• 2 cups shredded cooked chicken
• 2 cups shredded Mexican cheese blend (divided)
• 1 (10 ounce) can cream of chicken soup
• ½ cup milk

• 1 can Ro-tel tomatoes (drained) Mild or Hot depending on your taste.
• ½ packet taco seasoning
• 1 large bag Doritos
• Shredded lettuce (optional)
• Fresh diced tomato (optional)

Instructions

1. Cook chicken and set aside. (Chicken can be cooked ahead of time)
2. Preheat oven to 350F.
3. In a large bowl mix together shredded chicken, 1 cup of cheese, cream of chicken soup, milk, sour cream, Ro-tel tomatoes, and taco seasoning.

5. Spray a 2 quart casserole dish with cooking spray and layer the ingredients starting with crushed Doritos, and then the meat mixture. Repeat the process.

7. Top the casserole with crushed Doritos and the remainder of the cheese. Bake for 30-35 minutes until hot and bubbly.
8. Serve hot topped with chopped fresh tomatoes and lettuce.

Ingredients

• 4 boneless skinless chicken breasts (5-6 ounces each)
• ¼ cup finely chopped onion
• 2 cloves of garlic (minced)
• 1 tablespoon butter
• 1 can crushed tomatoes (14.5 ounces)
• ¼ cup white wine (I used our homemade wild cherry)
• 1 tablespoon dried basil
• 1 teaspoon Oregano
• 1 tablespoon olive oil
• ½ cup Parmesan cheese
• 1 cup shredded mozzarella cheese
• Salt and pepper to taste

Instructions

1. In a large skillet over medium heat, melt the butter, and cook the onions until slightly browned. Add the garlic and cook until fragrant. (Should take a minute or 2)
2. 
3. Stir in the crushed tomatoes, wine, basil, and oregano. Bring the mixture to a boil, reduce the heat to simmer, and cook until the sauce thickens. (About 15 minutes.) Mix in the olive oil and Parmesan cheese; salt and pepper to taste. Set aside.

5. Lightly spray or oil grates and preheat the grill to medium high heat.
6. Pound the chicken breasts down evenly to about ½ inch thick. Salt and pepper them to taste on both sides. Place the chicken on the grill and cook until browned on one side. Flip the chicken and top with 2-3 tablespoons of the Parmesan tomato sauce and shredded mozzarella cheese. Close the lid and grill until cheese is melted and chicken is done. (160F.)
7. Serve the extra sauce with spaghetti, or a side dish of your choice.

 I had a busy day coming up so a needed a, set it and forget it type of recipe, so I decided on this Slow Cooker Round Steak Recipe. This recipe is very simple to put together and outside of having to cook the noodles to finish it off, it is pretty much carefree. This recipe caught my attention because of the use of the molasses which I don’t usually see as one of the ingredients in this type of recipe. The molasses did seem to blend really well with the rest of the ingredients. This recipe is mildly season leaving plenty of room to add some additional herbs and spices if you wish to do so. I prepared the recipe as written and we thought it was very good the way it is.

1. Prepare the onion and green pepper, and cut the steak into pieces.
2. In a large food grade plastic bag combine the salt, pepper and garlic powder. Shake the round steak in the bag to coat.

4. Arrange the steak in the bottom of the slow cooker; add the green pepper, onion, molasses, mushrooms and then pour the tomatoes and soy sauce over the top.

• 1½ cups all-purpose flour
• 2 teaspoons baking powder

1. Place all the dry ingredients in a large bowl- then add the milk, egg, and vanilla. Using an electric mixer; mix the batter until smooth, and then mix in the Ricotta cheese.

• ¾ pound ground pork
• ¾ pound lean ground beef
• 8 slices bacon (cooked crispy)
• 1 large tomato
• 1 egg
• 2 teaspoons Worcestershire sauce

• ½ teaspoon pepper
• ½ cup ketchup
• 2 tablespoons brown sugar (packed)
• 2 teaspoons cider vinegar
• 4 hamburger buns

Instructions

1. Cook the bacon and set aside. In a small bowl prepare the sauce by mixing together the ketchup, brown sugar, and vinegar. Remove 5 tablespoons of the sauce and set aside. (You will use the 5 tablespoons to top the burger after they are grilled)

3. Preheat grill to Medium High Heat
4. In a large bowl, using your hands, mix together the ground beef and pork along with the egg, salt, pepper, and Worcestershire sauce. Form into 4 patties about ¾ inch thick.

6. Grill burgers until browned on one side. Flip the burgers and brush with the remaining sauce. Continue this process until the burgers are done. (Internal temperature of 160F). Just before burgers are done place the buns on the grill cut side down and lightly toast them.
7. To put it all together place a burger on the bottom part of the bun, then the sauce, followed by a slice of tomato, and then the bacon. Add the top part of the bun and enjoy.

It doesn’t get much simpler than this Peanut Butter Blossoms Cookie Recipe. The best part is they are so delicious it’s hard to eat just one. Basically you combine all the ingredients together in a large bowl, roll the dough into balls, like you are making meatballs; roll them in sugar and bake. • ½ cup firmly packed brown sugar

• 1 teaspoon vanilla
• 1 egg
• Sugar for rolling cookie dough
• 48 milk chocolates kisses or stars

Instructions

1. Preheat oven to 375F.
2. In the large bowl mix together the flour, ½ cup sugar, brown sugar, baking soda, salt, shortening, peanut butter, milk, vanilla and egg to form the dough. (I used my electric mixer for this.)

4. Roll the cookie dough into 1 inch balls, like you are making meat balls, roll them in sugar and place them on a cookie sheet sprayed with cooking spray about 2 inches apart.

6. Bake for 10-12 minutes or until golden brown. Remove the cookies from the oven and immediately insert the kisses in the center of the cookies. (Press them down firmly – you will see the edges of the cookies crack as you insert them)
7. Remove the cookies from the cookie sheet to a wire rack to cool. (It takes quite a long time for the inside of the kisses to cool to the point they are solid again)

The Asparagus has finally decided to come up here in Upper Michigan; we have really not had much of a spring. I thought this is a great time to put this Ham and Asparagus Roll-ups Recipe on the menu. I served this dish with hash brown potatoes and it turned out to be a really good dinner combination. I wanted something a little different for the holiday weekend so I chose this Enchiladas Recipe. This recipe calls for using Tortillas corn wraps and unfortunately I don’t usually have very good luck forming them; they always seem to crack. This recipe calls for placing them in the sauce to soften them up, using the hot sauce and liquid, which adds some moisture and heat. I was surprised how well I was able to use the Tortillas wraps after they soaked in the sauce for a few seconds. Other than wrapping, this is a simple recipe that doesn’t require a lot of prep time. Cooking time is also minimal so you can have a one dish dinner on the table in about an hour.

• 2 cups water
• 1 can concentrated tomato soup

• 1/ 2 cup olive oil
• 12 corn Tortillas
• 1 can re-fried beans (16 ounces)

Instructions

1. Preheat oven to 350F.
2. In a large skillet brown the burger and onion until burger is no longer pink inside. Drain, mix in the olives, ½ teaspoon salt, and set aside.
3. 
4. In another skillet or medium sauce pan mix together the tomato sauce, tomato paste, olive oil, tomato soup, 1 cup of shredded cheddar, and water. Season with ½ teaspoon of salt, chili powder and garlic powder; Simmer for 20 minutes. Pour about a cup of the mixture in the bottom of a 9 x 13 casserole dish. In another small sauce pan heat the re-fried bean just warm enough to work with.

6. Place each Tortilla in the hot tomato sauce, one at a time as you wrap them, first with the meat mixture, and then a couple spoons of re-fried beans. Wrap them and place them seam side down in the casserole dish. Top with the rest of the sauce and the shredded cheddar.
7. Bake for 20-30 minutes or until hot and bubbly.
