		<description>Perhaps, as in the comments for your post, what you had wasnt actually brisket - you can see how mine seems thinner than yours.  Mine was certainly nothing fancy at all. It was brined as you would for any corned beef at some manufacturing facility lord knows where.

I have actually had brisket turn out as you describe after simmering in a pot for a day. 

I dont get why there is such inconsistency - try again with my settings? I cross my fingers for you.</description>
