C cubed: Suma and Jeff's South Indian thali and next event April 21st at Sheethal & Tokumbo's

Hi C Cubers!

Thanks to Suma and Jeff for hosting our last C Cubed event.
We were welcomed at the door with a fresh mango lassi. The delectable home-made menu (thanks to Suma with a little help from her mom ;) consisted of -

Tandoori style chicken appetizer
Freshly made dosa with sambar and potatoes
Vegetable pulya
Chapati
Upma
Topped off with homemade bread pudding for dessert

New C Cubers met veterans as the conversation drifted from intros to babies to the city and more. We enjoyed a spectacular view of Brooklyn from the Mandel's balcony.

**Please RSVP for our next C Cubed April 21st at Sheethal and Tokumbo's (hopefully the weather will be nice and we can hang out upstairs on the roof). We will host one of their last events before Froggie arrives! Let us know if you can bring wine or dessert.

Ariel's Pizza Parlor!

Hi C Cubers!

At Ariel's Pizza Parlour, we were amazed by Ariel's skills in making focaccia and pizza from scratch. (Check out the photo in the slideshow where he throws the dough up in the air! So professional.)

For appetizers, we had freshly made focaccia (rosemary and garlic) and (basil and sea salt) to dip into mezzes such as a warm lentil salad, eggplant, tahini with za'atar, accompanied by a delicious tomato, basil and feta salad.

After the incredibly delicious starters, we had freshly made pizza with homemade tomato sauce, eggplant, and mozzarella topped with fresh basil, straight out of the oven.

We celebrated Ariel's birthday one day early with Cakeman's famous red velvet cake while watching Marcel the Shell with Shoes On.

We'll take a hiatus for the rest of the year but stay tuned for future C Cubed events in 2012.

C Cubed "Puerto Rican Style" with Camille

Hi C Cubers!

Thanks for another increible C Cubed hosted by Camille last night.

Nuestro menu -

Pollo guisado (deliciously slow cooked since Friday - que rico!)
Ensalada de aguacate preparado (sweet and savory mix con mango)
Camaron al ajillo (tender seasoned with just the right amount of perejil)
Arroz con gandules (one with meat and one without, con raspa - the crunchy part of the rice)
Empanadas de hongo y de carne (hecho con carne de Creekstone Farms, distributed by Pat LaFrieda)
Tostones (dos vezes frito as they were always meant to be)

We also welcomed some new members (excited to have you :) -

Nanda (who knows ridiculously tall Jed)
George (who apparently holds his own fabulous dinner parties - George - how do I get an invite to the next MadMen party?)

babies (Avani is due to deliver a boy on Tuesday and she looks great. Avani, we're looking forward to welcoming our youngest member to C Cubed)

Richard's Italian pasta flight

Hi C Cubers!

Thanks to all who came out Saturday night and enjoyed Master Chef Richard's Italian pasta flight and the 2011 inauguration of the roofdeck.

Richard outdid himself again.

We started with -

decanted chianti and chilled white
a delicious insalada caprese w/ ripe red tomatoes, melt in your mouth fresh mozzarella and crisp green basil drizzled with extra virgin olive oil and aged balsamic on top
a mouth watering caponata bruschetta w/ cherries and pine nuts - just the right mix of sour, savory and sweet

Our main course was an individually plated flight of pasta -

pasta con sarde - al dente to perfection
rigatoni with mushroom ragu
plus more wine ;)

We headed up to the roof to savor our second flight and inaugurate our summer space. Jeff and Suma lounged on the couch, Jenn and Shakil on the double chaise, others sitting around the table. The lanterns and string lights added to the "summer night in the mediterranean" feel.

We became so engrossed in conversation that we never actually got around to enjoying the spaghetti with green puttanesca flight :(

But eventually we moved on to dessert, which was prepared on the roof. Ariel's simple but delicious dates w/ walnuts, handcracked in a pretty cool wooden nutcracker that Tokumbo won't let me buy. Too many kitchen gadgets, he says. (It's still going on my wishlist ;)

All in all, a fantastic night - great company, perfect weather and delectable food.

Who could ask for more?

Sheethal and Tokumbo La Costa Peruana & the next C Cubed Sun June 13th

Hi C Cubers!

Sheethal and Tokumbo were determined to share their love of Peruvian food with the C Cubed crowd. Sheethal asked friends with Peruvian connections for the best Peruvian grocery stores. She went to Jackson Heights the Friday evening before to gather Peruvian ingredients.

The C Cubed menu consisted of -

Chicha morada, a purple corn refreshment from Peru
Make your own causa, which is cylindrical stacked potato, tomato, avocado, tuna perfection topped with a boiled egg slice, botija olive, and rocoto pepper sauce (see photo slideshow to understand the beauty of this dish)
Fresh caught Fort Greene Farmer's Market local fluke ceviche, made with limón, cilantro and jalepeño
Home-made tamales steamed in corn husks, stuffed with tomato, onion, cumin and a botija olive
Soaked and boiled chuño, freeze-dried potatoes from Bolivia
Lots of wine
Cookies, chocolate cake and coffee dessert

We also welcomed new member Melissa Janis, invited by Cecily.

Photos from Chef Richard's Korean tapas feast

Chef Richard's Korean tapas fest was a huge hit! He made to order scrumptious seafood and veggie dumplings made with homemade filling and sizzling seafood and kimchi pancakes. All tapas were accompanied by a delectable homemade dipping sauce.

Although the table was set for dinner, we all huddled around the bar to watch Richard do his magic and get the goods hot off the griddle!

We drank delicious Chilean wine from Casa Lapostolle, where Jessica and Rob experienced great food, awesome wine, as well as tarantula and field mice attacks!

We discussed Kiva, Idiocracy the movie (http://www.imdb.com/title/tt0387808), generation X vs Y, common clients, and Brooklyn.

Dessert consisted of coconut/peanut and red bean mochi, red bean buns served with iced lemongrass and ginger green tea or blueberry white tea with bubbles.

Chef Rob with sous-chef Jessica started us off in 2010 in style! They treated guests to a wonderful middle eastern meal, including some amazing cheese and explosively good eggplant. Everyone who didn't attend will have to wait for the photos which our c-cubed member in absentia may upload for us later.

In the interim, mark February 20th on your calendars. Kate and Anand (I'm not sure who is chefing and who is sous-ing) will be taking us both east and west from the middle east for an Indian-Italian fusion feast.

Happy New Year!

I'm sure we've all resolved to eat more tasty, home-cooked meals in 2010. For those of you who didn't make it for Chef Kiran's tasty tilapia, penne a la vodka and Dr. Rao's world-famous dosa -- you missed out! Luckily, however, C-Cubed is back to help us keep our good eating resolution in the new year.

Jessica and Rob are hosting on Saturday the 23rd. They live on 160 East 27th Street @ 3rd Avenue.

Please let me know whether you can make it. Their menu is somewhat dependent upon numbers so help them get an approximate count this week. Given our previous two meals in their home, however, you can trust that it will be an enjoyable evening. And perhaps they will be able to show some of the photos from their end-of-year trip to Chile.

Also, please sign up now for your month. You can pick any weekend during that month. First come, first served. We also need 2 volunteers for wine and one volunteer for desert for January.

Our next C-Cubed will be hosted by Kiran on Saturday, November 14. He will rustle up a tasty traditional southern Indian meal with dosa (similar to a giant tasty savory crepe) expertly prepared by Dr. Rao (Kiran's mom), whose dosa are widely sought after by those in the know.

Please rsvp now (yes, no or maybe) so that we can begin estimating numbers. We need one volunteer for wine and one for dessert.

For those who don't have cars (including me) we can either take the 7 train to Main Street or the LIRR Pt. Washington line and get picked up from there. We're taking a break for December (there's generally no shortage of home-cooked meals in December) but Chef Jess has already signed up for January. To allow people to schedule efficiently I'm asking everyone to sign up NOW for a month in the first half of 2010. You can pick the exact weekend later but we're going to allocate the months now. First come first served, so pick your month while it's still available (and before I start assigning the remaining months).

Richard's Deconstructed Paella

Hi C Cubers!

Richard blew us away with his sophisticated Spanish cuisine.

The night started out with

Spanish wine
Spanish goat cheese and Manchego accompanied by a crusty baguette
Baccalao cakes topped with raisins, spinach and pine nuts fresh from the pan

This time we continued the cozy sit-down dinner theme we had at Charles and Mapi's. We had two tables and did a "Chinese firedrill" in between to mix up the conversation. I overheard a heated discussion about education, and participated in conversations about wildchilds and gtd apps. Fun crowd as always!

The sit down course consisted of:

More Spanish wine
Paella with yellow peppers, Spanish red peppers, snap peas and fish
The much-talked about deconstructed paella - risotto, fish with black truffle paste
Delectable caramel flan and a cafe con leche to top it off!

It was amazing to watch Richard maneuver through all those dishes with such ease. He's a professional (it's true! He did chef at a French bistro in college)

Thanks to Chef Richard and the rest of the attendees.

Unfortunately, this was my last c cubed for awhile. I hand the reins over to Tokumbo, co-founder of c cubed. You are in good hands. I look forward to reading about future c cubed events from Peru!

Charles and Mapi's Sit Down Feast and the Next Installment of C Cubed: Saturday Sept 26th at 311 Cumberland

Charles and Mapi hosted a lovely C Cubed dinner party at their house in Long Island City. This time we had a sit-down dinner with great food, great conversation and new friends!

The meal consisted of

Tostones fried, smashed and fried again and Papitas con sal
Fresh guacamole and fresh salsa with chips
Vegetable lasagna
Baked porkchops
Mixed green salad
Fresh strawberries and cheesecake
Lots of wine (even a bottle from their recent trip to Greece) and shots of Greek schnapps to top of the evening

We welcomed Kate and Anand to their first C Cubed, and just last weekend we added another member of C Cubed, their new daughter Vinaya Isadora Anand!

We also welcome two new members - Toby and Barry. They are a riot and a great addition to our C Cubed family.

After a great event in LIC, we're ready for our next culinary adventure. This time, Richard takes us to Spain, making paella and savory tapas.

Charles and Mapi, recently returned from their long overdue honeymoon to Italy and Greece, are ready to host us at their beautiful home in Long Island City.

The next C Cubed will be either Friday August 28th (preferred) or Thursday August 27th

If we do the feast on Friday August 28th, we will extend the party to water taxi beach, an outdoor beach with a gorgeous close up view of Manhattan dancing to Turntables on the Hudson with DJ's Nickodemus & Mariano + Nappy G & Christian Rogers & Duke Mushroom (Earthrise) on percussion.

Not sure how many people will be away that weekend, so to help Charles and Mapi plan, please vote for one -

Next C Cubed - Sunday, July 19th at 3 - Kiran's Fort Greene Park BBQ and Outdoor Dance Party

Hi C cubers!

This weekend we'll have a special treat. A field trip of sorts
including 3 of my favorite things -

-Hangin' out in the park (Fort Greene Park)

-BBQ (we'll roll in our portable charcoal grill and make some chicken
and veggie kebobs, burgers, etc. Feel free to bring anything you'd
like to throw on the grill)

-Dancing (on certain Sundays in the summer, there is a outdoor dance
party in Fort Greene Park called Soul Summit from 3-9. Great DJs,
great scene :)

You can also play tennis (we'll get some tennis permits) or just sit
in a captain chair and enjoy a cool beverage while listening to some
great soul.

We'll be in the park at 3 but feel free to come when you can. The
entrance is at Dekalb and Cumberland (also called Washington Park).
It's two blocks from our house. Call me to find out where we are when
you get there. 917-952-7682.

I'll bring a cooler with ice and water. As usual, we'll need
volunteers to bring wine, beer or other festive drinks and dessert!

Matt's Sizzlin' Mexican Fiesta

This week's C Cubed in Brooklyn Heights was a great success. Another gourmet chef among us! All at a beautiful apartment great for dinner parties.

Conversation got intense as we jumped right into politics with the chaos in Albany and even taking it back to Spitzer and Clinton.

Apps consisted of:

fresh salsa with touch of jalapeno for a bit of a kick
fresh guacamole
a whole lotta tortilla chips
drinks

Continuing into the night, we enjoyed some salacious conversation about professional athlete salaries and DIY home improvement. I was in awe of Rhonda's skills to install toilets and floors. And having the courage to pull the nail out after shooting herself with a nailgun. Ouch!

Dinner consisted of

Black bean salad with mango and peppers
Spinach salad with roasted peppers and pumpkin seeds, and Queso Fresco (Mexican white cheese, like feta)
Pork enchiladas
More drinks

Dessert, from a Polish bakery in Williamsburg, was an yummy mix of

apple cheesecake
cinnamon pound cake
sugar cookies with almonds and maraschino cherries

All in all, a great night in Brooklyn Heights.

The next C Cubed will be a Kiran's place. We'll carpool to Queens. Bring your tennis raquets and bathing suits. BBQ time!

Next C Cubed June 24 at Matt's

Hi C Cubers!

The next C Cubed dinner will be Wednesday June 24 starting at 7.00 PM

Matt is still "cooking up" (pun intended) the menu but I believe it will be a Mexican theme. Matt's friend Chris Pasquet will be our first guest "menu collaborator," working behind the scenes yet not attending the final event as she will be out-of-town that night. (We look forward to meeting her at a future C Cubed event.)

Red wine and beer are always welcome and Matt encourages everyone to bring at least one bottle of your drink of choice (this is going to be a serious Wednesday night drink fest!)

His apartment (affectionately called a "tree house of a home" by its resident) is 9 Montague Terrace Apartment 5A in Brooklyn Heights. Montague Terrace is to the left when you get to the bottom end of Montague Street at the promenade.

A whole lotta wine
Trio of Dulce de Leche, Chocolate and Vanilla ice cream

and some interesting conversation about the merits of social networking for dating and Josh's rant about the narcissicism of updating "friends" on every moment of your life. Plus some thoughts on identity theft.

C Cubed - Tim and Pooja's New American Seasonal

After a Halloween/election/Thanksgiving hiatus, the Cooking Club returns!
We're back for more. After refining their palates during an extended eating trip across Asia, the dynamic cooking duo of Tim and Pooja are on deck to prepare a meal of New American dishes featuring seasonal ingredients.

The meal included some fantastic recipes from the New York Times (you'll have to ask Tim to share):

savory roasted duck topped with fig reduction
braised red cabbage
roasted brussel sprouts
multicolored fingerling potatoes with figs, garlic and herbs
squash risotto
coffee flavored creme brulee
