Whew Hectic

As the school year winds to a close things here are really busy. We have Kindergarden graduations, closing cerominies for girl scouts, and great weather to play in. So things will get back to normal in the next few weeks here, so just bear with me as I finish out my daughters school year and get to a summer schedule. Hope all is well with you all and feel free to email me with any questions or ideas that you may have.

The Gym

I have been to the gym twice a day everyday this week and love it. I take classes in the pm and in the am I run, or spin and then the the circuit training machines. I love it. I'm gonna look great for moving back to Fla. I have also started counting my calories, and drinking a ton of water. Starting Weight 195.5!!!

Well hubby got in at 7am Sunday morning and we enjoyed seeing him, since we missed him like crazy. That's why I have been MIA for the past few days, was enjoying my time with him. We went bowling all 5 of us, and Catherine was so cute doing her bowling. The ball took days to get down to the pins but we had a blast. Dh is not sure if he will get in next weekend so he got me my mothers day gift early.

He just left and miss him already. Right now I am cleaning up the mess he left in his wake. He made more of a mess in this house in the 2 days he was here then me and 3 kids did all week. Men gotta love em!!!!
My first trip to the gym tomorrow...... Stay tuned!

Week 1 alone

Well I am not alone, I have 3 kids and a dog with me, but it is not the same with DH not around. I miss him like crazy. For those of you that do not know, my husband got laid off of work and was forced to go back to OTR trucking to support us. He left Monday night and we are not sure when he will be back, it depends on where his loads take him. Right now he is on his way to Cali. If he goes there and comes right back he should be home Saturday night late, if he gets directed somewhere else we will not see him till next Saturday. If were lucky. I know that this is something that he has to do right now to keep his family fed and safe, but I miss him like crazy and am losing my mind a little bit.

I will be moving to FLA around July 1st so that I can be close to my own family, while he is gone. That will be fun, the kids and I plan on spending a lot of time in the pool and at Disney. lol

My Desk is attacking me and I totally need to tackle it. The top is a cluttered mess of things and the drawers OMG! No one could find anything in there, so that is my Tackle this Tuesday. Some people may not think that my office is all that bad, but to me it is bad enough that I can get nothing accomplished in it. So I hope to make it fuctionable. (is that a word)

I finally got around to tackling my Tuesday Tackle this week. As you can see now that my work space is clear I moved the laptop back from the couch to it's rightful place at the desk. Job really only took me 10 minutes tops. Now to get some work done at it.

April Has Not Been A Good Month!

First DH got laid off from the job that he had been at for 5 years, then his closest cousin dies of an overdose. Then today I had to take my poor 2.5 year old to an allergist so that they could prick her 40 times to tell us that she is allergic to dust mites and our dog. The poor little thing was screaming "Mommy it HURTS!!!" Broke my heart into a million pieces over and over again. Luckily the DR said that she is not very allergic to the dog so we don't have to get rid of him, just an extra bath each month and brushed more often.
Now my husband got a new job, that is great and I know I can't really be picky right now, but I can't help but be upset. He is now an OTR trucker and we will be lucky if he is home 2 days a week. I hate that. I feel like my family is getting ripped apart. On top of it all my DH wants to move the kids and I back to FLA so that we will be closer to my family, since he will be away so much. I am not sure that I want to go, I like it here, but on the other hand would love to be near family again. It kills me though because my girls have friends here and have made a life that they love. I am torn on the whole thing. I am just ready for this month to be over so that I can move on. I will miss my DH so much!

Do you love perfume like I do? My mother always said that "Perfume is a women mmost powerful asset." She loved perfume, and I do to. I have tons, of all different tones. I have floral, and musky you name it I have it. My all time favorite though is Sunflowers and Opium. I know they are on two different levels but I just love them both. I wear the Sunflowers everyday, except on special occiasions then I wear the Opium. I found this informative new perfume blog that has reviews and information on all different kinds of perfume. This site is brand new so bear with them and lets see how it turns out.

Tuesday Toot New Recipe

Well to toot my own horn, tonight for dinner was supposed to be breakfast for dinner, but as I was reading my daily blogs I came across this awesome fried chicken recipe at my buddy Robyn's blog. What's Cookin? Well I instantly printed the recipe and ran to the store to make it, just looking and Rob's picture made me salivate. Ladies let me tell you it was so yummy i am replacing my old fashion fried chicken with this recipe in my rapatore of recipes. I did however use boneless skinless chicken breast, because I hate having to fight with chicken that still has the bone in. It was totally yummy, to die for. Huge hit with the kids too. They loved it.

The reason I am bloggin this has my Tuesday Toot is because I did an AWESOME job on this meal and so did Rob! Thanks a ton cooking buddy. I love you!

Readers, I have something very important to share with you as we are begininng to spend more time ourtdoors. Did you know that Yamaha has recalled thier Rhino Side by Side, due to rollover risks? Yamaha Rhino Rollover's are occuring because the ATV is very narrow, top heave, and has tires that are to small. These specs make it less stable then wider vechicles, with a high center of gravity, and not enough tire to hold it to the surface.

Many injuries and deaths have occurred due to the defective design of the Rhino.

With spring and summer knocking on our door step I just want my readers to be aware of the risk, as many of us use these at our homes, or when we go camping. Please if you have one of these vechilces, get rid of it because it is unsafe for you and your family. There is no need to have a senseless accident that may ruin your summer or even your family. We love to play with toys and we expect when we buy a product that it will be safe for us and our families, please make sure that the ATV's that you are using are not the Yamaha Rhino, and have a safe and playful summer.

I have had a few requests for the Hamburger pinwheel recipe. So here it is straight from the Hillbilly Housewife.

Hamburger Pinwheels

Dough:
3 cups flour
1 teaspoon salt
1 tablespoon baking powder
1/3 cup shortening
1 cup milk (or a little less)
Filling:

1 pound ground beef
1 small onion, chopped
3 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup milk
I usually make the filling first, so it has a chance to cool down. Fry the hamburger in a skillet until it is crumbled into small pieces, and grey all over. Cook the onion with it if you like (I always do). Drain or spoon off some of the fat. Don't get rid of all of the fat. You need some of it to absorb the flour. So after you have spooned off most of the fat, add the flour, salt and pepper. Stir it up until the flour is dissolved in the fat. Add the milk and continue stirring until the mixture thickens considerably, and boils. Boil for a minute and remove the filling from the heat. If you want to cool it down quickly, transfer the filling to a bowl and put it into the fridge or freezer while you prepare the dough. This is what I usually do. It also gives me a chance to wash the skillet before anything sticks to it unmercifully.

To make the dough, get out a big bowl. In it combine the flour, salt and baking powder. Add the shortening. Use your fingers or a fork to mash in the shortening until the mixture is crumbly. Stir in the milk, forming a nice, slightly stiff dough. Knead it about 8 or ten times to get the gluten in the flour activated a little bit. Rip a piece of waxed paper off of the roll. Place it on your counter and pat the dough into a thick rectangle on top of it. Use a rolling pin or sturdy jar to roll the dough out into a big rectangle, about 1/2 an inch thick, or a little thinner.

Spread the cool filling onto the dough, like spreading butter on bread. Spread it to within 3/4" of the edges. It is good to cool the filling down because hot filling is challenging to work with. Warm filling is acceptable. Now, using the waxed paper to help, roll the dough up like a jelly roll, peeling back the waxed paper as you roll. Form a long cylinder of dough and filling swirled together. Toss the waxed paper in the garbage. Slice the roll with a sharp knife into 12 or 15 pieces. Lay the pieces on an oiled cookie sheet, rearranging them slightly so they are pretty and pinwheel shaped if necessary. Bake at 425° for about 20 minutes. These are good served with Italian Tomato Sauce or canned tomato sauce, or Cheese Sauce or Tomato Gravy or even plain old ketchup. I like them with steamed broccoli and carrot raisin salad, and macaroni and cheese. Kids like these pretty well.

I add and take things away as I see fit and it all depends on the day when I make it what all happens to the recipe, but this is the base recipe. Huge hit with all 3 of my kids and trust me that is hard to do!! Enjoy!

Menu Plan Monday 4/20

This week is a bit of a what's hiding in the freezer week. Spring cleaning is also this week at my house, so I am using everything in the fridge, freezer, and pantry in this weeks menu. That way next week I can restock the shelves and be all organized again. So if some of the meals sound funny to you that is because most of this stuff will be thrown together, to make a meal.

Monday - Hamburger pin wheels, rolls, and cheese

Tuesday - Breakfast for dinner 1 of this week, Pancakes and waffles

Wednesday - Pork Roast, rolls, potatoes

Thursday - Meatloaf casserole and veggies

First Camping trip of the Season

So on Friday afternoon it was such a beautiful day DH and I decided that we wanted to go camping, but there was going to be some rain comming on Saturday afternoon. So we decided that we were gonna load up the four wheel drive, and head out to Hillman Ferry to camp for the night. We picked up the kids early from school, and headed out. This was Bailey and Taylor's first camping trip and the baby's second. We had a blast, but no one slept well since I forgot to bring the pillows. Ooops!

We went fising, built a camp fire, did a Brownie Camping try-it, cook hamburgers and hot dogs on the camp fire, and of course made smoores. Yum! What a great day, can't wait to go for a whole weekend!

Mountain Biking

Back in the day my husband used to love to mountain bike, me personally think it is way to much work for something that is supposed to be relaxing. But let's face it ladies, our idea of relaxing is way different then that of our husbands. So any way, my husband love to bike with his friends down the trails in Western Kentucky, up huge hills, flying down the other side. Over the years he has tried many differnt wheels and come to love mavic wheels for thier tuff stuff.

Making Money Online

For years I have been looking for a way to make money online. In this day and age that is no easy feat, considering that everyone is out to rip you off. Even Google, with their make money with Google scam. I work for a company called KGB, no not the Russian Spy, it is Kinda like ChaCha. I have spent 13 hours over the last 2 days working and have made a whopping $30, they pay by the answer so if their are no questions you are not getting paid. It's not to bad though considering that you can sit and watch tv while making money when a question pops up. There is also a place called key for cash that I am still trying to get onto. What a pain! I have also blogged for PPP on a number of occasions, but I refuse to take an opp just for the money, it needs to be something I believe in. So needless to say, the search continues for work from home.......

This afternoon the kids and I dyed our Easter eggs for the Easter Bunny to hide and then made some choclate covered rice crispy treats. We had a blast and made a total mess. I love the holiday's any of them, the kids and I always spend a day or 2 in the kitchen cooking stuff, making a mess, lauging and having a great time.

With the way that the weather has been latley it is amazing that she is not sicker then she already is. 30 degrees one day and 70 degrees the next. Then 3 days of rain and cold again. I have been waiting months for spring and now that it is almost here I'm going to lose my mind. It was such a horrible winter. We had a horrible ice storm that left us without electric and water for 2 weeks and others longer. So I am so very ready for the warm weather so that the kids and I can get out of this house and enjoy the nature that we love so muc.
