Quando achar que está louro o suficiente junte o tomate desfeito misturado com a pasta de tomate (na liquidificadora ou com a varinha mágica) e o cardamomo rachado.&lt;br /&gt;
Deixe cozinhar o tomate muito lentamente tendo sempre o cuidado de ir mexendo e de adicionar água aos poucos de forma a não queimar (mas tomando atenção para não ficar muito líquido).&lt;br /&gt;
Tempere e está pronto!&lt;br /&gt;

Quando a cenoura estiver mole mistura-se o resto dos ingredientes sólidos e deixa-se refogar mais um pouco, cerca de 2 minutos e adiciona-se a água de forma a cobrir o preparado e deixa-se cozer. Quando estiver pronto passa-se a sopa até ficar num creme, Normalmente é preciso adicionar mais água (Eu costumo adicionar um pouco de água e de leite pois dá-me a sensação de ficar com um sabor mais aveludado e uma cor mais atraente. Mas isso fica ao critério e ao gosto de cada pessoa!). Tempera-se com sal e está pronto a servir!&lt;br /&gt;

Coze-se o bacalhau se estiver em postas e depois retira-se as espinhas e a pele e desfaz-se em lascas finas. Faz-se um refogado num tacho grande com o azeite, a cebola e o alho até ficarem louros e junta-se o bacalhau a esse refogado mexe-se bem para ficar a cebola bem misturada com o bacalhau e deixa-se refogar uns minutos.&lt;br /&gt;

Escorra os pêssegos e coloque-os no fundo de uma forma de chaminé com 27 cm de diâmetro e verta a gelatina por cima. Leve ao frio até solidificar.&lt;br /&gt;&lt;br /&gt;Mousse&lt;br /&gt;Dissolva a gelatina na água quente mexendo sempre com a vara de arames e envolva bem o leite condensado. Por fim, adicione as natas firmemente batidas e verta o preparado para a forma com a gelatina solidificada. Leve novamente ao frio até ficar bem firme.&lt;br /&gt;Desenformar e servir&lt;br /&gt;&lt;br /&gt;Nota:&lt;br /&gt;Para desenformar mergulhe a forma em água quente até 2/3 da altura e, com os dedos, descole a mousse da extremidade. Desenforme e decore com rosetas de chantili e amoras.
