Whitechapel, Gin Bar from Smuggler's Cove Owner, Opening Late October

With nearly 400 gins, a strong steampunk theme and a full menu to match.

Gin fans will be happy to hear that Whitechapel, the nearly-400-gin-strong bar coming to the Tenderloin in the old Noble space, has every intention of opening on Monday, October 26 (“Fingers crossed,” owner Martin Cate told Eater). The bar, a collaboration between owners Cate (Smuggler’s Cove) and John Park (Novela), beverage director Alex Smith (Novela, Gitane) and chef David Murphy, is going steampunk-strong with a “heavily-themed Victorian-era distillery in an abandoned London Underground station” decor. “It’s like an imaginary Victorian fantasia,” Cate said. In the year since its announcement, chef Caleb Jones left the project, and Murphy has gotten on board with the Anglo-Dutch-Bangladeshi menu. “It sounds like a hipster parody, but it’s actually rooted in the notion that the Dutch and British are our two most prominent gin countries, and their food reflects the spice trade that informed the creation of gin,” Cate explained. As such, Murphy’s full menu of apps and entrees has a ton of spices and big flavors.

On the drink side, Smith made a menu of more than 70 cocktails, all featuring gin, of course, with lots of geographical riffs on G&T’s in addition to the classics. Distillery No. 209 created a custom house gin, of which Cate just received the first bottle this week. You’ll likely taste it in the Polk Street Irregulars program, which is a similar tasting and education program as Smuggler Cove’s popular Rumbustion Society. “We’ll have an exciting educational journey through the world of gin and being able to taste different styles, applications in cocktails and side-by-side comparisons. Plus there’s a very interesting interactive component,” Cate said. Stay tuned for more details closer to opening.

La Boulangerie de San Francisco Reopening Pushed Back

You'll have to wait until next week for your almond croissants.

Pascal Rigo is busy readying the reintroduction of beloved brand La Boulange as La Boulangerie de San Francisco to the city, which is taking a little longer than he anticipated. Though the Pacific Heights location was originally scheduled to reopen today, Rigo now plans for Monday, with the Union Street store to follow the next week. Then, things will be back on track with one location to open per week.

"It’s nerve wracking for me because people are probably going to expect more from us than ever before," Rigo told Eater. "It's going to be more rustic than ever. It's exciting because every part of the menu from bread to morning pastries to sandwiches, salad and soup are going to be revamped, and that’s fun." You can expect big brioche slices "loaded with fresh fruit from the farmer’s market," new croissant shapes for a crunchier texture, different flavor canales and types of bread. What will definitely remain as you remember are almond croissants, croissant pudding, apple turnover and macarons. "When you get into the Boulangerie, it’s going to be the same feel, the same idea. We want to people to have a bigger smile than ever," he said. "It has worked for us very well in the past, and we hope it’s going to work for us now."

Healdsburg's Shed Names Perry Hoffman Culinary Director

He'll be rolling out all-new breakfast, lunch and dinner menus.

Here's one for the award committees in 2016: The Michelin-starred Perry Hoffman is the new culinary director at the James Beard-approved Shed in Healdsburg. Hoffman and owners Cindy Daniel and Doug Lipton are big on casual food from "good farming" and gardening, which should inform Hoffman’s new menus, yet to be rolled out at the combination hall, cafe, fermentation bar and marketplace. Former chef Miles Thompson is moving on to a to-be-determined project.

As for all those awards between the two? Let’s take a closer look: Hoffman joins from étoile at Domaine Chandon in Yountville, where he earned a Michelin star three years in a row. The Chronicle named him a Rising Star Chef in 2010, he was a semifinalist for the James Beard Rising Star Chef of the Year in both 2010 and 2011, and he won Food & Wine's People's Best New California Chef in 2012. As for Shed, the restaurant was named the James Beard Foundation’s Outstanding Restaurant Design for 2014 award winner. Perhaps Hoffman will get Shed on the fancy award committee radar as well.

OAKLAND — Calavera’s launched lunch and brunch with ceviches, tortas, tacos and lots more eggs, plus all-new a.m. cocktails like micheladas, mimosas and bloody mary’s. Lunch runs 11 a.m. to 3 p.m. on weekdays while brunch Saturdays and Sundays only from 10 a.m. to 3 p.m. Peek the menus here.

MISSION — Soft launching this Saturday, October 3 from 10 a.m. to 2 p.m. is Sous Beurre’s brand spanking new counter service brunch menu with updates on classics like waffle-battered fried duck and creme-brulee French toast. In an atmosphere of rising rents and staffing shortages, here’s a story to warm your heart: after being forced to shut down due to Health Department concerns and the casual need for $300,000 for building updates, the iconic Sam Wo is coming back. And soon — October 19 marks the restaurant’s official reopening as Sam Wo Restaurant and Bakery, pending final investigations, Hoodline reported. Coming into the old Anna Bakery space at 713 Clay St. just a few blocks from its original location, its hours will remain fairly similar from 7 a.m. to 3 p.m. and 9 p.m. to 4 a.m. daily. The restaurant’s official site is actively hiring and searching for old photos to decorate the walls for a throwback feel. The countdown begins.

POTRERO HILL—Dat Spot Rotisserie & Comfort Food opened today in Chez Maman's old spot at 1453 18th St. The rotisserie chicken (served with two sides and two sauces) looks to be a favorite, though there are entrees like fried chicken, pork chops, and meatloaf to choose from as well. INNER RICHMOND—Koja Kitchen opened a brick-and-mortar location in the Inner Richmond at 343 Clement St. last week, so now San Franciscans don't have to wait in the food truck line for their popular "burgers" and kamikaze fries. BERNAL HEIGHTS—Pinkie's Bakery opened their second location in the old Sandbox Bakery at 833 Cortland Ave. this weekend. SOUTH SAN FRANCISCO—Armstrong Brewing, the South San Francisco brewery is now softly open at 415 Grand Avenue. MISSION—Yeral Caldas (Cholo Soy) opened his second Peruvian restaurant in San Francisco last week at 3015 Mission St. The new spot, El Ají, has 15 tables, a minimalistic interior, and serves simple dishes true to the Peruvian tradition. [Mission Local]

HAYES VALLEY — Boba Guys owners Andrew Chau and Bin Chen are building a 1,000-square-feet store in the upcoming 8 Octavia building (where sake bar True Cup will also be), which will make it their third spot. OAKLAND — Pal’s Takeaway is headed across the bay to open in the Hive space (where Calavera, Drake’s Dealership and more are) as part of a collaboration with Firebrand Artisan Breads, which will also open there in a 5,000-square-feet space,. Their Salsa #9 brought heat with habaneros, but not so much so that you couldn’t taste all the other tasty flavors in the mix. Make this salsa while tomatoes and peppers are still perfectly pickable! Salsa #9

ROAST the following:

-8-10 habaneros +/- for heat
-3-6 jalapenos & serranos
-5 Roma tomatoes
-5 tomatillos

BOIL the following:

1 qt. vegetable stock
3 cups water
5 cloves garlic
2 tbsp cayenne pepper
1 tbsp paprika

Combine liquid and roasted vegetables (once blackened) and cook down till tomatoes are soft. Then blend everything together. Afterwards, fold in:

1/3 bunch cilantro
1/2 chopped red onion
2 tbsp cider vinegar
juice from 2 limes

Chill for at least 3 hours. Enjoy!

Peaches and Scream by Team Southern Comfort

INGREDIENTS:

2 mangoes diced
2-3 peaches diced
1/2 medium red onion diced
3 jalapenos minced
2-3 tbsp cilantro minced
lime juice, sugar, and salt to taste

DIRECTIONS:

Use the chopping blade with your food processor to chop the peaches, mangoes, and onion. Be careful with the fruit or you could chop it into mush.

If you like it spicier, use spicier peppers or more peppers. For the competition I used serrano peppers.

Prepare all the ingredients and mix together. Add extra sugar to taste if your fruit isn’t ripe yet. Add lime juice and salt to taste. Best eaten 12-24 hours after preparing.

Serve with chips, fish, pork, or (as one guest at the competition suggested) tequila!
