½ cup mashed cooked sweet potato (with skin)&lt;br /&gt;
1 cup cooked brown rice&lt;br /&gt;
½ cup shredded Monterey Jack cheese&lt;br /&gt;
1/3 cup cottage cheese&lt;br /&gt;
1 tablespoon wheat germ (optional)&lt;br /&gt;
¼ teaspoon salt&lt;br /&gt;
&lt;br /&gt;
Preheat oven to 350 degrees Fahrenheit.&lt;br /&gt;
&lt;br /&gt;
Place sweet potato, rice, Monterey Jack cheese, cottage cheese, wheat germ and salt in the bowl of a food processor. Process for 45 – 60 seconds or until smooth and a ball starts to form. &lt;br /&gt;
&lt;br /&gt;
Roll sweet potato mixture into tablespoon-sized balls with your hands. Place balls on baking sheet and bake on the center rack of the oven for 15-17 minutes or until the bottoms are golden. &lt;br /&gt;
&lt;br /&gt;
Allow balls to cool on the baking sheet for at least 5 minutes. Gently remove balls with thin metal spatula and serve. Store leftovers in the refrigerator in an airtight container. &lt;br /&gt;
&lt;br /&gt;
Yield: 20 balls&lt;br /&gt;

&lt;/div&gt;1/2 teaspoon baking soda&lt;br /&gt;
1/2 teaspoon salt&lt;br /&gt;
&lt;br /&gt;
1 large egg, beaten&lt;br /&gt;
1/4 cup olive oil&lt;br /&gt;
1/4 cup sugar&lt;br /&gt;
1/2 cup buttermilk&lt;br /&gt;
1/2 cup lowfat milk&lt;br /&gt;
1/4 cup tomato paste&lt;br /&gt;
1/2 cottage cheese&lt;br /&gt;
1 cup freshly grated parmesan cheese&lt;br /&gt;
&lt;br /&gt;
Preheat oven to 375 F&lt;br /&gt;
&lt;br /&gt;
In a medium bowl, whisk together flour, Italian Seasoning, baking soda, and salt. Set aside.&lt;br /&gt;
&lt;br /&gt;
In a large bowl, whisk together, egg, olive oil, sugar, buttermilk, milk, tomato paste, cottage cheese and parmesan cheese until almost uniform in color. Small bits of tomato and cheese are actually a good thing so do not over mix. &lt;br /&gt;
&lt;br /&gt;
Transfer batter to a muffin pan sprayed with oil. Fill each muffin cup up to ¾ full with batter. Bake on a rack in the center of the oven for 15 – 17 minutes or until a toothpick inserted in the center of a muffin comes out clean. &lt;br /&gt;
&lt;br /&gt;
Allow muffins to cool for 5 minutes in pan and then transfer to a cooling rack. Serve or store in an airtight container. &lt;br /&gt;

Note: If you don't have any buttermilk, you can make a &lt;a href="http://frugalliving.about.com/od/condimentsandspices/r/Buttermilk_Sub.htm"&gt;substitute&lt;/a&gt;. These are otherwise known as Pavlovas. But I can barely say 'pavlova', much less my kids. Good tongue twister, bad name for a kid snack. I think I'm saving the excess egg yolks for a pound cake experiment. We'll see.&lt;br /&gt;
&lt;br /&gt;
3 large egg whites&lt;br /&gt;
1 tablespoon agave nectar&lt;br /&gt;
1/2 teaspoon vanilla&lt;br /&gt;
Pinch salt&lt;br /&gt;
&lt;br /&gt;
3/4 cup whipped cream (give or take)&lt;br /&gt;
1 cup fresh raspberries (give or take)&lt;br /&gt;
&lt;br /&gt;
Preheat oven to 200 F.&lt;br /&gt;
&lt;br /&gt;
Place the egg whites, agave, vanilla, and salt in the bowl of an electric mixer. With the whisk attachment, whip the egg white mixture on medium high speed until peaks form. Turn off mixer and detach bowl. Transfer large spoonfuls onto parchment-lined baking sheet. Place the scoops at least an inch apart. Make a well in the center of each scoop with the back of the spoon. They should be approximately 4-inches wide once the wells are created. &lt;br /&gt;
&lt;br /&gt;
Bake on the center rack of the oven for approximately 1 hour and 50 minutes or until the clouds are golden in color and somewhat easily removed from the parchment paper. &lt;br /&gt;
&lt;br /&gt;
Allow the clouds to cool for 1-2 minutes on the baking sheet. Gently remove from parchment paper and transfer to serving plate. Garnish each cloud with approximately 1 tablespoon whipped cream and a heaping tablespoon of berries. Serve.&lt;br /&gt;
&lt;br /&gt;
Makes 12 clouds&lt;br /&gt;
Prep time: 10 minutes&lt;br /&gt;
Bake time: 1 hour 50 minutes&lt;br /&gt;
&lt;br /&gt;

In a medium bowl mix together the apple, brown sugar, wheat germ, butter, cinnamon, and salt.&amp;nbsp;Place heaping tablespoon-sized scoops of the apple mixture onto parchment lined baking sheets. Make sure the scoops are 2- inches apart. With the back of a spoon, flatten the scoops until they are 1/4-inch thick. Pay careful attention to achieving a uniform thickness as the cookies will require more time in the oven if they are too thick.&lt;br /&gt;
&lt;br /&gt;
Bake for 1 1/2 - 2 hours or until the cookies are dry yet pliable. Allow to cool before serving. Store in an airtight container.&lt;br /&gt;

1/2 cup nut butter (such as almond or peanut)&lt;br /&gt;
1/4 cup finely chopped pitted dried dates (approximately 5 dates)&lt;br /&gt;
1/3 cup organic corn flake cereal&lt;br /&gt;
3 tablespoons cream cheese&lt;br /&gt;
1 tablespoon honey&lt;br /&gt;
4-5 slices soft whole grain bread, crusts removed&lt;br /&gt;
&lt;br /&gt;
In a small bowl, mix together nut butter, dates, cereal, cream cheese, and honey with a metal spoon. Don't be shy about crushing the cereal as you stir. Continue to stir until the cereal is broken up into small bits. Set aside.&lt;br /&gt;
&lt;br /&gt;
Spread the bread slices out a level surface and flatten them with a rolling pin as much as possible. Spread 2-3 tablespoons of the nut butter mixture onto each slice depending on the size of the bread. Smaller slices should have 2 tablespoons and medium or large slices should have 3 tablespoons. Roll up each slice as tightly as possible without ripping the bread. Cut each tube into 1/2-inch thick slices and serve.&lt;br /&gt;

But come to find out it tastes much better homemade. And the addition of the orange maralade here turned it into something I actually enjoy eating. I can't say as much for my 3 year old, but the 5 year old loves it.&lt;br /&gt;&lt;br /&gt;The idea for orange in the hummus comes from &lt;a href="http://www.amazon.com/Low-Fat-Vegetarian-Recipes-Easy-Make/dp/1572840838/ref=sr_1_3?ie=UTF8&amp;s=books&amp;qid=1252622641&amp;sr=8-3"&gt;1,001 Lowfat Vegetarian Recipes&lt;/a&gt; by Sue Spitler.&lt;br /&gt;&lt;br /&gt;1 (15 ounce) can garbanzo beans (a.k.a. chickpeas) &lt;br /&gt;¼ cup orange juice&lt;br /&gt;1 tablespoon sesame tahini&lt;br /&gt;1 tablespoon orange maralade (optional)&lt;br /&gt;1 teaspoon soy sauce&lt;br /&gt;½ teaspoon garlic powder&lt;br /&gt;½ teaspoon curry powder&lt;br /&gt;¼ teaspoon salt&lt;br /&gt;&lt;br /&gt;Place all the ingredients into the bowl of a food processor and process until smooth. Take a couple breaks while processing to wipe down the sides of the bowl with a rubber spatula. &lt;br /&gt;&lt;br /&gt;Serve with pita bread, pretzels, or carrot sticks. This is probably the first of my homegrown recipes that made me smile when I tasted it.&lt;br /&gt; &lt;br /&gt;Today I used a Jonamac apple (which is a cross between a Jonathan and a MacIntosh). Other tart and sweet apple choices are: Cortland, Empire, Golden Delicious, or Winesap.&lt;br /&gt;&lt;br /&gt;4 slices soft whole wheat bread&lt;br /&gt;1 medium apple, peeled, cored, and chopped fine (approximately 1 cup of chopped apple)&lt;br /&gt;4 tablespoons cream cheese or vanilla greek-style yogurt&lt;br /&gt;4 teaspoons apricot preserves&lt;br /&gt;Cinnamon sugar (optional)&lt;br /&gt;&lt;br /&gt;Preheat oven to 350 F.&lt;br /&gt;&lt;br /&gt;Cut the crusts off of the bread slices and discard. Spread the bread slices out on a large cutting board and flatten with a rolling pin. Make sure the center of each slice is resting on the bottom of a cup and the sides are overlapping slightly. Center 1 tablespoon of cream cheese and 1 teaspoon of apricot preserves on top of the apples. Allow tarts to cool in the pan for at least 5 minutes or more depending on your child’s age and preference. Cheese should be sliced 1/4 inch thick. Alternate apple slices and cheese on top of each other. Set aside.&lt;br /&gt;&lt;br /&gt;Mash avocado with a fork in a large bowl until there are no large chunks remaining. Add butter and mix very well with avocado. Add sugars and stir well. Add egg and stir. Finally add the milk and stir until incorporated. Add the flour mixture and stir until combined. Fold in chocolate chips (if desired). &lt;br /&gt;&lt;br /&gt;Drop heaping tablespoons full of batter onto ungreased baking sheets or jelly roll pans two inches apart. Bake for 15-17 minutes near the center of the oven, rotating once if necessary. Once the edges of the cookies start to brown, remove from oven and transfer to cooling rack with spatula. Allow to cool slightly and serve. &lt;br /&gt;&lt;br /&gt;These cookies will soften considerably if left out overnight. I have a feeling you could throw in a ¼ cup of ground flax or wheat germ without any problems. &lt;br /&gt;&lt;br /&gt;1 cup shelled walnut pieces, raw or roasted&lt;br /&gt;1/3 cup raisins&lt;br /&gt;5 dates, pitted&lt;br /&gt;2 tablespoons brown rice syrup or 1 tablespoon honey (optional)&lt;br /&gt;¼ teaspoon cinnamon&lt;br /&gt;1/8 teaspoon salt&lt;br /&gt;½ teaspoon vanilla extract&lt;br /&gt;1/3 unsweetened shredded coconut (optional)&lt;br /&gt;&lt;br /&gt;Put the walnuts, raisins, dates, syrup, cinnamon, salt, and vanilla in the bowl of a food processor. Pulse for 20-30 seconds until the walnuts are the sized of large crumbs and the mixture is starting to clump together.&lt;br /&gt;&lt;br /&gt;Scoop the walnut mixture out of the processor bowl and roll into small balls with your hands. Put coconut in a small shallow bowl and roll balls in the coconut to coat. If you choose to skip the coconut, the balls will be a little sticky, but still edible. That counts for something, right?&lt;br /&gt;&lt;br /&gt;3 tablespoons nut butter (such as peanut or almond)&lt;br /&gt;1/4 cup semi-sweet chocolate chips&lt;br /&gt;1 1/2 cups crispy brown rice cereal&lt;br /&gt;1 1/2 cups vanilla frozen yogurt, slighly softened&lt;br /&gt;&lt;br /&gt;In a small saucepan, stir the chocolate chips and nut butter over medium low heat until smooth. Remove the chocolate mixture from heat. Add cereal to saucepan and stir with a rubber spatula until well coated. &lt;br /&gt;&lt;br /&gt;Divide the cereal mixture between the cups of a muffin pan (preferably silicone for easier removal). Each muffin cup should be approximately 1/2 full. Cover and place in freezer for 30 minutes or until hard. &lt;br /&gt;&lt;br /&gt;Fill the remaining half of each muffin cup with the vanilla frozen yogurt. Do not mound the yogurt; rather keep it somewhat level. Place the muffin pan back in freezer and allow yogurt to refreeze for approximately one hour or longer. &lt;br /&gt;&lt;br /&gt;To serve, carefully dislodge frosties from the muffin pan using fingers or a knife to loosen the edges. &lt;br /&gt;&lt;br /&gt;Makes approximately 8 frosties.&lt;br /&gt;&lt;br /&gt;Note for Young Ones:&lt;br /&gt;Right out of the freezer, these treats can be a little tough to eat. If your kids are on the small side, let them thaw for a minute or cut them up for them. In addition, roughly break up some of the rice cereal with a metal spoon as you are coating it with the chocolate mixture. But it turns out that I really don't have a clue. More than anything, it appears that HFCS is used in an incredibly wide variety of foods thereby increasing our consumption of sugars on the sly. Leave in the freezer for at least 3-4 hours. Thanks to Janet for the idea.&lt;br /&gt;&lt;br /&gt;Note for Young Ones: &lt;br /&gt;As far as toddler safety goes, the grapes did not freeze solid during my experiment so they would be fine peeled and cut to the size your child prefers. The watermelon freezes very well and eats a lot like a popsicle at first.
