From shoe to kyBoot – the history
Throughout history man has adapted his needs to his environment – the surfaces on which we walk are a perfect example of this. Today the surfaces are predominantly hard and even, hence ideal for the rapid and motorised needs of our time. Urbanisation of the civilised world affects the human body, in particularly feet and legs – and we have adapted our needs to the evolution. This divergence is at the centre of the modern Shoe Story.

Shoe concepts 1949 – 2010
Since the mid 20th century most people have worn shoes in most places – despite the fact that most footwear restricts much of the foot’s natural movement and is detrimental for supporting muscle structures. Since the 1980s there has been increasing awareness of these negative aspects and their consequences, leading to new thought processes and developments in connection with foot function. This has resulted in shoe concepts providing passive support and led to the emergence of the Muscle Tuning Concept in 1998.

In 2010 an innovative development has been launched with the kyBoot. It is based on the Kybun-movement concept with focus on the natural functions and mechanisms of the human body and how to best support it. The pioneering walk-on-air sole ensures optimised pressure distribution and relieves pressure on joints. The kyBounder is simple and effective, its secret being a soft and highly elastic structure, which leads to continuous, gentle activity of the feet, calves and upper body. Pädaste Manor appoints ‘Director of Wild Produce’

Renown horticulturist & bio dynamics expert Mercedes Merimaa takes up new position.

The five star hotel resort Pädaste Manor acquired a fine addition to their team with Mercedes Merimaa joining as Director of Wild Produce. Mercedes is a consultant for Pädaste Manor’s ongoing research of the Nordic Islands’ Cuisine and will coach the staff in the fine dining Restaurant Alexander on all matters regarding wild produce which can be found on Muhu island.

Pädaste’s proprietor & restaurateur Martin Breuer noted: ’Mercedes has great experience in all matters we call native and wild. I happened to see her on an Estonian National Television breakfast program, just after we had completed our ‘Expedition in search of the Nordic Islands’ Cuisine’. She was passionately talking about edible plants and flowers which can be picked from forests and meadows. It was immediately evident to me that her knowledge is the perfect fit for the discovery of ‘our terrain’. At our first meeting Mercedes made a wonderful remark :’why grow greens and herbs in a field or green house? You might as well pick them in the environment where they grow naturally by themselves’.

Peeter Pihel, award winning chef at Pädaste’s Restaurant Alexander, is equally convinced about the excellent synergy with Pädaste’s vision of the Nordic Islands’ Cuisine. ‘The entire team at Alexander is absolutely delighted that Mercedes Merimaa has joined our team. For us it is another step forward in the better understanding of our traditional cuisine and produce’, said Pihel.
Diners at Alexander have already enjoyed the first results of the co-operation with Mercedes. Peeter Pihel mentions numerous wonderful herbs – such as sea milkwort – which were spotted on the first outing to the nearby beach with the newly appointed Director of Wild Produce.

University lecturer Mercedes Merimaa is the author of a book on using wild plants for treatment and gastronomic purposes. ‘All you have to do is open your eyes just accept that nature has given us riches beyond our everyday knowledge,’ says Merimaa.

From May 2010 St Peter Stiftskeller introduces a new addition to the Salzburg Concert Circuit with KULTurig, the city’s most sensuous music group. The programme promises an exceptional evening for stomach and soul in their atmospheric Petrusstube, where a set menu 3-course dinner is interspersed with three performances of music and lyrics. This entirely new concept surprises with its sound and the ingenious contrast of traditional Salzburg music in contemporary arrangements – be prepared to be whisked away by a highly original interpretation of spirited waltzes, established ‘Landlers’ and mystic yodels, flirting with a dash of Tango, Bossa Nova and Dynamic Percussions. The programme encapsulates the sheer style and magic of Salzburg and is set to become a modern classic in the eternal Mozart City.

The KULTurig Dinner Concert takes place every Thursday at 7pm, from May 2010 onwards.
Prices are €51 for adults, €30 for children to 14 yrs, €38 for students.

From May 2010 the St. Peter Stiftskeller takes the concept of Dinner Concerts one step further with ‘KultUrig’, Salzburg’s most sensuous music group and a brand new take on Dinner entertainment. These events will take place in the Petrusstube of the St. Peter Stiftskeller every Thursday evening – they promise a skilful, yet playful interpretation of traditional Austrian music, flirting with tango, bossa nova and dynamic percussion.
