Perfect for a small family, eating fondue also can become a spirited game with penalty kisses for items lost in the melted cheese. Dip bread squares, apples, salami, carrots, or cauliflower in rich, melted Gruyere or cream cheese.
The fondue pot and its stand feature cast-iron construction. The cast-iron pot benefits from unmatched durability against warping and breakage, superb heat retention, and even heat distribution. Porcelain enamel coats the fondue pot to eliminate the need for pre-seasoning on the interiors, which other cast-iron cookware requires. This construction also allows the pot to adapt for stovetop or oven use. The fondue pot is cast with two small handles. For the best care, use wooden stirring spoons or nonstick utensils when preparing fondue to avoid scratching the enamel surface. Likewise, avoid abrasive scrubbing pads in cleaning the fondue pot, washing only by hand in warm, soapy water. Dry the cast-iron pot immediately to ward off rust.

1/2 lb Emmenthaler Cheese (shredded)
1/2 lb Gruyeye (shredded)
1 clove Garlic
2 cups Dry White Wine
1 tbs Lemon Juice
2 tbs Flour
3 tbs Kirsch
1/4 tsp White Pepper
Nutmeg and/or Paprika to taste
If the fondue is too loose add more cheese; If fondue is too stiff add more wine.

2 cups 1- to 1 1/2-inch-diameter red-skinned potatoes, halved
2 cups cauliflower florets
2 cups very small brussels sprouts
2 apples, cored, cut into wedges
1 pound Irish cheddar cheese, grated
2 1/2 tablespoons all purpose flour
3/4 cup (or more) Irish stout (such as Guinness)
6 tablespoons frozen apple juice concentrate, thawed
1 tablespoon Dijon mustard
Steam all vegetables until tender, about 15 minutes. Arrange vegetables and apples around edge of large platter.
Meanwhile, toss cheese with flour in large bowl. Bring 3/4 cup stout, juice concentrate, and mustard to simmer in large saucepan over medium heat. Gradually add cheese mixture, stirring constantly, until cheese is melted and smooth, thinning with more stout, if desired. Season to taste with salt and pepper. Transfer fondue to bowl. Place in center of platter with vegetables.
Market tip: Sharp white cheddar is a great substitute for the Irish cheddar.
