Without removing the shells, slit about 3/4 of the way through the shrimp down the ridged back and remove the vein that runs down the center. Rinse and pat the shrimp dry. Whisk thyme leaves, lime juice, 1 tablespoon of the olive oil, 1/2 teaspoon of the salt and black pepper, to taste, in a shallow nonreactive bowl or dish. Lay the shrimp cut side down in the lime mixture and refrigerate for 30 minutes.&lt;br /&gt;&lt;br /&gt;In a food processor, pulse the garlic, jalapeno, scallions, remaining 1 tablespoon olive oil and remaining 1/2 teaspoon salt to make a coarse paste. Add the cilantro and pulse just enough to incorporate into the mixture. Spoon the mixture into the opening in the shrimp and close the shrimp. Grill the shrimp shell side down (to keep filling from falling out) for 3 minutes. Turn to the other shell side, cover, and grill another 2 minutes or until the shrimp turn pink and are slightly firm to the touch. Sprinkle with salt and serve.&lt;br /&gt;&lt;br /&gt;Cook's Note: Shrimp cooked in the shells are more intensely flavorful. Leaving the shells on provides a buffer against overcooking, a misfortune many shrimp suffer. Shrimp, even these jumbos, continue to cook once removed from the grill. It's always best to cook them just until opaque and let the delicate shellfish finish cooking off the heat.&lt;br /&gt;&lt;br /&gt;Jumbo shrimp in the shell can be a knife and fork sort of deal unless you're outside and it's summer and you are feeling very relaxed. The combination of cucumber and red wine vinegar in this recipe reminds him of the wonderful Greek salads he had growing up outside of Detroit, Michigan, home to a huge Greek community.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Pairing Suggestion&lt;br /&gt;&lt;br /&gt;This luscious soup needs a full-bodied white, but one that has good acidity, too. Sonoma's cool morning fogs help Chardonnay keep its edge, as in the 2004 Taft Street Russian River Valley Chardonnay, with its spicy pear-apple notes, or the leesy, pear-inflected 2003 Iron Horse Corral Vineyard.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;font-size:130%;" &gt;Ingredients&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;1. 1 large European cucumber, seeded and coarsely chopped&lt;br /&gt;2. 2 Hass avocados—pitted, peeled and quartered&lt;br /&gt;3. 1 1/2 cups buttermilk&lt;br /&gt;4. 2 tablespoons red wine vinegar&lt;br /&gt;5. 1 teaspoon sugar&lt;br /&gt;6. 1 1/2 tablespoons fresh lime juice&lt;br /&gt;7. Kosher salt&lt;br /&gt;8. 3 tablespoons extra-virgin olive oil&lt;br /&gt;9. 3/4 pound large shrimp, shelled and deveined, shells reserved&lt;br /&gt;10. 3 garlic cloves, thinly sliced&lt;br /&gt;11. 1 shallot, thinly sliced&lt;br /&gt;12. 1 small carrot, thinly sliced crosswise&lt;br /&gt;13. 1 teaspoon black peppercorns&lt;br /&gt;14. 1 teaspoon coriander seeds&lt;br /&gt;15. 1 teaspoon crushed red pepper&lt;br /&gt;16. 1/2 teaspoon cumin seeds&lt;br /&gt;17. 1 teaspoon tomato paste&lt;br /&gt;18. 2 cups water&lt;br /&gt;19. 1 tablespoon honey&lt;br /&gt;20. Freshly ground pepper&lt;br /&gt;21. 1 tablespoon unsalted butter&lt;br /&gt;22. 6 mint leaves, chopped&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;font-size:130%;" &gt;Directions&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;1. In a blender, combine the cucumber, avocados, buttermilk, vinegar, sugar, 1/2 tablespoon of the lime juice and a pinch of salt. Blend until smooth. Strain the soup through a fine sieve and refrigerate until chilled, about 40 minutes.&lt;br /&gt;2. In a large saucepan, heat 2 tablespoons of the olive oil. Add the shrimp shells, garlic, shallot and carrot and cook over moderate heat, stirring until the shells are lightly browned, and the vegetables are softened, about 8 minutes. Add the peppercorns, coriander seeds, crushed red pepper and cumin seeds and cook, stirring, for 1 minute. Add the tomato paste and cook, stirring, for 1 minute. Add the water, honey and remaining 1 tablespoon of lime juice and bring to a boil. Simmer over moderate heat until reduced to 1/2 cup, about 15 minutes. Strain the shrimp sauce into a heatproof bowl.&lt;br /&gt;3. In a medium skillet, heat the remaining 1 tablespoon of olive oil until shimmering. Add the shrimp, season with salt and pepper and cook over high heat for 1 minute. Turn the shrimp, add the shrimp sauce and simmer just until the shrimp are cooked through, about 2 minutes. Drain the currants, add them to the pot, and then remove the pot from the heat. Let the soffritto cool to room temperature. It will keep, tightly covered, in the refrigerator for 2 weeks.&lt;br /&gt;&lt;br /&gt;4. About 30 minutes before cooking, remove the pork from the refrigerator. If using wooden skewers, soak them in water to cover to prevent them from scorching. Prepare a hot fire in a grill, stacking the coals to one side so you have two areas of heat, one with direct heat and one with indirect heat.&lt;br /&gt;&lt;br /&gt;5. Drizzle the remaining 1 tablespoon olive oil over the pork and toss evenly. Drain the skewers, and thread about 5 pieces of pork onto each skewer.&lt;br /&gt;&lt;br /&gt;6. Place the skewers over the coals and grill for about 1 minute on each side, or until well seared. Move the skewers to the cooler side of the grill and continue to cook over indirect heat for 8 to 10 minutes, until cooked medium-well but still juicy.&lt;br /&gt;&lt;br /&gt;7. Arrange a bed of arugula on a platter. Place the pork skewers on top. Drizzle some of the soffritto over the top of the pork and the arugula. Pass the remaining sauce at the table. I dont know, if my husband started stabbing away at my cake likeness on our wedding day — as the groom is up top — I’d be “kinda, sorta” worried.&lt;br /&gt;&lt;br /&gt;The motivation behind the cake is simple. It’s been Chidi’s life-long dream to get a doll made to look like her, though we fear the actual cake bears more of a resemblance to Tracy Morgan than the delightfully mentally unstable Chidi:&lt;br /&gt;&lt;br /&gt;So who is the lucky man who will be spooning his lovely lady cake for the rest of eternity? Bake at 375 degrees Fahrenheit for 25-30 minutes, until set (doesn’t jiggle when you move the pan). Let cool. Place in refrigerator and chill for a few hours. Serves 8-10.&lt;br /&gt;&lt;br /&gt;i made this recipe twice in one day. the first time, i omitted the lemon juice, because i’m not a huge lemon fan. I also (without thinking) added water to my Ener-G egg powder. I followed the recipe otherwise, and what i found was that the cheesecake tasted off because i omitted the lemon (it tasted like eating straight up creamcheese)… and i also found it to be a little too tough on top (too long in the oven). also, the consistency of the inside was a bit mushy, which i think was due to the added water.&lt;br /&gt;&lt;br /&gt;the second try, i used the juice from about 1/2 a lemon… and boy did that make a difference! take my advice and dont omit the lemon! i didnt add water to my ener-g egg replacer. i think this helped the consistancy firm up a bit. i added 1/2 tsp of extra vanilla extract, because i like things strong on the flavor side. I also only left it in the oven for about 20 minutes, and watched it pretty close. i supposed all you’re waiting for the heat to do is to ’set’ the creamcheese… so it’s ok to take it out early if it’s already set. it shouldnt brown on top, because it will turn out tough. plus, i found that the crust browns really fast, and you have to watch that as well, so it doesnt burn, too! once it cooled down, i immediately put it in the fridge… and the longer you leave it there, the firmer it gets. i suggest if you’re having problems with it being mushy, maybe pop it in the freezer for 30 minutes before you serve it?&lt;br /&gt;&lt;br /&gt;i made a blackberry suace to go on top by mashing a handfull of fresh blackberries with some agave nectar… &lt;br /&gt;&lt;br /&gt;overall, this recipe was really fast and easy. it would have been even easier if i would have used a premade crust. i found it was actually pretty hard to get the graham crackers as fine as i would have liked… i ended up having big chunks of graham cracker still in my crust. perhaps if you have a food processor, it would be helpful to grind it up in there… too bad i dont have one :( my boyfriend loved this cheesecake… i thought it was alright. Bake at 350 for about 35 minutes.&lt;br /&gt;&lt;br /&gt;The topping sinks through the cake to form a pudding layer at the bottom. Preheat oven to 350 degrees. Prepare an angel food cake pan (or a 9-inch cake pan), either by greasing it well, or lining it with parchment paper.&lt;br /&gt; 2. Crack eggs into 2 separate mixing bowls, with the egg whites in one bowl and the yolks in another.&lt;br /&gt; 3. Beat the egg whites until stiff, and set aside. (I use an electric hand mixer.)&lt;br /&gt; 4. Add the salt and sugar (or sugar substitute) to the yolks and stir well until smooth.&lt;br /&gt; 5. Add the coconut milk, oil, and vanilla to the yolks, and beat until mixed in (or stir it well).&lt;br /&gt; 6. In a 3rd bowl, stir together the flour, baking powder, and green tea powder. Now add (or sift) this into the yolk mixture. Stir well or beat to incorporate. Note: the batter will turn green from the green tea - this is the effect you want.&lt;br /&gt; 7. Now fold in the egg whites, stirring and mixing by hand and just until egg whites have dissolved into the batter (do not over mix).&lt;br /&gt; 8. Pour the batter into the prepared pan and place in the oven for 25 to 35 minutes (depending on your oven). Check cake after 25 minutes by inserting a fork into the center of the cake. If it comes out clean, it's done. (Note: the center should form a peak - if it is concave, your cake isn't nearly finished).&lt;br /&gt; 9. While cake is cooling in the pan, toast the coconut. Place coconut in a dry frying pan (no oil) over medium heat. "Dry fry" for 1 minute, stirring constantly - or until coconut turns light golden brown.&lt;br /&gt;10. Decorate the cake with a sifting of the icing sugar, and add a sprinkling of toasted coconut on top. Serve warm or at room temperature. Drizzle with lemon juice.&lt;br /&gt;&lt;br /&gt;Pour all but 2 tbsp of apple juice over sliced apples and cranberries.&lt;br /&gt;&lt;br /&gt;Whisk oats, brown sugar and flour together. Rub butter pieces into oat mixture. Sprinkle on top of apples.
