&lt;p&gt;&lt;u&gt;Ingredienti:&lt;/u&gt;&lt;/p&gt;
&lt;p&gt;&lt;b&gt;Pomodori secchi (questi in particolare comprati in Puglia) 500 g,&lt;br/&gt;&lt;/b&gt;&lt;b&gt;aceto di vino bianco,&lt;br/&gt;&lt;/b&gt;&lt;b&gt;basilico / timo freschi (dell’orto),&lt;br/&gt;prezzemolo fresco (dell’orto),&lt;br/&gt;peperoncino fresco (anche questo dell’orto),&lt;br/&gt;capperi (presi in Ciociaria),&lt;br/&gt;olio extravergine d’oliva (preso in Umbria).&lt;/b&gt;&lt;/p&gt;
&lt;p&gt;&lt;b&gt;&lt;br/&gt;&lt;/b&gt;&lt;u&gt;Preparazione:&lt;/u&gt;&lt;br/&gt;&lt;br/&gt;Versare in una pentola un litro di acqua e uno di aceto. Lavare i pomodori secchi, versarli nella miscela di acqua e aceto bollente e far cuocere per tre minuti da quando riprende il bollore.&lt;br/&gt;Scolarli bene e stenderli distanziati su un canovaccio pulito. Coprirli con carta assorbentre da cucina e lasciarli asciugare per un giorno.&lt;br/&gt;Tagliare a pezzetti il peperoncino, sciacquare i capperi sotto sale e pulire bene le foglie di basilico e il timo, evitando comunque che rimangano tracce di umidità.&lt;br/&gt;Mettere in un vaso pulitissimo pomodori, poi le erbe (in un vaso timo e prezzemolo e in un altro il basilico e prezzemolo), il peperoncino e i capperi, alternandoli a strati. Continuare fino al termine degli ingredienti.&lt;br/&gt;Coprire completamente di ottimo olio extravergine d’oliva, chiudere i vasi e lasciarli riposare per almeno un paio di settimane in un luogo fresco.&lt;/p&gt;

&lt;li&gt;3 uova&lt;/li&gt;
&lt;li&gt;2 tuorli&lt;/li&gt;
&lt;/ul&gt;
&lt;p&gt;&lt;b&gt;SALSA CIOCCOLATO BIANCO:&lt;/b&gt;&lt;/p&gt;
&lt;ul&gt;
&lt;li&gt;350 gr cioccolato bianco&lt;/li&gt;
&lt;li&gt;250 gr panna liquida&lt;/li&gt;
&lt;li&gt;250 gr latte&lt;/li&gt;
&lt;/ul&gt;
&lt;p&gt;&lt;b&gt;PREPARAZIONE:&lt;/b&gt;&lt;/p&gt;
&lt;p&gt;&lt;u&gt;Per il flan&lt;/u&gt;:&lt;/p&gt;
&lt;p&gt;Far sciogliere a bagnomaria il cioccolato e il burro. Battere con una frusta metallica le uova e tuorli, unire lo zucchero e la farina, precedentemente miscelati, fino ad ottenere un composto gonfio e spumoso. Aggiungere la miscela di burro e cioccolato ad una temperatura di 30°C. Versare in stampini imburrati e infarinati (stampini di 6/7 cm di diametro). Cuocere in forno a 200°C per 10 min.&lt;/p&gt;
&lt;p&gt;&lt;u&gt;Per la salsa&lt;/u&gt;:&lt;/p&gt;
&lt;p&gt;Portare latte e panna ad ebollizione e far bollire dolcemente per 2 min. Versare sopra il cioccolato bianco tritato, coprire e attendere qualche minuto. Mescolare il tutto.&lt;/p&gt;
&lt;p&gt;&lt;u&gt;Per la mise en place&lt;/u&gt;:&lt;/p&gt;
&lt;p&gt;Disporre il flan in un piatto piccolo (usare molta delicatezza nello sformare lo stampino), versare su parte del flan la salsa senza ricoprirlo totalmente, spolverare con zucchero a velo.&lt;/p&gt;
