about right.. and then add things to change the taste until I like the way it turns out. Things rarely come out the same way twice.

Anyway, I Started with a gallon or two of tomato sauce. This I just bought from the store because I was too lazy to deal with raw tomatos.. and I like my Marinara to be more saucy than chunky when it comes to tomatos. I then added various combinations of Frsh Minced Garlic, Oregano, Cruched Red Peppers (for a little spiciness) Minced Onion, a spice blend called Alpine Touch, a few other carious "Secreet" spices and even a dash of Liquid SMoke... just to add to the Yummy Baon Flavor Then I added about a pount of fresh grated Parmesan Cheese and about a half a pound of grated cheddar to give it some extra flavor.

After simmering the sauce for a few hours, I then added the Bacon to the mix and simmered for another 4 hours or so to blend the flavors. When it comes to a good Marinara... the longer it simmers... the better it will taste in the end.

This turned out Delicious. I think that the fact that my Marinara was gobbled up within about 10 minutes makes me the winner of the little competition at this event.

I got a lot of compliments on the Marinara, and saw a lot of smiling faces as people were eating it.

Another Success!!!

Maple Jalapeno Bacon Steakburgers

Kyle and I have a little weekly routine now that it has warmed up a bit. It has become something of a Bacon and BBQ Experimentation Night.

Last night, we decided to take some nice thick cut bacon and run it through the meat grinder.

Then we took some nice Montana Grown Steak.....

Now what do you do with the steak? Well, you run that through the grinder too and mix it with the bacon...

Then, for a little flavor, we mixed in some Cabelas Open Season Maple Jalapeno Dry Spice

Then simply form the mixture into patties like you would a regular burger and toss them on the grill

While those are cooking, we took Kyles new Fire Pit and started up a fire, because what is better than BBQ Bacon Steak Burgers? Well, nothing... other than eating them around an open fire of course.

Once the Burgers were done, we topped them with Pepperjack Cheese, lathered the Buns with French Onion Bacon Dip for a little added flavor, tossed on some nice seasoned French Fries and some Busch's Beans, and served with some nice cold Spanish Peaks Brewing Company Honey Raspberry Ale.

DELICIOUS!!! A meal truly fit for a King!

Raspberry Chipotle Bacon Steak Burgers

Alas,

This is a sad post as we were too hungry to bother taking pictures, so you will just have to use your imagination.

The other day myself along with our Tribal Chief, we mad Raspberry Chipotle Bacon Steak Burgers. To do this we ground up some good round steak, then we ground up some BACON, mixing these together in the perfect combination, we then added Raspberry Chipotle Sauce to the mix. These promptly went on the Barbecue grill.

After cooking, we topped with Kraft Deli Deluxe - 3 cheese garlic and herb cheese. (product can be viewed https://www.wegmans.com/webapp/wcs/stores/servlet/ProductDisplay?langId=-1&storeId=10052&productId=687674&catalogId=10002&krypto=QJrbAudPd0vzXUGByeatog%3D%3D&ddkey=http:ProductDisplay)

The result was truly delicious, we will probably do this again in the near future and will post pictures when we do so.

Bacon Gravy and Buscuits

We made some old school biscuits and gravy with bacon as the base for the gravy. We used a maple thick cut bacon cooked up nice and crispy. The added flour, milk, etc.. to the grease for the white gravy. Homemade biscuits from scratch with butter. I don't think it can get much better than this. Chris's bacon wrapped kielbasa does come close though. Enjoy the pictures of our feast.

Turbaconducken - Made the RIGHT way!!

My friend Jennifer at work and I often get into these food conversations. Well, actually, I have those conversations with everyone at work it seems...

Anyway, one day I sent her a link to Turbaconducken that someone had made on the Internet. If you don't know what that is.. let me explain a little.

Turbaconducken is a little twist on the old classic Turducken. What is Turducken you might ask? Well, basically, you take a chicken, stuff it in a duck, and then stuff that into a turkey.

Turbaconducken is the same... but you wrap it in bacon as well. How could that not be delicious???

I also on occasion, try to get my coworkers to come by on a day off and Barbecue with me. So we decided to throw a get together... and serve Turbackonducken

.

Jennifer did all the hard work on this one. She did this the proper way, unlike other attempts we saw on the Internet.

The other people had the right idea... but they did not De-Bone the meat first.. and trust me... it just is not the same thing.

She De-Boned the Chicken, Duck and Turkey, made some delicious stuffing and put the whole thing together. Apparently this had to cook for about 12 hours. I can not even imagine the torture of waking up in her house to the smell of this cooked Turbaconducken that morning. It must have driven her nuts.

The first trick to serving Turbaconducken is to first slice down the middle of the breast. Nice and tender.. sliced like a hot knife through butter.

Just look at all those tasty tasty layers of heaven.....

You then slice each half into 1/2 inch thick slices.

I whipped up my special Bacon Cheesey Potatoes.... Basically, you take some Tater Tots, about a pound of shredded cheddar cheese, 16 ounces of sour cream, some slices of bacon and some spices... mix them all together and place in a casserole dish and cook for about an hour at 350 degrees.

We served up the Turbaconducken on a plate with a side of the Bacon Cheesey Potatoes, and toped them both with some delicious Gravy.

This was absolutely Fabulous!!!

Allright... so I was sitting around the other night watching a movie... when I decided I needed a snack.

I know!... Nachos sound good.... but wait... how can I improve upon Nachos... I know... BACON!!!

So I grab a bag of Doritos Late Night Tacos Flavored Chips... Shred up some Extra Sharp Cheddar Cheese... and top that with bits of Thick Cut Hickory Bacon.

Heaven on Earth!!
