CouponsToTroops – Helping Overseas U.S. Military Families Save

Coupons are an amazing tool – they can help us save money for our own households’ needs, but they can also allow us the opportunity to help others, in many ways.      Even expired coupons can be a great way for us to help others, specifically helping US military families who are stationed overseas.    Those families can use manufacturer coupons, up to 6 months past their expiration date, at the Commissary (like our grocery stores) and the Exchange (like our Wal-mart or Target) on base.    But since coupons are not distributed overseas in Sunday newspapers like they are here, access to them is extremely limited.  CouponsToTroops has made it their mission to give those families a helping hand.

CouponsToTroops maintains a list of military families, stationed in countries around the world (including Bahrain, Cuba, Germany, Guam, Italy, Japan, the Netherlands, Portugal, Puerto Rico, South Korea, Spain, Turkey and the United Kingdom) who are interested in receiving coupons.    Anyone wishing to show their support can sign up to adopt a military family and CouponsToTroops will put you in touch with one of their families so you send off your coupons as they expire. Crockpot Beans – Never Buy Canned Beans Again

So much time and money can be saved simply by planning ahead and making the time to keep your freezer stocked with things you would normally buy or make last minute. I need to be more intentional about this so I’ll be sharing my journey with you here on Freezer Friday. I’d love to share your projects too! Canned beans can be expensive, compared to dry beans. I now cringe when I see the prices and then I smile because I know I will never pay that price again.

About a year ago I started buying dry beans (kidney, pinto, black, etc),  cooking them in big batches and freezing them for later use.  They’re great for adding to casseroles, chili, taco salad, soup, you name it.  Beans make great fillers. Be creative.

Use your slow cooker and this chore becomes almost effortless. Simply pick your beans and rinse thoroughly. Place in the crock pot (no more than 1lb for a smaller crock pot and 2lbs for a larger one) and add water to about one inch under the rim. Add any seasonings at this point (including half an onion for flavor and meat pieces if desired).

I turn my crock pot on high for the first couple of hours and then turn it down to low until the beans are tender. Allow to cool and then place in ziploc freezer bags.

Stack the bags of beans and place flat in the freezer. Once frozen, you can stand them up like books on a bookshelf to save space.

I usually fill my bags with the equivalent of approx. 1.5 cans of beans. Two pounds of cooked beans ($2-$2.50) yields four freezer bags which equals six cans of beans. Most of the time you can find beans for around $0.58 per can. Using this figure, the crockpot/freeze method will save you as much as $1.48.

Sometimes you find the larger bags of dry beans for less $ per pound. In this case, your savings would increase.

Another benefit to making your own beans is being able to control what is added to the beans for healthful benefits as well as flavor.

Ground Beef & Rice Bake

INGREDIENTS:

1 lb ground lean beef
1/2 cup chopped onion
1 clove garlic (finely chopped)
1/2 cup chopped yellow bell pepper (may use other kinds)
small can tomato sauce
2 cups minute rice
1 3/4 cup HOT water
1 envelope onion soup mix
1 cup shredded Monterrey jack cheese

DIRECTIONS:

• Brown ground beef in large skillet.
• Add onions, garlic and bell pepper. Saute until just tender.
• Drain ground beef mixture.
• Add tomato sauce, rice and water. Mix thoroughly.
• Pour mixture into large baking dish and cover tightly with foil.
• Bake in 400 degree oven for 30 minutes or until rice is tender.
• Remove foil and sprinkle with cheese.
• Return to oven and bake until cheese melts.

Alternate Option:

• Prepare a box of Uncle Ben’s Wild Rice.
• Add to ground beef mixture at the same time you add tomato sauce.
• Sprinkle with cheese and bake until cheese melts.

MASSACRE OF EAGLES

In “Massacre of Eagles” Falcon MacCallister finds himself drawn into the tensions between displaced Northern Cheyenne and the settlers massacred by them.

Following the Custer fight at Little Big Horn, the Northern Cheyenne were sent to Oklahoma, then known as Indian Territory. The Cheyenne were not accustomed to the hot conditions of Oklahoma and they began dying in great numbers. In desperation, a small band left the reservation and headed north, settling in the Tongue River watershed in Montana Territory. Because their settlement was peaceful, President Arthur, by executive order, established the Tongue River Reservation, making it legal for them to stay.

White settlers, meanwhile, are being massacred by what appears to be tribes of Northern Cheyenne tribes but there’s more to this than anyone suspects. Falcon MacCallister finds himself drawn into this conflict and might not come out alive.
