Remove skin and bones and separate into pieces. Save chicken stock. Use 13 x 9 inch pan (sprayed with Pam). Tear small hunks of bread (about 3/4 of a loaf) and lay in bottom of pan. Slice 1 onion thin and lay on top of bread. Sprinkle celery, poultry seasoning on top. Lay chicken pieces on top. Melt margarine and pour over chicken pieces. Combine mushroom soup, cream of chicken soup and pour on top. Cover the top with sharp cheese sliced all over the top. In a processor, puree carrot and celery with 3 cups of the water.&lt;/div&gt;&lt;div&gt;Into a large pan, pour puree and remaining 3 cups of water.&lt;/div&gt;&lt;div&gt;2. In a skillet, heat oil. Add garlic and stir-fry over low heat&lt;/div&gt;&lt;div&gt;for 2 minutes, or until garlic begins to change color. Add the&lt;/div&gt;&lt;div&gt;garlic to soup pan. Bring soup to a boil over moderate heat and skim&lt;/div&gt;&lt;div&gt;off and discard any foam that accumulates.&lt;/div&gt;&lt;div&gt;3. Add potatoes and cook over low heat for about 45 minutes. The&lt;/div&gt;&lt;div&gt;potatoes will begin to disintegrate. At this point, remove pan from&lt;/div&gt;&lt;div&gt;the heat and mash potatoes in pan with a hand masher or ricer. Bring&lt;/div&gt;&lt;div&gt;soup to a boil again, add salt, lemon juice, consomme cubes, and&lt;/div&gt;&lt;div&gt;turmeric.&lt;/div&gt;&lt;div&gt;4. Simmer over low heat for 1/2 hour longer, stirring frequently to&lt;/div&gt;&lt;div&gt;prevent potatoes sticking to pan. The soup will have turned a golden&lt;/div&gt;&lt;div&gt;color. Adjust salt and lemon juice, if a more intense flavor is desired.&lt;/div&gt;&lt;div&gt;Serve hot in a soup plate with as much rice as wanted. With a small, sharp knife, slit the outer shell of each chestnut,&lt;br /&gt;put them in a shallow baking pan, and roast until tender, 15 to 20&lt;br /&gt;minutes. Peel off the outer shells and inner skins while still warm.&lt;br /&gt;Reheat if the chestnuts cool and become difficult to peel. Peel and&lt;br /&gt;thinly slice the onion and the shallots. Thinly slice the celery tops and&lt;br /&gt;leaves (reserve ribs for another use). Julienne the prosciutto. Wrap&lt;br /&gt;and refrigerate 2 tablespoons prosciutto for garnish.&lt;br /&gt;COOKING: Heat 2 tablespoons of the butter in an 8-quart soup kettle&lt;br /&gt;and saute the onion, shallots and remaining prosciutto over medium&lt;br /&gt;heat until softened, about 5 minutes. In a large saucepan, bring 6 cups&lt;br /&gt;of the chicken stock to a boil. Stir the hot chicken stock into the shallot&lt;br /&gt;mixture along with the chestnuts, celery, fennel seeds, bay leaf, and&lt;br /&gt;1/2 teaspoon salt. Bring the mixture to a boil and skim. Reduce the&lt;br /&gt;heat and simmer, covered, for 45 minutes. Remove and set aside 16&lt;br /&gt;chestnuts for garnish. Continue simmering until remaining chestnuts&lt;br /&gt;are very tender, about 45 minutes longer.&lt;br /&gt;Remove soup from heat, discard the bay leaf, and set aside to cool 15&lt;br /&gt;minutes. Pour the soup into the workbowl of a food processor fitted&lt;br /&gt;with a metal blade, or into a blender. Pure, then strain through a fine&lt;br /&gt;sieve or tamis. Stir until fragrant, then add the&lt;br /&gt;zucchini, yellow squash, and cauliflower. Add curry powder, salt,&lt;br /&gt;black pepper, and cayenne and stir. Drain the raisins&lt;br /&gt;and add to the pot along with the tomatoes, tomato sauce, honey, and&lt;br /&gt;garbanzo beans. Cover and simmer for 30 minutes, or until the&lt;br /&gt;vegetables are tender, adding up to 1 cup of water if the stew&lt;br /&gt;appears dry. While the stew is cooking, bring the water to a boil in&lt;br /&gt;a saucepan and stir in the couscous. Cook for 1 minute, then cover&lt;br /&gt;and turn off the heat, letting the couscous sit for 10 minutes. After&lt;br /&gt;the couscous has sat for 5 minutes, stir the figs and almonds into the&lt;br /&gt;stew. To serve, fluff up the couscous with a fork. Spoon a mound of&lt;br /&gt;couscous on each plate and form a well in the center. Ladle a portion&lt;br /&gt;of stew into the well. Garnish with several tablespoons of the yogurt&lt;br /&gt;and fresh mint. Drain&lt;br /&gt;raisins, reserving rum, and sprinkle raisins over apples. Bake in a&lt;br /&gt;preheated 350 degree F. oven for 15 minutes. Beat eggs and sugar&lt;br /&gt;until thick and lemon-colored. Stir in milk and reserved rum. Pour&lt;br /&gt;custard over apples and bake for 45 to 60 minutes at 350 degrees F.&lt;br /&gt;until custard is set. Cool completely before serving. Rotate the pan to spread caramel&lt;br /&gt;all around the sides. Beat the egg mixture again. Pour it quickly into&lt;br /&gt;the cake pan.&lt;br /&gt;Cover the pan with aluminum foil which has been well buttered on the&lt;br /&gt;under side.&lt;br /&gt;Place the pan in a larger pan half filled with water (as you would do a&lt;br /&gt;custard). Bake at 350 F for 30 minutes. Remove cover and test with a&lt;br /&gt;silver knife (when it comes out clean, custard is done). Chill until&lt;br /&gt;thoroughly cold. Rotate the pan to spread caramel&lt;br /&gt;all around the sides. Beat the egg mixture again. Pour it quickly into&lt;br /&gt;the cake pan.&lt;br /&gt;Cover the pan with aluminum foil which has been well buttered on the&lt;br /&gt;under side.&lt;br /&gt;Place the pan in a larger pan half filled with water (as you would do a&lt;br /&gt;custard). Bake at 350 F for 30 minutes. Remove cover and test with a&lt;br /&gt;silver knife (when it comes out clean, custard is done). Chill until&lt;br /&gt;thoroughly cold.
