<p>Challenge: Take inventory of the the food you have on hand. Figure out how long you could eat, not gourmet but well enough to keep healthy. Try on putting your babies to bed hungry for a week to keep you motivated during this challenge.</p>
<p>Recipe:</p>
<p>Chocolate Mousse</p>
<p>2/3 c. cocoa  3 t cornstarch, 1 can evaporated milk, 1 1/3 c. milk, 3/4 c sugar, 1/4 tsp salt, 3-6 T Ultra Gel, 1 t. vanilla</p>
<p>Combine cocoa and cornstarch in a separate bowl. Whisk the evaporated milk into the cocoa mixture until completely smooth. In a large saucepan, combine milk, sugar, and salt. Mix well. Bring to a boil over medium-high heat, whisking constantly. Remove pan from heat. Whisk cocoa mixture into hot milk mixture. Bring to a boil over medium heat; boil for 2 minutes whisking constantly. Remove pan from heat. Gradually whisk 3 T of the Ultra Gel into 1 c. of hot cocoa mixture. Pour mixture back into pan. Cook over low heat for 2 minutes, whisking constantly. If it needs more thickening, add the remaining Ultra Gel. Do not boil. Remove pan from heat. Add vanilla; blend well. Pour mousse into serving dishes. <p><strong>Recipe:</strong> Chocolate Covered Strawberries</p>
<p>Ingredients</p>
<p>16 ounces milk chocolate chips<br />
2 tablespoons shortening<br />
1 pound fresh strawberries with leaves</p>
<p>Directions</p>
<p>1. Insert toothpicks into the tops of the strawberries.<br />
2. In a double boiler, melt the chocolate and shortening, stirring occasionally until smooth. Holding them by the toothpicks, dip the strawberries into the chocolate mixture.<br />
3. Turn the strawberries upside down and insert the toothpick into styrofoam for the chocolate to cool.</p>

<p>There are ways to bring the joy into the season AND get it all done when you plan together as a family how to incorporate what makes Christmas come alive for each family member from decorations to gifts to religious activities.  Learn what Deb did to make gift giving a breeze and created lifelong memories for her family at the same time.  We expect too much from Christmas and from ourselves.  Remember, no one has the Kodak holiday – except the people who staged the photo shoots in Good Housekeeping!  Create your own special rhythm and flare that fits your family to a tee.</p>
<p>Challenge:  Don’t expect too much from Christmas.  It can’t strengthen your family, lift your spirits in winter, stimulate compassion and generosity, keep tabs on far-flung friends, confirm your deepest religious beliefs AND show off your hostess skills  at the same time.  Let the holiday evolve with your family’s individual style and do the activities you truly enjoy.  Of course that include making fudge!!!</p>

<p>Recipe:</p>
<p>No-Bake Chocolate Pie</p>
<p>7 milk chocolate candy bars chopped<br />
20 large marshmallows<br />
½ cup milk<br />
2 cups whipped topping<br />
1 graham cracker crust</p>
<p>In a heavy sauce pan, combine the candy bars, marshmallows and milk. Cook and stir over low heat until smooth. Remove from heat and cool. Fold in whipped topping and pour into crust. Cover and put in fridge for 4 hours.</p>

The best antidote to worry is action. Almost all of the worry parents feel about keeping their children safe evolves from the conflict between intuition and inaction. Learn the steps to eliminate worry, listen to intuition and how to educate your children without making them paranoid.</p>
<p>Challenge: First, when faced with some worry or uncertain fear, here are two questions you can ask.<br />
Am I responding to something in my environment or to something in my imagination?<br />
Is this feeling based on something I perceive in my circumstance, or merely something in my memory?</p>
<p>Secondly, get educated. A great place to start is the book <em>Protecting the Gift</em> by Gavin deBecker. Then educate your children.</p>

<p>2 banans<br />
1-2 T cocoa powder<br />
2 C soy milk<br />
½ tsp vanilla<br />
1T raw honey<br />
3-4 cups crushed ice</p>

			<content:encoded><![CDATA[<p>Do you ever find yourself working harder and harder and getting less and less accomplished?  Feeling rushed with no time to breathe?  Maybe what you really need is to stop and sharpen your saw.  Sharpening your saw is different than merely taking a break or even going on a vacation.  That’s just putting the saw down.  When you put down a dull blade for a while, the blade will still be dull when you pick it up again.  Sharpening your saw is an active step to hone your skills, fill your reservoir, and recharge and refresh yourself.  Join Heather and Deb and their guest, Barbara Dunbar, Baby Boomer Coach and Realtor, as they discuss how Barbara sharpened her saw and the difference that has made in her daily life and for her future.</p>
<p>Challenge:  What does Sharpening Your Saw look like in your life? Here are some ideas: take a class, join a club, meditate, exercise, write, organize your home or office, go on a date with your sweetheart, improve your food plan, or have a deep and meaningful conversation.  Sharpening your Saw is not a once in a lifetime event – or even an annual event.  It can be daily or at least weekly – a time to stir your soul and give strength to your spirit.  Do it and do it often!</p>
<p>Recipe:<br />
Nonfat Chocolate Sauce<br />
Serve this chocolate sauce over fresh fruit, a frozen dessert, or a slice of bread. It will satisfy your most intense chocolate craving.<br />
Yield: 8 servings<br />
1/2 cup skim milk</p>
<p>1 tablespoon strong brewed coffee (optional)</p>
<p>1/2 teaspoon cornstarch</p>
<p>1/4 cup unsweetened cocoa powder</p>
<p>1/4 cup brown sugar</p>
<p>In a small saucepan, combine the milk, coffee, and cornstarch and stir until the cornstarch dissolves. Stir in the cocoa and brown sugar and bring to a simmer over medium heat. Cook for about 5 minutes, stirring, until the sauce thickens and is no longer cloudy. Set aside to cool. Use when cool or cover and refrigerate for up to 2 days.<br />
Per Serving: 31 calories</p>

There are many activities that your kid can do besides the traditional sports like basketball and football. For example, skiing, snowboarding, rowing, mountain climbing, biking, lacrosse etc. Other benefits for putting your children is sports is that your children learn how to interact with others and to work together as a team. They also learn how to fail in a controlled environment.</p>

<p>Challenge: Start of daily Gratitude Journal. Get a beautiful notebook and a pen you love to write with and jot down a few things each day you can be grateful for. This simple task will change your life.</p>

<p>Brookies- by Leslie Knecht</p>
<p>Fudge Brownie Mix<br />
Sugar Cookie Mix<br />
Caramels<br />
Milk</p>
<p>Mix up the brownie and cookie mixes in separate bowls. Grease a 9&#215;13 pan. Pour in the brownie mix. Drop the cookie mix by big spoonfuls over the brownies. Bake following instructions on brownie box. Unwrap and melt caramels, mix in 2-3 T milk and stir until smooth. Pour caramel over cooled brownie/cookie mix. Serve alone or with ice cream. YUM!</p>

Using a fork, vigorously mix Cool Whip, cream cheese and Splenda until smooth and well blended.  Evenly distribute mixture into 10 sections of an ice cube tray.  Tap tray firmly on the counter a few times to get mixture to settle flat.  Next, top each with a teaspoon of chocolate syrup.  Tap tray again to settle.  Place tray in freezer until Bites are solid &#8211; at least 2 hours.  Once frozen, Cheesecake Bites should pop out easily (if not, run the bottom of the tray under the faucet for a few seconds to loosen them).  Makes 10 Bites!</p>

<p>Challenge:  Gather things that give you a lift and place them in a drawer or box to bring out when you are sick or under the weather.  Include a favorite movie, a yummy chocolate, special notes from people in your life, a deck of cards, a special poetry book, scented lotion, a candle, soft bedsocks, and anything else that lifts your body, mind, and soul.  Add things to this collection when you are drawn to something that nurtures you.  And keep the chocolate well stocked!</p>

			<content:encoded><![CDATA[<p>You have one constant address – the house you live in – your body.  Your body is the tool through which you do your life’s work.  How well are you keeping up on your “house work” and how are you taking care of your most important “tool”?  Heather and Deb explore the reasons we all know more than we do when it comes to caring for our bodies.  Eating was planned to be one of life’s sublime simple pleasures.  But if hunger is not the problem, eating is not the solution.  Hear some strategies for small changes that will help you eat when hungry, sleep when tired, and nurture yourself in healthy, fun ways that an M n M couldn’t hope to do for you!</p>
<p>Challenge:  Make small healthy changes and add new ones each week.  A power nap, drinking 6 glasses of water/day, switch to butter spray, try a new healthy food like quinoa or Greek yogurt, join a club that calls to you, take a class you’ve always wanted to try.</p>
<p>Chocolate Recipe:  Painted Apricots</p>
<p>½ cup finely chopped pistachios<br />
6 ounces semi-sweet chocolate chips<br />
24 dried apricots</p>
<p>Melt the chocolate in a glass bowl.  Hold apricots from one end and dip them one at a time into the chocolate, coating about ¾ of the apricot.  Dip the tip of the apricot into the chopped pistachios.   Place on a waxed paper coated cookie sheet and let set about 1 hour.  Can be stored in a container separated by waxed paper about 2 weeks in the fridge.</p>

Chocolate Crepes, Johnson Style</p>
<p>1 can CHOCOLATE sweetened condensed milk<br />
1 C flour<br />
6 eggs<br />
½ tsp salt<br />
add water to desired consistency</p>
<p>Mix all ingredients in a blender of kitchenaid mixer.<br />
Pour, eat with coolwhip or powdered sugar sprinkled on top.<br />
Makes 8-10</p>

			<content:encoded><![CDATA[<p>Deb and Heather teach you how to walk emotionally with others when they bring their problems to you.  Learn the two words to avoid and the three magic words that will help people in your life feel listened to, understood, and supported.  It’s that easy – in five words you can open up lines of communication that may have been shut down for years, deepen your relationship with loved ones AND show your support and confidence in their ability to find the solutions perfect for their own lives.  Totally Win/Win!!!</p>
<p>Challenge of the Week: When anyone brings a problem to you this week, be most eloquent and respond with “Oh”, move on to “Hmmm” and end with “Wow”.  See how much more understood everyone will feel in your presence.  And remember:  NO “Buts” about it and never ask “Why”.</p>
<p>Recipe:  Chocolate Fondue – warm chocolate brings out the flavor even more!</p>
<p>For a really fast chocolate fix, break a bar of good quality chocolate into pieces and put into a microwave-safe bowl or measuring cup (a small Pyrex bowl is great). Melt the chocolate completely, stirring periodically until it is smooth. You can dip strawberries, apple or banana chunks, cubes of pound cake, brownie chunks, pretzels, or marshmallows into the chocolate for an impromptu fondue.</p>

			<content:encoded><![CDATA[<p>Do you fit everyone into your schedule – except you?  Remember the oxygen mask instructions on the airplane – put your mask on first before you help someone traveling with you.  Why?  You are no good to anyone passed in the seat next to them!  You can’t pour from an empty pitcher.  God never meant for you not to get any of your own birthday cake.  He’s watching with great interest to see how you enjoy the blessings he creates for you every day – blessing for you, not just blessings to channel through you to others.  Just for you. Time for you, solitude to enjoy being born to this fabulous life.</p>
<p><strong>Challenge of the week:</strong> Plan and carry out a 10-15 mini-vacation just for you several days this week.  Observe how your day goes.  The unexamined life is not worth living.  Examine yours today!</p>

<p>Personal Mug Triple Chocolate Cake   123 Calories and 2 Weight Watcher Points</p>
<p>2 TBSP Pillsbury Moist Supreme Reduced Sugar Devil’s Food Cake Mix<br />
2 TBSP Cool Whip Free, thawed<br />
1 TBSP FatFree Vanilla Yogurt<br />
1 TBSP FatFree Sugar Free Chocolate Syrup</p>
<p>Stir Cool Whip and ½ the syrup and place in the freezer.  In a mug sprayed with cooking spray, mix cake mix and yogurt until smooth.  Microwave on high for 1 minute.  Cool for 5 minutes.  Spread chocolate mixture from freezer on cake and drizzle the rest of the syrup on top.  ENJOY!!</p>

Hear Carolyn’s story of losing herself in the “perfect life” and finding herself again as she creates a life of joy not perfection.</p>
