This is a salad to put together in the morning before getting underway and allowing to chill at least four hours.  &lt;br /&gt;&lt;br /&gt;The following will make 8 servings:&lt;br /&gt;&lt;br /&gt;1/2 C of sour cream&lt;br /&gt;3 tbsp white vinegar&lt;br /&gt;1 tbsp sugar&lt;br /&gt;1/4 tsp pepper&lt;br /&gt;4 cucumbers, sliced thin&lt;br /&gt;1 sweet onion, sliced thin and separated into rings&lt;br /&gt;&lt;br /&gt;Assemble by whisking the sour cream and vinegar together in a mixing bowl.&lt;br /&gt;Add sugar and pepper whisking until the sugar has dissolved.&lt;br /&gt;Place cucumber and onions into a serving bowl.&lt;br /&gt;Fold the sour cream mixture into the cucumbers until well blended. &lt;br /&gt;&lt;br /&gt;Cover the bowl and place in your icebox or fridge to chill for at least 4 hours.&lt;br /&gt;Stir again before serving.&lt;br /&gt;&lt;br /&gt;Tasty salad to serve with dinner. Consider cooking extra, drain and rinse with water.  Refrigerate the leftovers from dinner and plan a salad for next day's lunch or dinner as follows:&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;4 Cups of pasta, cooked &lt;br /&gt;3 Cups carrots, shredded&lt;br /&gt;3 Cups zucchini, shredded&lt;br /&gt;2 (6 oz.) cans tuna, drained well&lt;br /&gt;3/4 Cup of creamy Italian salad dressing&lt;br /&gt;&lt;br /&gt;To Assemble:&lt;br /&gt;&lt;br /&gt;Place the pasta into a bowl.&lt;br /&gt;Carefully fold the carrots and zucchini into the pasta.&lt;br /&gt;Add tuna and stir gently until blended in well.&lt;br /&gt;Pour the dressing over the mixture. Here are a few favorites. Of course you can use whatever ingredients your crew prefers. &lt;br /&gt;&lt;br /&gt;Try an enhanced traditional tossed salad. A traditional tossed salad is easy to make, however, may not fully satisfy hungry appetites at dinner. Add one or more of the following ingredients for extra flavor and protein:&lt;br /&gt;&lt;br /&gt;• Chunks of cubed cheddar cheese&lt;br /&gt;• Slices or cans of lunch meat - turkey, chicken, salmon, tuna, ham&lt;br /&gt;• Leftover chicken breast&lt;br /&gt;• Zucchini squash slices&lt;br /&gt;• Yellow squash slices&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Chef’s salad: Basically a chef’s salad is an upgraded tossed salad. Add sliced hardboiled eggs, chunks of cheese and sliced ham, turkey, chicken breast or roast beef and you have a chef’s salad. Vegetables such as shredded carrots, slices of cucumber, and/or shredded red cabbage may be added as well. &lt;br /&gt;&lt;br /&gt;Spinach salad: A spinach salad made with baby spinach leaves is cool and refreshing. Broccoli and cauliflower can also be eaten raw.  &lt;/span&gt;&lt;span style="font-size: 10pt;"&gt;Tomatoes are classified as fruits, however, are often eaten as vegetables.  The small cherry tomatoes are a good choice.&lt;/span&gt;&lt;/p&gt;&lt;p style="font-family: verdana;" class="MsoNormal"&gt;

When planning on serving vegetables during the day, consider preparing them before leaving dock in the morning.

style="font-family: verdana;"&gt;1 tbsp sweet onion, chopped fine&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: verdana;"&gt;1/4 c mayonnaise&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: verdana;"&gt;2 tbsp relish&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: verdana;"&gt;1 tsp. lemon juice&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: verdana;"&gt;1/4 tsp. pepper&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: verdana;"&gt;1/2 c Cheddar cheese, shredded&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family: verdana;"&gt;How to put it together:&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family: verdana;"&gt;Cut the cucumber in half lengthwise.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: verdana;"&gt;Remove the seeds and cut the bottom so the cucumbers set flat.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: verdana;"&gt;Slightly stir together juice.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: verdana;"&gt;Sprinkle in the pepper.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: verdana;"&gt;Stir to mix well.&lt;/span&gt;&lt;br Add a salad and you have an easy, quick meal for your crew.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;One Pot Chili Macaroni&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;You will need:&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;1 pound lean ground beef or ground turkey&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;1 medium onion, chopped &lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;1 clove garlic, minced &lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;1 can (14-1/4 ounces) tomatoes, cut up &lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;2 cups water &lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;1 can (8 ounces) tomato sauce &lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;1 tablespoon chili powder &lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;1/2 teaspoon oregano &lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;8 ounces uncooked elbow macaroni &lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;How to Make:&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;Brown ground beef or turkey, onion and garlic and drain** as usual and return to pot. Add tomatoes, water, tomato sauce and seasonings to pan and bring to a boil. Cover and simmer for 10 - 15 minutes. Add uncooked macaroni and return to boiling. Cook approximately 8 or 9 minutes (or until macaroni is tender) stirring frequently. &lt;/span&gt;&lt;br /&gt;&lt;br /&gt;* &lt;span style="font-family:verdana;"&gt;Spread cut side of buns with garlic butter.  Place butter side down in fry pan. They can be made before hand and ready to serve once docked or anchored.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Cheesy Carrot Balls&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;You will need:&lt;br /&gt;&lt;br /&gt;4 oz cream cheese, softened&lt;br /&gt;2 oz grated cheddar cheese&lt;br /&gt;1 carrot, grated&lt;br /&gt;&lt;br /&gt;How to make:&lt;br /&gt;&lt;br /&gt;Combine all ingredients in a mixing bowl. Use slightly wet hands to roll into balls. Depending on the size you make, the recipe is enough for 1 - 2 dozen balls.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;No Bread Ham &amp;amp; Cheese Pinwheels&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;&lt;br /&gt;1 - 8 oz package cream cheese, softened&lt;br /&gt;4 dill pickles chopped (try green relish instead of dill pickles)&lt;br /&gt;2 Tablespoons prepared mustard&lt;br /&gt;3 Tablespoons chopped fresh chives (optional)&lt;br /&gt;5 slices of ham&lt;br /&gt;&lt;br /&gt;How to make:&lt;br /&gt;&lt;br /&gt;Combine cream cheese with pickles or relish,  mustard and chives (if used). Spread mixture on ham slices and roll them up. Wrap each roll in foil and chill in fridge overnight or for at least 2 hours. An easy lunch idea for boating is the following turkey pita.&lt;br /&gt;&lt;br /&gt;For ease at lunch time, consider preparing the filling before leaving dock in the morning.  Assemble when ready for lunch.&lt;br /&gt;&lt;br /&gt;You will need:&lt;br /&gt;&lt;br /&gt;Sliced turkey breast&lt;br /&gt;Shredded lettuce&lt;br /&gt;Shredded cheddar cheese&lt;br /&gt;Ranch dressing (or your favorite)&lt;br /&gt;Diced tomato and cucumber (optional)&lt;br /&gt;Pita rounds (cut in half)&lt;br /&gt;&lt;br /&gt;Assemble:&lt;br /&gt;&lt;br /&gt;Line bottom of pita with turkey. Toss dressing, cheese and lettuce in bowl until well coated.
