			<content:encoded><![CDATA[<p>Today I would like to discuss a little about Diabetes.</p>
<p>My husband was diagnosed with diabetes some time ago and felt that he was hit from above with a ton of bricks.  His diabetes is controlled through diet and exercise, so he is very lucky.</p>
<p>When we went back into his family history, we found that diabetes was on his families side plus I knew it was already on my families side, so we made sure our grown up children were very aware of what is was and to have their blood sugar levels checked by the Doctors on a regular basis, plus also to stick to a very healthy diet and exercise regime which interesting enough our family has always done.<br />

<p>We have always shied away from Fast Food, junk food, food that is processed and are all “Home Cooked” junkies – so it is interesting that my husband developed this.  The only thing that I can think of is that he had a huge tree branch fall on his foot and it was a big mangled mess. They operated to mend broken bones and stitch torn flesh, and for 5 days he was on very strong and huge amounts of intravenous antibiotics. Then some weeks later when they tested his blood his sugars were very elevated and he had to undergo further tests, which showed type 2 Diabetes.  So… … who knows! However, I digress – what I do know is this - </p>
<p>Diabetes is one of the most common silent killer diseases affecting a vast majority of the urban population. What’s more concerning is that more and more kids are now diagnosed with diabetes, which undoubtedly puts more pressure on the family and main person cooking the meals in the family.</p>
<p>Finding the right diabetes recipes to feed the diabetic member of the family is paramount, but also, recipes that the whole family can eat as well.</p>
<p>However, there is nothing to fret and fume about as there are plenty of scrumptious diabetes recipes, including desserts and main meals, which are bound to bring delight and cheer to everyone!</p>
<p>I have put together a couple of recipes you can cook on the Barb-B-Q  or in the kitchen followed by a delicious dessert cake - With these diabetes recipes up your sleeve, there is never a dull moment at the dining table! (These are great for the week-ends when everyone is hungry!)<br />
Recipe #1:  Spicy Pork Patties – this simple one is a family favorite.<br />

The ingredients needed are:</p>
<p>2 lb. extra lean ground pork,<br />
1 can organic chick peas <br />
2 tsp. crushed dried sage,<br />
1 tsp. freshly ground black pepper,<br />
1 tsp. garlic powder,<br />
1/2 tsp. onion powder, (Or ½ FINELY diced onion)<br />
1/2 tsp. ground mace,<br />
1/4 tsp. ground allspice,<br />
1/4 tsp. Salt<br />
1/8 tsp. Ground cloves.</p>
<p>All you need to do is drain and mash the chick peas, add the rest of the ingredients to the chick pea mash - mix all the ingredients thoroughly and then make into patties and brown until done.</p>
<p>Serve with freshly steamed veggies or a huge salad.</p>
<p>Recipe #2: BAR-B-Q MEATBALLS.</p>
<p>Again, one of the simplest of all diabetic recipes, this one is not only easy to make but you get quick results too. the ingredients needed include:</p>
<p>1 lb. ground chuck steak<br />
1/2 cup liquid skimmed milk,<br />
1 med. onion, chopped finely,<br />
Salt &amp; pepper to taste,<br />
1/2 cup diet tomato sauce,<br />
1 tbsp. minced green peppers,<br />
1 tsp. prepared mustard,<br />
1 tbsp. vinegar,<br />
1 tbsp. minced onion,<br />
1 1/2 tbsp. Worcestershire sauce<br />
2 packs Sweet &amp; Low or other diabetic sweetener</p>
<p>To make the BBQ Meat balls, first mix chuck, milk, onion, salt, and pepper. Then prepare them into balls. Broil for about 15minutes till they turn brown. To prepare the sauce, mix tomato sauce, green pepper, mustard, and vinegar. Then add the minced onion, Worcestershire sauce, and Sweet &#8216;N Low. Pour over meat balls. Cook the meat balls covered for 15 minutes at 400 degrees F.</p>
<p>Serve with favorite veggies and a huge salad.<br />
Recipe #3: Banana Bread – Whoever has told you that bananas are not part of diabetes recipes, show this recipe to him or her. This is really incredible.</p>
<p>The ingredients needed:</p>
<p>2 cup all purpose flour,<br />
1 tsp. baking soda,<br />
1 tsp. baking powder,<br />
1 1/2 tsp. pumpkin pie spice,<br />
2 ripe bananas (mashed)<br />
6 oz. can frozen or fresh diabetic orange juice,<br />
2 eggs,<br />
1 cup raisins<br />
Nuts (which are optional)</p>
<p>Take all the ingredients that are dry and sift 3 times and put it aside. Then in a bowl take all the wet ingredients and mix them well with the mashed bananas. Add the nuts and raisins and dry ingredients.</p>
<p>Pour in the mixture pre-greased and floured loaf pan or a non-stick pan.</p>
<p>Bake the banana bread at 350 - 375 degrees F for 30 - 45 minutes or till toothpick comes out clean.</p>
<p>Cool cake or serve hot with Diabetic Ice Cream – (remembering portion control)</p>

<p>I have had so many discussions with people on this issue, some say, well, it depends on who’s cooking and others say “Home Cooked – I haven’t the time”.</p>
<p>I believe that home cooked, home baked meals, cakes, breads, pastries and cookies are the very best.</p>
<p>You control what goes into what you cook and bake and it is done without all the preservatives, chemical flavours and additives and much less sugar and salt.</p>
<p>My Dad who is 87 years of age makes a joke saying, with all the preservatives and junk that goes into store bought junk foods when everyone dies they will be dug up in times yet to come fully preserved!  Well I wouldn’t go that far, however, it does make you stop and think.<br />

When I was a child, my grandparents Minnie and Ted Bishop who lived in a place in England called Hollywater, Hampshire had a lovely garden where they grew everything they ate, grew there own meat and taught me how to cook.  </p>
<p>Grandad was a master baker and taught me how to bake breads, buns etc, and Gran well she was a mother of 11 children and grandmother to a whole tribe of grandkids and she knew how to make pickles, chutneys, jams, pies, pastries, wines to name a few.  All this knowledge was passed onto me as I used to go and help her- days on end spent with Gran was great!</p>
<p>Both my grandparents taught me that food should be appreciated and that growing your own in fertile soils was best plus the fact that you should honour the source of your meat, poultry and fish supply by using every bit of the carcass, hence I learnt how to make soups and stocks out of bones.  Slow cooks and roasts were an everyday occurrence as this was the way to cook – there were no burger or chicken joints to buy “Take Away”.</p>
<p>When a baby was at an age to start solids baby food was made you didn’t go and buy it off the supermarket shelf, baby ate fresh cooked veggies, mashed.  How simple is that?  How much better for the child is that?  Why pray tell do you need to go to extra expense and get tinned baby food, that is not even as nourishing as cooking up a whole batch of fresh veggies, making them into a puree, freezing in little containers meals for baby so you have meals on hand.  How long does it take – not long at all!</p>
<p>Now I am hearing a few screams out there and cries of, but we both work full time, how on earth can we find the time to cook and bake.  I know I have been there, honestly I have – let me make a suggestion…</p>
<p>Sit down together and make a menu for the week and in that include breakfast, lunch and dinner and snacks.  No I am not expecting you to cook and bake for each meal time, but if you’re both working, having a menu will save you time and money as you already know what you’re going to eat on a particular day and what you need to have on hand (never buy what you don’t need) Look at that menu, and see what you can pre-cook or prepare ahead of time for the week.  Are there any slow cooks on the menu, or Italian dishes, like pasta and sauce, lasagne, etc.  If so you can make the sauce, lasagne and slow cook ahead of time.  They do keep if correctly sealed in the fridge for a few days. </p>
<p>Muffins can be made for snacks and individually frozen.  Make the muffins nutritious by making Blueberry muffins (use frozen blueberries) these are high in anti-oxidants, banana muffins, carrot muffins, see where I am going here? </p>
<p>Hey you could have a family baking day once per month or once per fortnight – a great getting to know you “Fun” time with your kids.<br />
I feel there is much one can do, to incorporate more “Home Cooked” food into ones week which in turn will make every family more healthy and energetic.</p>

<p>P.S.  Yes I do make all cakes, breads and meals.  My children when they come to visit, pre-order muffins, and breads to take home – Now I look after my Grandson Brock a couple of times per week (he is 6 months old) and just started solids, so I make all his baby food.  </p>

<p>P.P.P.S.  I have selected some great SLOW COOK AND ONE POT Recipe books to give you great ideas.  Between my girlfriends and I we have all of these on our cooking book shelves, so I know they are good!</p>

<p>However there is a fine difference between French frosting butter cream and its Swiss and Italian counterparts. The richest variety is the French frosting butter cream and this is primarily due to the use of egg yolks. However the Swish and Italian variety use meringue and this makes it lighter and also sweeter.</p>
<p>Making the classic French frosting butter cream is actually very simple: you need the following ingredients –</p>
<p>1-cup sugar,<br />
3 Tablespoons water,<br />
3 oz egg yolks,<br />
11/4 sticks of unsalted butter,<br />
Softened 1/2 cup shortening<br />
1-teaspoon vanilla extract.</p>
<p>Take a saucepan in which some sugar syrup should be made by mixing water and sugar. Boil the mixture till it reaches 240F.</p>
<p>As the syrup is boiling take the egg yolks and beat them up in a large bowl, till the texture is light and foamy. When the mixture has reached the boiling point, take it out and pour over the egg yolk mixture, gradually. While you are doing this beat the mixture constantly till the mixture is cooled and light. Pick up a hand mixer and slowly go on adding butter as quickly as it can be absorbed by the mixture. Then the vanilla can be added.</p>
<p>In case you find the frosting butter cream is a bit too soft, cover it and put it in the refrigerator.</p>
<p>Any <a href="http://www.frostingandicingrecipes.com">Frosting Butter Cream </a>recipe may be flavored with other ingredients to change the color/texture/flavor to suit your changing needs.</p>

		<description><![CDATA[Hey everyone, I know it has been a couple of weeks since my last post.

Sorry for the delay only I have been away on Holidays.  Went to Western Australia
And had an absolute ball!

I was great for my husband to take time for us – you know what they say,
Unless you give to yourself you cannot give to anyone else.

We spent 6 nights in Perth City itself, and went out for day trips from their seeing a little bit north and east.  Had a couple of very romantic dinners by the Swan River in Perth, made up a great picnic hamper on those nights, with Crusty Bread, Cheese, Prawns (shrimp), Fruit, Chocolate plus a couple bottles of some fabulous white wine and sat by the river on a large blanket, relaxed, ate, drank and watched the sun go down.  AHHHH – so relaxing!  The great thing was, that the river was only a short walk from our Hotel.

<p class="MsoNormal"><span>Sorry for the delay only I have been away on Holidays.<span> </span>Went to Western Australia</span></p>

<p class="MsoNormal"><span>We went spent some time down south in Albany, spent 4 nights in this area, saw many things plus went on the tree tops walk which was a fantastic experience, walking 40 meters up in the Tingle Trees and Karri Pines.<span> </span>After this we went to Margaret River – a huge winery area for a further 5 nights AWESOME!</span></p>
<p class="MsoNormal"><span>The place we stayed in Margaret River was an old Abbey (Nuns used to live there) converted into a Bed and Breakfast. So our room had Gothic Windows, as did many other places in the establishment.<span> </span>We were made to feel very welcome, and met some lovely people also staying.<span> </span>The energies of the place were great.<span> </span></span></p>
<p class="MsoNormal"><span>Now, we are back and I am back into the Groove and committed to bringing you the best!</span></p>
