Apple Pie Cake

This is a stunner of a cake that you can mix in a single bowl. You can bake it in a pie pan and cut in slices like a pie to serve, or bake in an 8x8 pan and cut it into squares. If you cut it in pie slices, you'll probably want to add a little whipped cream or ice cream.

Tools: Mixing bowl, mixing spoon, oven

Ingredients:

1 cup sugar
1/4 vegetable oil
1 egg
1/4 tsp salt
1 tsp cinnamon
1 tsp ginger
1/4 tsp nutmeg
1 teaspoon baking soda dissolved in 2 Tbsp hot water
1 Tbsp vanilla extract
1 cup flour
1/2 cup chopped pecans or walnuts (pistachios might work)
2 cups diced apple (I leave the peel on)

1. Preheat oven to 350
2. Mix together all ingredients in a large mixing bowl.
3. Pour into greased pie plate or 8x8 pan. Bake for 40-45 minutes. (Test by stabbing with a toothpick and seeing if it comes out clean. If you're me, start checking at 30 minutes just in case.)
4. Remove from oven when golden brown and toothpick comes out clean.

Notes: If you're feeling showy, you can replace the cinnamon, ginger, and nutmeg with 2 tsp of Chinese five spice seasoning. You can also use only cinnamon and it will still be delicious.

Cupcakes you can make for your kid to take to school while simultaneously editing your project’s five-year workplan

(in other words, these are easy and very quick.)

Ingredients
1 1/2 cups Flour
1 tsp. Baking Soda
1/2 tsp. Salt
1 Tbsp. Cinnamon
1 cup Granulated Sugar
2 tsp. Vanilla
1 TBSP Vinegar
1/2 cup Oil
1 cup Water
22 squares of chocolate or 22 Hershey’s kisses
Optional sprinkles

Instructions

1. Preheat oven to 350 degrees farenheit.
2. Line cupcake pan if using liners; otherwise grease and flour it.
3. In a big bowl combine dry ingredients. Mix them up with a wooden spoon so they’re all evenly distributed.
4. In a medium bowl or 2 cup measuring cup, combine wet ingredients.
5. Pour the wet ingredients into the dry and mix well.
6. Fill the cupcake liners. If you fill them just under half full, you can make 22 cupcakes, which should cover an entire preschool class. If you fill them more, it will make about 18 cupcakes.
7. Bake the cupcakes. It will take 12-14 minutes, but check them at 10 just to be safe. Go spellcheck your workplan while you wait. Set the oven timer so you don’t get all distracted by logframes.
8. Once you take the cupcakes out of the oven, immediately put a chocolate square on top of each.
9. Go to the first cupcake you put the chocolate on, and use a toothpick to spread the now melted chocolate all over the top of the cupcake. Add the sprinkles if you’re using them. Alternately, stick a Hershey’s kiss on top and leave it alone.

Notes:

1. The advantage to using chocolate instead of icing is you don’t have to wait for the cupcakes to cool and then frost them. You can just spread the chocolate, pack the cupcakes into a shoebox and load them into the car still warm. They’ll be cool enough to eat by the time they get to the kids, and the chocolate looks very pretty on top. With colored jimmies, it's downright fancy looking. Well, kid fancy.

2. This is not grownup food. This is kid food. The cupcakes are very sweet and their only flavor is cinnamon and vanilla. It’s not complex. Kids love them, though. If I was making these for grownups, I'd add cloves and ginger in addition to the cinnamon, double the amount of salt, and cut the sugar to 3/4 cup. I might also switch one of the teaspoons of vanilla for almond or orange extract.

Dim Sum Sauce

Seriously, never tell anyone I told you this, but you can make a surprisngly nice dipping sauce for dim sum - or any other asian dumplingy thing - by combinging equal parts soy sauce and coca-cola and adding powdered ginger to taste.

Homesick Chinese Takeout

This recipe is for everyone, who, like me, gets inexplicably homesick for the kind of bad Chinese food you get at Chinese takeout. This tastes exactly like the "Bourbon Chicken" you get at food courts all across the US.

It's reprinted here directly from food.com - I can't take any credit for the recipe. I just copy and pasted. I have attached a few of my own notes in parentheses.

2 lbs boneless chicken breasts, cut into bite-size pieces (aka one kilo)
1 -2 tablespoon olive oil (any vegetable oil is fine and makes no flavor difference)
1 garlic clove, crushed
1/4 tsp ginger
3/4 teaspoon crushed red pepper flakes
1/4 cup apple juice
1/3 cup light brown sugar (I suspect white sugar would be fine but I haven't tried it)
2 tablespoons ketchup
1 tablespoon cider vinegar
1/2 cup water
1/3 cup soy sauce

Directions:
Prep Time: 15 mins
Total Time:35 mins

• Heat oil in a large skillet.
• Add chicken pieces and cook until lightly browned.
• Remove chicken.
• Add remaining ingredients, heating over medium Heat until well mixed and dissolved.
• Add chicken and bring to a hard boil. (I bring to a boil and then add the chicken)
• Reduce heat and simmer for 20 minutes.
• Serve over hot rice and ENJOY.

Note: I like to add frozen veggies during the simmer period. Broccoli or green beans are both nice. I also recommend adding a mix of 1 tablespoon cornstarch, 1 tablespoon water to the sauce toward the end of the simmer to thicken it.

Recipe: Vaguely Turkish Soup

I love this soup. It's light and refreshing served lukewarm or room temperature in the summer, and it's savory and warming in the winter. It's so easy to make than I am faintly embarrassed to serve it and so good that we had it as part of our Christmas dinner this year.

Ingredients:

2 cups chicken broth (vegetable if you prefer, just pick broth you like the taste of)
1 cup full fat plain yogurt (I make my own, but it doesn't matter much)
2/3 cup of cooked rice
2 tablespoons finely diced fresh mint (or two teaspoons dried)

Instructions:

1. Bring broth to a boil.
2. Turn heat down to a low simmer and stir in the yogurt and rice.
3. Add half the mint, and bring back to simmer.
4. Taste. If you like it, you're done. If it needs more mint, add the remaining mint to taste.
5. That's it!

Notes:

1. Too much mint will ruin the soup, so add it slowly and taste.
2. As the name implies, this soup is based on one of my favorite Turkish soups. I bought it in packets for a year before I thought to duplicate it at home. An actual Turkish recipe blogger has a recipe here.

Recipe: Pretending You're Not in Tajikistan Sauce

This is a spicy Asian-y sauce. It reminds me of the sauce they bring you with spring rolls in Vietnamese restaurants. I like it on fried food and with steamed vegetables. It tastes exotic to me, and unlike anything you would normally eat here in Dushanbe.

Ingredients:

1/2 cup sugar
3/4 cup cider vinegar (or rice wine vinegar if you are feeling fancy)
1 teaspoon crushed red pepper
1 1/2 teaspoons salt
1 large clove garlic, minced (you're going to boil it, so you don't have to do a great job mincing)

Instructions:

1. Combine all ingredients in a medium saucepan
2. Bring to a boil on medium heat, stirring constantly until all sugar and salt is dissolved
3. Turn heat up to high and boil for ten minutes - sauce will get thicker and sticky
4. Serve warm or cool

Notes:

1. If it gets too thick, you can thin it with some warm water
2. Stores well in a glass jar in the fridge
3. You can strain it when it's hot if you want to get out the red pepper flakes and garlic bits. I leave them in because I am lazy and they look nice.

Recipe: My Mom's Persimmon Bread

Ingredients:

1 ¼ cups sugar

½ cup butter, softened

2 large eggs

1 ½ cups persimmon pulp

½ cup buttermilk (or ½ cup milk + 2 tsp lemon juice)

1 tsp vanilla

2 ½ cups flour

1 ½ tsp baking powder

1 tsp salt

1 cup chopped nuts, if desired

Instructions:

Heat oven to 350’

Grease bottom only of two loaf pans 8 ½ X 4 ½ X 2 ½

Mix sugar and butter in a large bowl.

Stir in eggs

Add persimmon, buttermilk, and vanilla. Beat until smooth

Stir in flour, baking powder, and salt just until moistened.

Stir in nuts.

Pour in to pans.

Bake about 1 hour, or until toothpick inserted in center comes out clean.

Notes: You can use any other kind of fruit puree instead of persimmon.

Recipe: Embarrassingly Easy Quiche

I am bitter about this quiche because it’s so good. Why have I wasted so much time making real quiche when I could done this all along?

Tools: Oven, pie plate

Ingredients:

½ cup bread crumbs

Butter to grease pie plate

3 eggs

1 cup whole milk or light cream (or any combo of liquid dairy products you like)

1.5 cups grated cheese (any cheese you like)

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

1 tsp dried parsley

½ cup flour

Directions:

1. Preheat oven to 350 degrees Fahrenheit.

2. Generously grease the pie plate with butter

3. Pour the bread crumbs into the pie plate, and shake them all around until they have coated the butter completely and look like a very thin crust.

4. In a large bowl, mix eggs, 1 cup of the cheese, dairy, garlic powder, paprika, and onion powder. (I let my three-year-old do this.) Reserve half a cup of cheese for later.

5. Mix in flour and parsley.

6. Pour the egg mixture into the pie plate.

7. Sprinkle the reserved cheese on top.

8. Bake for 40-50 minutes, until middle is set and top is brown.

Notes:

1) The crust won’t look like it’s going to work but it really will work.

2) You can add anything you want to this quiche, it’s a good base – tomatoes, onions, leftover chicken, broccoli. It is also good on its own.

3) Depending on how much your quiche rises, you may have exposed bread crumbs on the pie plate that brown a lot. Just use a wooden spoon or something to brush them off before serving.

4) Seriously, why did I ever make a pie crust for quiches?

Recipe: Vaguely Asian Roast Chicken

Chicken breasts have vanished from Dushanbe’s grocery stores. I’ve roasted a lot of chicken as a result, and this is the recipe I’ve come to rely on. It takes a little extra work, but it’s well worth it for the deep flavor (not easy to achieve in a frozen broiler chicken produced in Brazil), crispy skin, and dark brown color. It's still delicious even if you make every substitute in the recipe.

Notes:
1) You can't make gravy from these pan drippings. It just tastes wrong. It’s a very moist chicken, though, so it doesn’t really need the gravy.

2) If you like brown rice, this recipe can go in the oven simultaneously with Alanna Kellogg’s foolproof oven-baked rice and in our house it usually does. (Yes, I found that site by googling my own name. What of it? It’s a great recipe resource.) You can also whomp a head of cauliflower in half, drizzle any random kind of marinade on it (I like a mix of olive oil, salt, mustard, and cider vinegar), and put that in the oven for the last 30 minutes of baking time to produce an entirely no-stovetop meal.)

3) There are so many parentheticals and substitutions in this recipe that it’s barely a recipe at all. I don’t know if that’s good or bad.

Ingredients:

1 whole frying chicken – I use the one kilo broiler chickens you can get here
1 Tbl soy sauce
1/2 tsp salt
1/2 tsp Chinese five-spice powder (substitute cinnamon if you don't have it)
8 thin slices of ginger (if you don't have fresh ginger, put a half teaspoon of ginger in with the salt)
2 garlic cloves sliced thinly
1 persimmon, cut in quarters (optional, and you can use an apple, pear, or skin-on orange instead)
1 1/2 Tbl soy sauce
1 Tbl hoisin sauce (if you don’t have it, substitute half honey and half soy)
2 tsp honey
1 tsp sesame oil (substitute sunflower oil and ½ tsp paprika if you don't have it.)

Tools: Pan to roast the chicken in – I usually use an old aluminum brownie pan.

Directions:

1. Preheat oven to 375.

2. If you’re using a Tajikistan-purchased chicken, examine it for pinfeathers, and burn off any you find using a match. Then use kitchen scissors to cut off any random bits of skin or fat that seem like they don’t belong on your roasting chicken.

3. Mix soy sauce, salt, and spice powder together to make a wet paste.

4. Run your hand around under the chicken’s skin to loosen it.

5. Rub the soy paste on the flesh of the chicken under its skin. Make sure to get the drumsticks. (This part always makes me feel like I ought to be estimating a dowry payment and meeting the bird’s parents, not popping it in the oven.)

6. Tuck the slices of garlic and ginger against the chicken flesh under the skin. Again, don’t forget the legs.

7. Put the quartered persimmon into the chicken’s cavity. (Cavity is a very weird word in this context, I must admit.)

8. Pull all the skin back over the exposed chicken flesh, and put the chicken in the oven.

9. Mix together the soy, hoisin, honey, and sesame oil to make a glaze.

10. After the chicken has been in the oven for 50 minutes, pull it out. (leave the oven on, the chicken will go back in shortly) Paint the glaze all over the chicken skin, and on any chicken meat that has become exposed while cooking.

11. Put it back in the oven straight on the rack (not in its pan) with the pan on the shelf underneath so it doesn’t completely mess up your oven. Tongs will help with this. (This will make the skin crispy. Sometimes I do this, and sometimes I put it back still in its pan to save the difficulty of putting a hot chicken back into the oven without a pan. Depends on how badly I want the crispy skin, or, honestly, whether I am making this for guests.)

12. After ten minutes, pull the chicken out. Let it rest for five minutes, and carve it. (That’s how it works for the scrawny chickens you get here. Those of you cooking plumper chickens will need to test for doneness by examining the juices or using your meat thermometer or whatever.)

Final note: You can eat the persimmon if you want to. I don’t really like the flavor, but everyone else in my house does, even the toddler. I just put it in there to keep the chicken from drying out. I am wondering if soaking the persimmon in some kind of juice – orange or apple, maybe – would be tasty.

Middle Eastern Lentil Soup

This is my version of a soup I loved to eat when I lived in Cairo. I'd get it at the university cafeteria along with a small bowl of deep-fried croutons.

Ingredients:

2 cups red lentils
2 medium tomatoes
1 small onion
1 large bay leaf
1 teaspoon chili powder
7 cups chicken stock
1 small cinnamon stick
1 tablespoon olive oil
1 tablespoon lemon juice
Plain yogurt, cilantro, for garnish

Tools: Heavy pot, stove

Directions:

1. Finely dice onion. Fry it until golden in the olive oil, in a heavy-bottomed pot big enough to hold ten or eleven cups of soup.
2. Add the chili powder, and cook for about two minutes, until the onion is coated in spice and you can smell the chili powder.
3. Dice the tomatoes. Add them to the onion and chili and turn heat down to low.
4. Rinse the lentils carefully, checking for stones.
5. Add the lentils, bay leaf, cinnamon stick, and chicken stock. Turn heat up to medium-high.
6. Cook until lentils have dissolved and it looks like soup – will take 20-30 minutes, but cook it as long as you want until it’s the right texture.
7. Just after you remove from heat, stir in the lemon juice.
8. Serve with a dollop of yogurt in the center of each bowl, and a spring of cilantro.

Amazing French Toast

This is perfect, amazing French toast. It tastes really, really good, and you can make it the night before and put it in the fridge. Then in the morning you can stick it in the oven, and impress your houseguests an hour later. They will whimper, I promise. This French toast has never failed me.

Ingredients:

1/2 cup butter

1 cup sugar

6 eggs

1 cup milk

1 teaspoon vanilla

1 ¼ teaspoons salt

1 ½ cup of sliced fruit of your choice

6-8 pieces of thick sliced bread

Tools:

Saucepan, casserole dish

Directions:

1. Boil butter, and sugar together for 1 minute. It won’t necessarily turn into a sauce, more like lumpy sugar in a bunch of melted butter.

2. Pour the butter sugar mixture into a 9 x 13 pan. Try to pout it evenly but it doesn’t matter that much.

3. Put a layer of bread slices on top of the butter sugar mixture. Only one layer.

4. Beat eggs, milk, vanilla, and salt together and pour over the bread.

5. Put a layer of fruit on top of the bread.

6. Refrigerate covered if you want to keep it overnight. Otherwise, stick it in the oven.

7. Bake uncovered at 350 degrees for 45 minutes.

Curry

My dad is Pakistani, and Muhajir, which means his family fled India during partition because they were Muslim. My dad was seven when they left. His family left their entire lives in Delhi; they took what they could carry and reestablished their lives in Karachi by selling his mother’s jewelry.

As a result, my dad grew up poor. Not Slumdog Millionaire poor, but poor enough that their concerns around food centered on 1) Is there enough and 2) does it taste good? Freshness, overall quality, authenticity, or healthiness were secondary at best.

Pakistani men do not learn to cook, but my dad did. He was the kind of person who could learn by watching, and he learned a few recipes from his mom. When he went to Canada for his PhD, he depended on those recipes. He made curry and he made muttar keema – hamburger and peas.

The curry was by far the most versatile. In his student apartment in Montreal, he’d buy and curry (cheap) fresh river perch and vegetables. By the time I remember, when my dad was a college professor with a mob of adoring students, he’d make chicken curry for all his students at the end of every semester. He was famous for its delicious taste.

Curry was his go-to dish in the face of weird American food; in fact, in the face of any dinner problem. He could eat – and feed his helpless kids – curry for a week without getting tired of it. A student proudly brought us fresh-killed venison or pheasant? Curry. Buffalo, catfish, ostrich? Curry. Mom was away and no one bought groceries? Curried chickpeas and potatoes. Freezer-burned chicken? Curry. You get my point.

My dad has Alzheimer’s now, and he can’t cook any more. He’s a picky eater, sometimes, and I worry about vegetables and fiber. So every Sunday I make big pot of bean and vegetable curry, and he has it all week for lunch. Every single time we heat up his plate of curry and rice he looks delighted.

Equipment:

Big pot

Ingredients:

Two medium onions

Two medium tomatoes

5 Tsp curry powder (some people mix their own curry powder. Dad did that sometimes. Mostly he just bought one he liked.)

2 cups chopped vegetables (frozen or canned is fine)

1-2 cups protein (cooked meat or poultry, canned beans, or tofu – starting from raw meat is a different recipe)

Directions

Chop the onions and the tomatoes; keep separate.
Sauté the onions in butter or oil of your choice until they start to get translucent.
Add the curry powder, and sauté until the powder has absorbed all the oil and you can smell it strongly.
Add the tomatoes; cook until they fall apart and look like sauce.
Add you veggies and protein; simmer on low heat for 20 minutes.
Enjoy!

Reasonably Healthy Muffins

I made these this morning for a playdate that turned into a brunch. The many, many little boys loved them. This started from an old Betty Crocker muffin recipe, but I tweaked it to add flavor and fiber and make each muffin a little bigger.

Equipment:

Oven

Ingredients:

1 egg

1 cup milk

¼ cup vegetable oil

1 cup grated apple (I leave the skin on when I grate)

2 cups flour

1 cup oatmeal

¼ cup sugar (I might use a little more next time)

2 ½ teaspoons baking powder

1 teaspoon salt

1 teaspoon ginger

1 teaspoon cinnamon

Directions:

1. Preheat oven to 400

2. Beat the egg

3. Stir in milk, oil, and grated apple.

4. Mix dry ingredients in separate bowl.

5. Mix dry ingredients into wet just until it’s all combined – lumps are okay

6. Fill 12 muffin cups 2/3 full

7. Bake 10-15 minutes

Recipe: Cauliflower Soup

I love this soup. It’s light enough for summer, or you can garnish with cheese and make it hearty for winter. It has a surprising amount of flavor for a soup with so few ingredients. I am not a cold soup person at all, but I like this one cool on summer days. This a pretty healthy soup, too – half a cup of cream in six or seven cups of soup isn’t much.

Tools

Immersion blender (also known as a hand blender or a stick blender)

Ingredients

5 cups chicken stock

One smallish head of cauliflower

1 tsp nutmeg

2 large bay leaves

½ cup cream

Instructions

1. Clean the cauliflower and cut it into florets. Size and regularity doesn’t matter, because they will be pureed.

2. Combine the cauliflower and the chicken broth in a pot with a heavy bottom. Add the bay leaves and the nutmeg.

3. Simmer until cauliflower is very soft.

4. Take out the bay leaves. This is important.

5. Turn the heat on the burner down very low.

6. Use the immersion blender to puree the cauliflower in the stock. Keep blending until it’s very smooth.

7. Gently stir in the cream.

8. Taste, and add water, cream, or milk as needed.

Technique: White Rice

This is another one of those tricks I would be embarrassed to post if I hadn’t just had someone ask me how to do this. You can use this technique to cook any kind of white rice – basmati, jasmine, long grain, short grain. It will come out just right every time. I learned it from a Kuwaiti friend of Persian heritage, and I noticed a few years ago that Marc Bittman also recommends it.

Tools:
stove, heavy-bottomed pot

Technique:
First, rinse your rice. I rinse all rice. I don’t know if it’s necessary or not, but I always do. I rinse it in the pot I will cook it in. I put the rice in the pot, fill it with water, and swish it around with my hands. Then I pour the water off the rice. Then I do it again. (you don’t have to use drinkable water for this, but it should be reasonably clean.)

After pouring out the second put of water, I add the cooking water. I fill the pot until the water is about two inches higher than the rice. I don’t know what the volume on that is. Just keep adding water until the water level is two inches above the rice level. Err on the side of too much water.

Bring the water and rice to a boil. Once the water is boiling, move the lid aside to steam can escape, and turn the rice down to a simmer or a slow boil. Taste the rice every couple of minutes. When it is mostly cooked, but still has a tiny raw bit in the middle, drain the rice.

Put a little butter or oil in the bottom of the pot (optional if your pot is really solid, but it adds flavor ether way) and then return the drained rice to the pot. Add a little butter on top if you want. Put the lid on the pot, and set it on a burner on very low heat. The lowest heat your gas stove will allow you to use. On an electric stove, you can return it to the warm turned-off burner it came from.

In about five minutes, your rice will be ready to eat. It can sit as long as you want on the warm burner while you get the rest of the meal ready. It may get a crunchy bit on the bottom, but Iranians do that on purpose. It’s tasty.

Recipe: Tasty No-Fail Chocolate Cake

This is my go-to recipe for cake. It is tender, moist, delicious, and very easy to make. No breaking eggs or sifting anything. I have been making it for seven years; I even used this recipe and made cupcakes for my brother’s wedding. It’s a great choice for uncertain ovens because it has no eggs. If it comes out a little undercooked, no harm done. It’s very sweet – a kid friendly cake. For grown-ups you can reduce the sugar by half a cup.

I had meaning to post this recipe anyway, but I am putting it up in response to Rachel's call for help on How to Cook Like Your Grandmother. I didn't have an icing recipe to offer. If you have one, click over and suggest it.

Tools:
Oven. That's all.

Ingredients:

· 3 cups flour
· 2 cups sugar
· 3/4 cup unsweetened cocoa powder
· 2 teaspoons baking powder
· 1.5 teaspoon salt
· 2 cups very cold decaf coffee (don’t worry, you can’t taste it. It just adds color and a subtle depth of flavor.)
· 1 cup corn or other vegetable oil
· 2 tablespoons vanilla extract

Directions
1. Preheat oven to 350 F.
2. Butter and flour three 9-inch cake pans or butter and line bottoms with parchment paper. This is important – the cake will stick if you don’t prep the pan right.
3. In a medium bowl mix first 5 (dry) ingredients
4. In a large bowl mix the coffee, oil and vanilla, then whisk in dry ingredients until well blended. Do not overmix – it doesn’t have to be perfectly smooth. This is more like a muffin batter; a few lumps are okay.
5. Divide the batter evenly between the pans.
6. Bake cakes about 25-30 minutes or until they test done.
7. Cool completely. And I mean COMPLETELY. If the cake is at all warm, it will break coming out of the pan.

Notes: You can use orange extract instead of vanilla for a chocolate-orange cake.

Technique: French Toast and Apple Topping

My husband made a special breakfast for mother's day. It was so tasty I asked him to write it up for this blog.

Apple Topping
1. Clean and dice one large apple, leave the skin on
2. In a pat of butter, fry apples on medium heat in a medium fry pan with a generous portion of cinnamon and sugar, and a dash of cardamom
3. Add 2-3 splashes of pomegranate juice (or any other non-pulpy juice such as apple or cherry)
4. Continue to cook on medium heat, stirring occassionaly, until juice has cooked down and apples can be smooshed a bit with a fork, should take approximately 5-8 minutes.

French Toast
1. In a large mixing bowl, combine 4 beaten eggs with an approximately equal quantity of milk (any fat level) until mixture has a custard color
2. Add a generous quantity (3 tablespoons?) of sugar (preferably powdered, but any sugar will do)
3. Further add a small splash of vanilla to the mixture
4. Dip slices of bread into the mixture. This will be enough for 12 slices of bread
5. Place the bread on a well greased cookie sheet and bake in an oven pre-heated to 425 (F) for 8-10 minutes or fry slices in a pan with butter.
Serve with syrup and/or whipped cream. Double the apple recipe if you like a lot of apples. Serves 3-4.

Recipe: School Cake

This is not in fact a cake at all. It’s oatmeal bread that I make for my son’s playgroup. It’s as healthy as I can make it, and still produce food that little boys will consistently eat. It’s a very solid bread, good for eating and staying full. It’s sweet, but not overly sweet. It’s a bit like a big muffin.

I make this recipe a couple times a week; I cook it in two metal bowls to make cake-shaped loaves. Each little loaf nicely serves four little kids. It would also fill two mini loaf pans or one standard loaf pan.

One thing to watch out for as you’re making this – you add the sugar to the wet ingredients, not the dry.

Tools:
Oven. That’s it!

Ingredients:

2/3 cup sugar
¾ cup milk (I have sucessfully substituted sour cream, yogurt, and/or kefir for part of the milk)
1/3 cup oil – type doesn’t matter
2 large eggs
1 tablespoon vanilla extract (if you don’t have this, substitute rum, amaretto, or orange juice)
2 cups oatmeal (any kind)
2 teaspoons baking powder (or use baking soda and add 1 teaspoon of vinegar with the wet ingredients)
I teaspoon salt
2 teaspoons cinnamon (optional)
1 teaspoon ginger (optional)
½ teaspoon cardamom
1 and a half cups flour
2 cups diced fruit (Any kind you want. This can include up to a cup of carrots if you like.)

Instructions
1. Preheat oven to 350 degrees. Grease the loaf pan well.
2. Combine sugar, milk, oil, eggs, and vanilla in a bowl.
3. Combine oatmeal, baking powder, salt, spices, and flour in another bowl.
4. Add wet ingredients to dry, stirring well.
5. Stir in chopped fruit.
6. Bake for 50-60 minutes. (It takes a really long time, and will look done before it is done. Test with a knife and don’t take it out of the oven until the knife comes out clean. The top will be cracked.)

Technique: Cheesy Noodles

This is an emergency meal for me, when everyone is hungry, and we’re short on time and groceries. It’s so basic I am almost embarrassed to post it here, but maybe I can help some peace corps volunteer with no cooking background. It’s good food for kids and drunks, too! (Am I allowed to lump kids and drunks in the same category? They both like simple food that cooks fast.)

Ingredients:

Uncooked pasta

Bouillon cubes or broth – I usually use chicken but I bet the flavor doesn’t matter

Chopped or grated cheese

Spreadable cheese like La Vache Qui Rit (Or brie if you’re getting fancy, but why get fancy with a dish based on bouillon cubes?) – optional, but it’s nice

Chopped chives or parsley, dried herbs or spices – optional. I like paprika and chives.

Instructions:

1. Bring water and your bouillon cubes to a boil.

2. Add the pasta.

3. When the pasta is done, use a mug to remove about half a cup of broth from the pot before you drain the noodles. Set aside.

4. Drain the noodles. Put them back in the pot, on low heat. (on an electric stove, you can put them on the hot burner you’ve turned off)

5. Add the reserved broth to the noodles. Stir it in.

6. Add the spread cheese if you’re using it. Stir.

7. Add the grated or chopped cheese. Stir.

8. Add the herbs and spices if you’re using them. Done!

Notes: You can also add butter, which I do if I am feeling decadent or short on cheese. The cheese doesn’t evenly distribute into a sauce, but it does stick to most of the noodles with the occasional appealing clump of cheese. You can also add chopped chicken or ham to this, or diced vegetables like broccoli, cauliflower, or green beans, which makes it seem vaguely like a casserole. It’s a great dish to use up leftovers.

How to Make Your Own Yogurt

Be warned: it really only makes sense to do this if you live somewhere that pasteurized milk is cheap and plain yogurt is expensive. Home-made yogurt is delicious, though, and good for intestinal health.

Equipment required: boiling water, stove with controllable temperature, glass jars with lids, clean water

Time required: 30 minutes prep, 7-24 hours unattended fermentation time

Ingredients:
• 1 - 2 liters milk
• About half a cup of yogurt as a starter – commercial yogurt works well, or homemade yogurt that is less than a week old

Instructions:
1. Sterilize your jars. Set them upright in a baking pan or large pot with the lids upside down next to them, and fill them with enough boiling water to fill them up and run down the sides. Do the same with the lids. Leave them there full of water and go to the next step.

2. Heat your milk. Put it in a pot, and heat in over medium heat. Watch it very, very carefully. You want to heat the milk until tiny bubbles form where the milk touches the edge of the pot. Then remove it from the heat. The amount of time will differ depending on pot size and what kind of medium your heat is, so watch it like a hawk. Time it for the next time you make yogurt.

3. Let the milk cool. You want it to cool to about 110 Fahrenheit. If you don’t have a thermometer (I don’t) that is the temperature of a nice hot bath. You can feel the outside of the pot to test the temperature, or do what I do and test it with a clean finger.

4. Add your starter. Once the milk is the right temperature, add one tablespoon of yogurt for each liter of milk. Stir it thoroughly to distribute the starter through the milk.

5. Pour the water out of your jars. Pour in the milk. Put on the lids.

6. Now you need to let your milk turn into yogurt. You want it to sit at 100 degrees to encourage bacterial production. That’s almost exactly body temperature. A sunny windowsill works, or an oven with the light on. I put mine on the warm spot on top of the fridge, and cover it in a dishtowel to hold in heat.

7. Let it sit undisturbed for at least seven hours. Moving it around is bad for the bacteria. After seven hours, it will be yogurt. A little runny, but recognizably yogurt. The longer you let it sit, the thicker it will be. I leave mine for about twenty hours to get the thick greek-style yogurt. There will be yellowish liquid on top of your new yogurt. That’s whey; just pour it off if you don’t like it. There is not too much of it - you can see they whey in the picture up there; it's that thin line on top.
