What You Need:

5-6 Potatoes
1/4 cup finely chopped red onion
1 tablespoon olive oil
1 tablespoon red wine vinegar
2 tablespoons mayo
1 teaspoon Rosemary
1 teaspoon dried thyme
salt, to taste
pepper, to taste

Directions

1. Rinse and cut potatoes into chunks. I like potatoes with the skin on. But, if you don’t, you’re more than welcome to peel them first.

2. Boil potatoes until tender (for me, it took about 10 minutes)

3. While your potatoes are boiling, chop the red onion into fine pieces.

4. Combine onion with olive oil, vinegar, mayo, and spices.

5. By this time, your potatoes might be done. If so, drain and rinse them.

6. Gently toss or mix potatoes with mayo mixture.

7. Enjoy…either warm, or cold!

Yes, tomorrow is July 4th…the USA will be celebrating with good food, family, friends, and of course…fireworks! What a way to celebrate our independence from (what was known as) the Kingdom of Great Britain – two hundred thirty three years ago! Wouldn’t it be great to go back in time and actually BE there? To be part of such an important independence that would change so many lives?! Wow…

You know what…you can – well, you can’t go back in time…

BUT – You can change the entire future…

You can grant independence…

Independence…for someone living in poverty.

Before I made the trip to Florida in early June, I had much to do – especially since my three daughters were accompanying me. But the biggest thing on my mind was swimwear. C’mon, Florida = for sure I’d be in the water. I wanted to wear something cute, but covered those places that my husband only gets to see

But where to look? I used to shop at Victoria’s Secret, but after flipping through their on-line swim catalog (hoping to find something modest), I soon found out that Victoria doesn’t really keep her secrets. Instead, I decided to Google “Modest Swim” and after searching for at least an hour, I came to Lainie’s page. This was EXACTLY what I was looking for!

I ended up purchasing a couple tops & a pair of shorts from Girls4Sport and could not ask for better service. Even though there was a glich in the beginning – the site said they had my preferred size and style, and after I had paid for the items, I was notified a few hours later that they were out. However, they (Kim) kindly gave me a couple of choices: I could wait for the backorder which would take a couple weeks, or I could choose another style. Seeing that I needed these in three days, I decided to choose another style. Not only did I receive my items on time, but they waived the upgraded shipping charges due to their site’s incorrect information. Professionalism, customer service, communication…all A+++!

I was so excited to swim on my trip. Not only did I have a cute suit, but I didn’t have to worry about one of my girls pulling something off, down, or out (eek!) while we played in the water.

(Pardon my living out of a suitcase in the hotel…. )

*** A BIG thanks goes to Lainie, Kim, & Girls4Sport!! ***

Let me say straight off that I messed these up. I think it was my muffin pan, really. They fell apart as I took them out of the tin…and I even greased it! Next time I’m going to either get a new muffin pan, or muffin liners. However, even though over 80% of the muffins were not intact, they were still yummy I had a feeling they would be – my hubby pulled this from AllRecipes (it had 4 1/2 stars and nearly 3,000 ratings!)

Oh- and I apologize for the quality of the photos. I’ve found it easier to use my the camera in my phone, but obviously the quality is lacking. I suppose I’ll have to bust out the Nikon next time…
