a rainy day together.&lt;br /&gt;&lt;br /&gt;At first, she commented that she really wasn't going to like them because they had zucchini in them and she doesn't like zucchini.  When I asked her to trust me, she agreed to try one and she LOVED them!  They really are delish!&lt;br /&gt;&lt;br /&gt;I found the recipe in one of my Martha Stewart Food Magazines...&lt;br /&gt;&lt;br /&gt;&lt;b&gt;&lt;a href="http://www.marthastewart.com/recipe/sweet-zucchini-cupcakes?autonomy_kw=ian%27s%20sweet%20zucchini%20cupckaes&amp;rsc=header_1"&gt;Sweet Zucchini Cupcakes&lt;/a&gt;&lt;/b&gt;&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Ingredients&lt;/b&gt;&lt;br /&gt;1 1/2 cups all-purpose flour&lt;br /&gt;1 cup packed dark-brown sugar&lt;br /&gt;2 teaspoons baking powder&lt;br /&gt;1/2 teaspoon ground cinnamon&lt;br /&gt;1/2 teaspoon salt&lt;br /&gt;1/2 cup coarsely chopped pecans or walnuts (optional--I didn't use them)&lt;br /&gt;1 zucchini, coarsely grated (1 1/2 cups)&lt;br /&gt;1/3 cup vegetable oil&lt;br /&gt;2 large eggs, lightly beaten&lt;br /&gt;1/2 teaspoon pure vanilla extract&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Directions&lt;/b&gt;&lt;br /&gt;Preheat oven to 350 degrees. Line cups of a standard (12-cup) muffin tin with paper or foil liners. Set aside.&lt;br /&gt;In a medium bowl, mix together flour, brown sugar, baking powder, cinnamon, and salt. Mix in nuts (I didn't use nuts).&lt;br /&gt;In another bowl, combine zucchini, oil, eggs, and vanilla; add to flour mixture, and mix just until combined (do not overmix).&lt;br /&gt;Divide batter evenly among cups. Bake until a toothpick inserted in the center of a cupcake comes out clean, 40 to 45 minutes.&lt;br /&gt;Cool in tin on a wire rack for 10 minutes; turn cupcakes out, right side up, and cool completely. &lt;br /&gt;&lt;br /&gt;&lt;b&gt;&lt;a href="http://www.marthastewart.com/recipe/cream-cheese-frosting-zucchini-cupcakes?lnc=5a79cf380e1dd010VgnVCM1000005b09a00aRCRD&amp;rsc=recipecontent_food"&gt;Cream Cheese Frosting&lt;/b&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Ingredients&lt;/b&gt;&lt;br /&gt;&lt;br /&gt;Makes enough for 12 cupcakes&lt;br /&gt;&lt;br /&gt;4 tablespoons room-temperature unsalted butter (I didn't have unsalted, so I used salted and it worked out just fine)&lt;br /&gt;4 ounces room-temperature bar cream cheese&lt;br /&gt;2 cups confectioners' sugar&lt;br /&gt;1/2 teaspoon pure vanilla extract&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Directions&lt;/b&gt;&lt;br /&gt;&lt;br /&gt;   1. In a medium bowl, with an electric mixer, beat butter and cream cheese until smooth. Add confectioners' sugar and vanilla extract; beat until light and fluffy. It is healthier than Chinese Take-Out yet is equivalent in taste, just about! &lt;br /&gt;&lt;br /&gt;&lt;b&gt;Chicken Ingredients&lt;/b&gt;&lt;br /&gt;3-4 boneless, skinless chicken breasts&lt;br /&gt;Salt and pepper, to taste&lt;br /&gt;1 cup cornstarch&lt;br /&gt;2 eggs, beaten&lt;br /&gt;1/4 cup canola oil&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Directions&lt;/b&gt;&lt;br /&gt;Cut boneless chicken breasts into chunks. Season with salt and pepper.&lt;br /&gt;Dip chicken in cornstarch and then in egg. Fry in a little oil until brown but not cooked through. Place in a single layer in a baking dish. Mix sauce ingredients (below) together and pour over chicken.&lt;br /&gt;&lt;br /&gt;Sauce Ingredients&lt;br /&gt;¾ cup sugar&lt;br /&gt;4 tablespoons ketchup&lt;br /&gt;½ cup vinegar&lt;br /&gt;1 tablespoon soy sauce&lt;br /&gt;1 teaspoon garlic salt&lt;br /&gt;&lt;br /&gt;Directions&lt;br /&gt;Bake for one hour at 325 degrees. Turn chicken every 15 minutes. If you like extra sauce, make another batch of sauce and bring it to a boil on the stove top. If I'm nursing and Little Man is asleep, I will watch tv or if he won't settle at night, I will bring him downstairs and hold him in my arms while we watch tv....anyhow, I digress.&lt;br /&gt;&lt;br /&gt;The show that is often on while I am upstairs is &lt;a href="http://www.foodtv.ca/ontv/titledetails.aspx?titleid=82664"&gt;Chef at Home&lt;/a&gt;--my husband and I call him the friendly giant.  He really is such a soft spoken man, but at the same time he is HUGE with a manly demeanor...oh, I can't explain it.&lt;br /&gt;&lt;br /&gt;So, on Thursday night, he made &lt;a href="http://www.foodtv.ca/recipes/recipedetails.aspx?dishid=9522"&gt;Apple Pie Oatmeal with Almond Foam&lt;/a&gt;.  &lt;br /&gt;&lt;br /&gt;The bunny loves oatmeal, so I decided to try it and oh my, it sure is a decadent treat in the morning!&lt;br /&gt;&lt;br /&gt;Here's how I did it:&lt;br /&gt;&lt;br /&gt;1 cup oatmeal (large flake)&lt;br /&gt;a bit more than 2 cups of milk&lt;br /&gt;1 tsp brown sugar&lt;br /&gt;a good shake of cinnamon&lt;br /&gt;1 cubed apple (I will do skin off from now on)&lt;br /&gt;&lt;br /&gt;Combine and bring to a simmer in a pot on the stove (the old fashioned way, unlike the way we usually make it--in the microwave).  Beware, milk burns quite easily and does make a nasty scum on the bottom of your pot!  Some good old baking soda will help you clean up after making this.&lt;br /&gt;&lt;br /&gt;Simmer for a few minutes until nice and thick.  Let stand for a few minutes.&lt;br /&gt;&lt;br /&gt;In the mean time, heat up some milk (I used the microwave for this one) with a splash of vanilla extract.  Use a frother (or if you have a cappuccino machine, froth the milk) and scoop out the frothed milk on top of the oatmeal.  What a treat! Add eggs and vanilla - beat until combined. Add flour, baking powder until smooth. Divide dough in half and wrap in plastic wrap - store in fridge for approximately 20 minutes. Preheat oven to 350. Line baking sheets with parchment paper. Roll out and cut dough on floured surface - Put cookies back into fridge for 10-15 minutes to prevent spreading. Bake cookies for 10 minutes or so (depends on size of cookie).&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Royal Icing&lt;/b&gt;&lt;br /&gt;With electric mixer, beat 4 cups sifted icing sugar and 3 tbsp meringue powder until combined. Add 1/2-3/4 cup warm water and beat on med-high speed until very glossy and stiff peaks form (5-7 min). Add 1/2 tsp vanilla or almond extract if desired.  Add more icing sugar as needed. Proper consistency is when you lift the beater and the ribbon of icing that falls back into the bowl remains on the surface of the icing for a few seconds before disappearing.&lt;br /&gt;&lt;br /&gt;Instead of using food colouring, you could try one of these natural ingredients.  I will say up front that I have never tried them, but I am truly curious.&lt;br /&gt;&lt;br /&gt;Light Purple - Small Quantity of Purple Grape Juice&lt;br /&gt;Violet Blue - Small Quantity of Red Onions Skins (boiled)&lt;br /&gt;Blue - Canned Blueberries, Red Cabbage Leaves (boiled), Purple Grape Juice&lt;br /&gt;Green - Spinach Leaves (boiled)Grass&lt;br /&gt;Yellow - Orange or Lemon Peels (boiled), Carrot Tops (boiled), Ground Cumin (boiled), Ground Turmeric (boiled)&lt;br /&gt;Brown - Strong Coffee Instant Coffee&lt;br /&gt;Orange - Yellow Onion Skins (boiled)&lt;br /&gt;Pink - Beets, Cranberries or Cranberry Juice, Raspberries, Red Grape Juice&lt;br /&gt;Red - Lots of Red Onions Skins (boiled)   &lt;br /&gt;&lt;br /&gt;&lt;center&gt;&lt;img src="http://i181.photobucket.com/albums/x318/multitaskingmommy/Buttons/mtm_divider2.jpg"&gt;&lt;/center&gt;&lt;br /&gt;&lt;br /&gt;MTM's royal icing dilemma:&lt;br /&gt;&lt;br /&gt;I don't like the taste of Royal Icing.  It must be the icing sugar that I don't care for, I'm not sure.  Anyhow, I was bound and determined to make a royal icing with something more than icing sugar and water in order to make it taste more like frosting, but harden like royal icing.&lt;br /&gt;I failed!&lt;br /&gt;The cookies looked good and tasted good, but the watered down frosting was very hard to work with and it never hardened. Best of Bridge p. 182&lt;/b&gt;&lt;br /&gt;&lt;br /&gt;18 oz unsweetened frozen blueberries, thawed&lt;br /&gt;1 pkg. 2 layer lemon cake mix (this part made me feel like I was cheating!)&lt;br /&gt;8 oz lemon or vanilla yogurt&lt;br /&gt;4 eggs&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Glaze&lt;/b&gt;&lt;br /&gt;1 cup icing sugar&lt;br /&gt;4 tsp milk&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Blueberry Sauce&lt;/b&gt;&lt;br /&gt;1 cup sugar&lt;br /&gt;2 Tbsp cornstarch&lt;br /&gt;1 cup water&lt;br /&gt;3 Tbsps lemon juice&lt;br /&gt;whipped cream for topping&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Directions:&lt;/b&gt;&lt;br /&gt;Rinse and drain berries, reserving liquid.   Combine cake mix, eggs and yogurt, beating 2 minutes.  Fold in half of drained berries.  Bake in greased 10" tube or bundt pan at 350 degrees for 45 minutes, or until done.  Do not invert pan or remove until cake is cool.  &lt;br /&gt;Make glaze and drizzle over cake.&lt;br /&gt;In a pan, combine sugar, cornstarch, then the water.  Bring to boil and cook two minutes.  Add blueberries and juice.  Additional cornstarch may be added if a thicker sauce is desired.  &lt;br /&gt;To serve, reheat sauce and pour over cake slices on serving plates, and add a dab of whipped cream to each serving.&lt;br /&gt;&lt;br /&gt;&lt;center&gt;&lt;img src="http://i181.photobucket.com/albums/x318/multitaskingmommy/Buttons/mtm_divider2.jpg"&gt;&lt;/center&gt;&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Super Chocolate Cake from Best of Bridge, p. 206&lt;/b&gt;&lt;br /&gt;&lt;br /&gt;1 cup white sugar&lt;br /&gt;3 Tbsp butter&lt;br /&gt;1 egg&lt;br /&gt;1/2 cup cocoa--fill with boiling water to make one cup of liquid&lt;br /&gt;1 cup flour&lt;br /&gt;1 tsp baking powder&lt;br /&gt;1/2 tsp baking soda&lt;br /&gt;1/2 cup boiling water&lt;br /&gt;&lt;br /&gt;Cream sugar and butter; add beaten egg and cocoa liquid.  Mix soda and boiling water.  Add this and remaining ingredients, mix well, and pour into greased 9X9 pan (or cupcakes).  Bake for 30 minutes at 350 degrees--baking less time for cupcakes.&lt;br /&gt;&lt;br /&gt;&lt;center&gt;&lt;img src="http://i181.photobucket.com/albums/x318/multitaskingmommy/Buttons/mtm_divider2.jpg"&gt;&lt;/center&gt;&lt;br /&gt;&lt;br /&gt;&lt;a href="http://justjennrecipes.com/mini-vegan-brownie-cupcakes/2009/03/04/"&gt;Mini Brownie Cupcakes&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;These are amazing little vegan brownies.  They are like two-bite brownies.&lt;br /&gt;I added some mint icing on top, these are sinful!&lt;br /&gt;&lt;br /&gt;&lt;center&gt;&lt;img src="http://i181.photobucket.com/albums/x318/multitaskingmommy/Buttons/mtm_divider2.jpg"&gt;&lt;/center&gt;&lt;br /&gt;&lt;br /&gt;&lt;b&gt;&lt;a href="http://www.wilton.com/recipe/Buttercream-Icing&lt;br /&gt;"&gt;Buttercream Icing&lt;/a&gt;&lt;/b&gt;  &lt;br /&gt;&lt;br /&gt;&lt;i&gt;Ingredients:&lt;/i&gt;&lt;br /&gt;1/2 cup solid vegetable shortening &lt;br /&gt;1/2 cup butter or margarine softened &lt;br /&gt;1 teaspoon clear vanilla extract &lt;br /&gt;4 cups confectioner's sugar (approximately 1 lb.) sifted &lt;br /&gt;2 Tablespoons milk &lt;br /&gt;Makes: Icing makes about 3 cups. &lt;br /&gt;&lt;br /&gt;&lt;i&gt;Instructions:&lt;/i&gt;  (Medium Consistency)&lt;br /&gt;In large bowl, cream shortening and butter with electric mixer.&lt;br /&gt;Add vanilla. &lt;br /&gt;Gradually add sugar, one cup at a time, beating well on medium speed. &lt;br /&gt;Scrape sides and bottom of bowl often. &lt;br /&gt;When all sugar has been mixed in, icing will appear dry. &lt;br /&gt;Add milk and beat at medium speed until light and fluffy. &lt;br /&gt;Keep bowl covered with a damp cloth until ready to use. &lt;br /&gt;&lt;br /&gt;For best results, keep icing bowl in refrigerator when not in use.&lt;br /&gt;&lt;br /&gt;Refrigerated in an airtight container, this icing can be stored 2 weeks. &lt;br /&gt;&lt;br /&gt;Rewhip before using.&lt;br /&gt;&lt;br /&gt;For thin (spreading) consistency icing, add 2 tablespoons light corn syrup, water or milk.&lt;br /&gt;&lt;br /&gt;For Pure White Icing (stiff consistency), omit butter; substitute an additional 1/2 cup shortening for butter and 1/2 teaspoon No-Color Butter Flavor. Can you believe it?!  Four.Years.Old.&lt;br /&gt;&lt;br /&gt;Four years fly by way too fast for my liking, let me tell you.&lt;br /&gt;&lt;br /&gt;This year, we are playing it "low key" as far as birthday celebrations go.&lt;br /&gt;&lt;br /&gt;But, the baking will never be low key for me.&lt;br /&gt;&lt;br /&gt;I am baking a birthday cake that is the bunny's request:  white cake with blueberries and strawberries, mini brownies (for my Dad who shares the bunny's birthday and loves chocolate) and chocolate cupcakes for a birthday lunch that we are hosting for a good friend of ours who has her birthday in March as well and for the bunny's first friend sleepover (she's having one friend sleep over on Saturday night). Keep track of my recipes to try on my blog so that I can share them with you.&lt;br /&gt;&lt;br /&gt;I have already been compiling a file on my computer under the folder "Recipes to Try" with sub folders for food categories, so I'll slowly be adding them here for you.&lt;br /&gt;&lt;br /&gt;&lt;b&gt;BREAKFAST&lt;/b&gt;&lt;br /&gt;&lt;a href="http://www.hillbillyhousewife.com/oatmealpancakes.htm"&gt;Oatmeal Pancakes&lt;/a&gt; from &lt;a href="http://clearblogs.com/hillbillyhousewife/"&gt;Maggie's Musings&lt;/a&gt;&lt;br /&gt;&lt;a href="http://mercyeverymorning.blogspot.com/2009/03/breakfast-is-in-freezer.html"&gt;Sausage and Egg Muffins&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Apple Cinnamon Whole Wheat Pancakes&lt;/b&gt; &lt;br /&gt;From my friend, S.&lt;br /&gt;&lt;br /&gt;½ cup all-purpose flour&lt;br /&gt;½ cup whole wheat flour&lt;br /&gt;1 tbsp granulated sugar&lt;br /&gt;11/2 tsp baking powder&lt;br /&gt;1 tsp cinnamon&lt;br /&gt;¼ tsp baking soda&lt;br /&gt;1 egg, lightly beaten&lt;br /&gt;1 cup milk&lt;br /&gt;½ cup grated peeled apple&lt;br /&gt;1tbsp vegetable oil&lt;br /&gt;½ tsp soft margarine or butter&lt;br /&gt;&lt;br /&gt;1.  In bowl, combine all purpose and whole wheat flours, sugar, baking powder, cinnamon and baking soda.&lt;br /&gt;2.  Combine egg, milk, apple and oil; pour into flour mixture, stirring just until combined.&lt;br /&gt;3.  Heat nonstick skillet over medium heat until hot; add margarine to lightly grease.  Pour in batter, ¼ cup for each pancake; cook until bubbles form on surface and underside is golden brown.  Turn and cook just until bottom is lightly browned.&lt;br /&gt;&lt;br /&gt;Makes 3 servings of 3 pancakes each.&lt;br /&gt;&lt;br /&gt;&lt;b&gt;&lt;a href="http://allrecipes.com/Recipe/Cinnamon-Pancakes-in-a-Jar/Detail.aspx"&gt;Cinnamon Pancakes in a Jar&lt;/a&gt;&lt;/b&gt;&lt;br /&gt;This is from my friend, S. as well.  You know me and my obsession with pancakes for dinner...I'm always on the look out for a new recipe to try.&lt;br /&gt;&lt;br /&gt;3 cups all-purpose flour&lt;br /&gt;5 tsp ground cinnamon&lt;br /&gt;2 ¼ tablespoons white sugar&lt;br /&gt;2 tablespoons baking powder&lt;br /&gt;1 ¼ teaspoons salt&lt;br /&gt;&lt;br /&gt;To Make Batter combine 1 ¼ cups Dry Mix with the following:&lt;br /&gt;1 cup Milk&lt;br /&gt;1 egg&lt;br /&gt;2 tablespoons vegetable oil&lt;br /&gt;&lt;br /&gt;Combine all dry ingredients and place in a jar.  Store in a cool place for up to 6 months.&lt;br /&gt;To make batter:  combine milk, egg and vegetable oil.  Whisk in 1 ¼ cups prepared dry mix until moistened but still lumpy.&lt;br /&gt;Heat lightly oiled griddle over medium high heat.  Pour approximately ¼ cup for each pancake. It is a classic set that has some wonderful recipes, some very simple, some more extravagant.&lt;br /&gt;&lt;br /&gt;One of my favourite, simple (because simple is key for me these days) lunch/easy dinner recipe is for The Utmost Grilled Cheese.&lt;br /&gt;&lt;br /&gt;&lt;b&gt;The Utmost Grilled Cheese&lt;/b&gt; from Grand Slam:  More Recipes from The Best of Bridge p. 16&lt;br /&gt;&lt;br /&gt;1 loaf french bread&lt;br /&gt;2 Tbsp mustard&lt;br /&gt;1 cup cheddar cheese, grated&lt;br /&gt;1 cup jack cheese, grated&lt;br /&gt;1/4 cup butter or margarine softened&lt;br /&gt;1/2 tsp Worcestershire sauce&lt;br /&gt;1 egg&lt;br /&gt;6 slices bacon, cooked crisp and crumbled (you could use ham for a healthier option or a good way to use ham leftovers)&lt;br /&gt;2 green onions, chopped&lt;br /&gt;&lt;br /&gt;Half loaf lengthwise and spread cut sides with mustard.  Mix cheese, butter, Worcestershire, egg, bacon and onions in a bowl, until well combined.  Spread mixture on bread.  Place on a baking sheet and broil until lightly browned and puffed (approx 5 minutes).  Cut into strips and serve immediately. my sister's &lt;a href="http://multi-taskingmommy.blogspot.com/2007/09/amazing-banana-muffins.html"&gt;Amazing Banana Muffins&lt;/a&gt; yesterday morning and Saltine Delight yesterday afternoon.&lt;br /&gt;&lt;br /&gt;I have never posted Saltine Delight, so I will.  It is stinkin' easy and it doesn't sound too impressive, but &lt;a href="http://talesfromthedadside.blogspot.com"&gt;SciFi Dad&lt;/a&gt; calls it heroin.  &lt;br /&gt;&lt;br /&gt;&lt;b&gt;Saltine Delight&lt;/b&gt;&lt;br /&gt;&lt;br /&gt;Directions:&lt;br /&gt;Melt 1 cup of butter and 1 cup of brown sugar in a pot and boil on low for 3 minutes.&lt;br /&gt;Meanwhile, line a cookie sheet with saltine crackers.  When sugar mixture has boiled, pour over top of saltines and bake for 5 minutes at 375 degrees.  Pull out of oven and spread a package of chocolate chips over top. These biscuits only have 2 Tbsp of oil in them and they took my preschooler and I 10 minutes to make them.&lt;br /&gt;&lt;br /&gt;&lt;b&gt;&lt;a href="http://www.cooks.com/rec/view/0,194,145180-240206,00.html &lt;br /&gt;"&gt;CORNMEAL DROP BISCUITS&lt;/a&gt;&lt;/b&gt;&lt;br /&gt;&lt;br /&gt;1 1/3 cups all-purpose flour&lt;br /&gt;1/3 cup yellow cornmeal&lt;br /&gt;1 Tbsp sugar&lt;br /&gt;1 1/2 tsp baking powder&lt;br /&gt;1/4 tsp salt&lt;br /&gt;1/2 cup plus 2 Tbsp milk&lt;br /&gt;2 Tbsp vegetable oil&lt;br /&gt;1 egg, beaten&lt;br /&gt;Vegetable cooking spray&lt;br /&gt;&lt;br /&gt;Combine first 5 ingredients in a large bowl. Combine milk, oil and egg. Add to dry ingredients, stirring just until dry ingredients are moistened. Drop batter by heaping tablespoons onto a baking sheet coated with cooking spray (or I use parchment paper instead). Bake at 400 degrees for 12 minutes or until lightly browned. Cool on a wire rack. My friends will often remind me of that fact by teasing me about some of things that I do, say or have around my house.&lt;br /&gt;&lt;br /&gt;One of the things that I love to do is make books for my kids.&lt;br /&gt;&lt;br /&gt;I've made simple picture books, I've made ABC books, a Father's Day book, repetition books, a baby book (for the bunny before Little Man was born) and I've made memory books.&lt;br /&gt;&lt;br /&gt;Here is how I made an ABC book:&lt;br /&gt;&lt;br /&gt;For my daughter's 2nd birthday, I made her an ABC book especially personalized with items that are important to her.  She had the book memorized after the second time reading through it because the items were so familiar.  This book continues to be in her top book picks on a regular basis.&lt;br /&gt;&lt;br /&gt;Here's how I did it (there are many different variations--the sky is the limit):&lt;br /&gt;&lt;li&gt;I bought a 4x6 photo album from the good old dollar store.&lt;/li&gt;&lt;br /&gt;&lt;li&gt;I glanced through our digital photos and picked out photos that I knew would be appropriate for each letter. cookbook series, she got my Mom hooked on them and now I own all of them as well.&lt;br /&gt;&lt;br /&gt;One of my favourite desserts to make are the Scotch Squares.  They are super easy to make and taste yummy for a nice treat.&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Scotch Squares&lt;/b&gt;&lt;br /&gt;1 cup margarine or butter, melted (I use a bit less than this)&lt;br /&gt;1 cup brown sugar&lt;br /&gt;1 tsp vanilla&lt;br /&gt;1 cup flour&lt;br /&gt;2 cups oatmeal&lt;br /&gt;1 1/2 tsp baking soda&lt;br /&gt;1 cup chopped walnuts (I omit these as I'm not a huge fan of nuts in baking)&lt;br /&gt;1 cup chocolate chips or smarties--optional)&lt;br /&gt;&lt;br /&gt;Mix butter, brown sugar and vanilla then add to dry ingredients.  Mix well and spread in a 15x10 (I use a 10x13) greased pan (I don't grease mine).  Bake at 350 for 25 minutes (this is what the recipe calls for, but I cook for 15 minutes at 340). (1/2 of 8-oz. pkg.) Cream Cheese, cubed&lt;br /&gt;1/3 cup fat-free reduced-sodium chicken broth&lt;br /&gt;1/4 cup  Balsamic Vinaigrette Dressing&lt;br /&gt;1/4 cup Parmesan Cheese&lt;br /&gt;1 Tbsp.  lemon juice&lt;br /&gt;4 cups hot cooked egg noodles&lt;br /&gt;1 cup  cooked peas&lt;br /&gt;2 Tbsp. fresh basil, chopped&lt;br /&gt;&lt;br /&gt;SPRAY large nonstick skillet with cooking spray. Heat on medium-high heat. Add meat; cook 2 min. on each side or until lightly browned on both sides.&lt;br /&gt;&lt;br /&gt;ADD cream cheese, broth, dressing, Parmesan cheese and juice; stir until cream cheese is melted and mixture is well blended. I love it as I am definitely a sweet tooth and this recipe turns out very yummy and moist!&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Glazed Pork Chops&lt;/b&gt;&lt;br /&gt;&lt;br /&gt;4 pork chops&lt;br /&gt;1 large onion, chopped&lt;br /&gt;2 Tbsp brown sugar&lt;br /&gt;1 tsp salt&lt;br /&gt;1 tsp cinnamon&lt;br /&gt;2 Tbsp flour&lt;br /&gt;1 beef oxo (or 1/2 Knorr)&lt;br /&gt;1 cup water&lt;br /&gt;2 Tbsp ketchup&lt;br /&gt;&lt;br /&gt;Brown chops.  Place in baking dish.&lt;br /&gt;Fry onion in same pan.  Blend in flour, brown sugar, salt and cinnamon.&lt;br /&gt;Add remaining ingredients.&lt;br /&gt;Cook and stir until bubbling.&lt;br /&gt;Pour over chops.&lt;br /&gt;Bake at 400 degrees 40 minutes to an hour.  &lt;br /&gt;Spoon sauce over half way through.&lt;br /&gt;&lt;br /&gt;I made this tonight in a fry pan in sliced pork tenderloin.
