<h4>Popeye Was Onto Something</h4>
<p>But let’s think beyond spinach ((high in Vitamin C). How about:</p>
<ul>
<li><span style="color: #3785b3;">collard greens</span>: high in beta-carotene, Vitamin C and absorbable calcium</li>
<li><span style="color: #3785b3;">kale</span>: high in iron and absorbable calcium, Vitamins A and C</li>
<li><span style="color: #3785b3;">chard</span>: ditto</li>
<li><span style="color: #3785b3;">zucchini</span>: contains beta-carotene and Vitamin C</li>
<li><span style="color: #3785b3;">peas</span>: good sources of protein, fiber and Vitamin A</li>
<li><span style="color: #3785b3;">peppers</span>: high in Vitamins A and C</li>
<li><span style="color: #3785b3;">cucumbers</span>: high in water content (hey &#8211; it all counts!)</li>
<li><span style="color: #3785b3;">asparagus</span>: high in Vitamin K and folate, good source of Vitamins A and C, potassium</li>
<li><span style="color: #3785b3;">Brussels sprouts</span>: high in beta-carotene and Vitamin C, great antioxidant</li>
<li><span style="color: #3785b3;">broccoli</span>: high in cancer-fighting antioxidants and calcium</li>
<li><span style="color: #3785b3;">cabbage</span>: like its cruciferous brethren, a great cancer-fighter</li>
<li><span style="color: #3785b3;">artichokes</span>: high in iron, fiber and potassium</li>
<li><span style="color: #3785b3;">avocados</span>: high in the healthy unsaturated fats we want to include in our diets</li>
<li><span style="color: #3785b3;">leeks</span>: good source of Vitamins A and C</li>
</ul>
<p>Almost all are low in calories and fat; high in fiber.</p>
