PREP TIME: 15 Min
COOK TIME: 45 Min
READY IN: ~ 1 Hr
SERVINGS: 10

INGREDIENTS FOR BANANA CAKE

    * 3 cups all-purpose flour
* 1 1/4 tsp. baking powder
* 1 1/4 tsp. baking soda
* 1/2 tsp. salt
* 2/3 cup shortening
* 1 1/2 cups sugar
* 2 eggs, separated
* 4 mashed bananas
* 1 cup milk

INGREDIENTS FOR CREAM CHEESE FROSTING

    * 1 pkg (8 oz) cream cheese, softened
* 1/4 cup butter, softened
* 4 cups confectioners’ sugar
* 1 tsp. vanilla
* dash salt

DIRECTIONS

1. Preheat the oven to 350°F.

2. Glaze 9 x 13 inch baking pan with a small amount of oil and evenly distribute some flour on it. Flip over and tap to remove all loose flour.

3. In a large bowl, cream shortening and sugar until light and fluffy.

4. Stir in egg yolks one at a time, beating well after each addition.

5. Add bananas and milk and mix until just combined.

5. In another bowl, mix in the flour, baking powder, baking soda and salt.

6. Add to the creamed mixture and beat the overall mix for 2 minutes.

7. In another bowl, beat egg whites and fold it into the batter.

8. Cook for around 45 minutes, check it after 30, and then 5 minutes after.

9. Check if the cake is ready by inserting a toothpick. If it comes out clean, it’s ready to be taken out of the oven.

10. To make the cream cheese frosting, beat cream cheese and butter in a large bowl until fluffy.

11. Add the confectioners’ sugar, vanilla and salt and stir it well until smooth.

12. Spread the frosting over the cake evenly and store in the refrigerator before serving.

Here’s an oatmeal banana bread recipe I found on the net. The oatmeal gives it a nice wholesome texture.

PREP TIME: 20 Min
COOK TIME: 50 Hr
READY IN: 1 Hr 10 Min
SERVINGS: 10

INGREDIENTS

* 1 1/4 cup all-purpose flour
* 1/2 cup unpacked brown sugar
* 1/2 tsp table salt
* 1/2 tsp baking soda
* 1/4 tsp baking powder
* 1 large egg, beaten
* 3 tsp canola oil
* 2 medium egg whites, beaten
* 3 large ripe bananas
* 1 cup uncooked old fashioned oats

DIRECTIONS

1. Preheat oven to 350F.

2. Spray the 9×5 inch loaf pan with flour-added cooking spray. Otherwise you can also choose to grease the pan.

3. In a large bowl, mix together all-purpose flour, brown sugar, table salt, baking soda and baking powder.

4. Stir in the canola oil and eggs into the bowl.

5. In a separate bowl, mash bananas with a potato masher or fork. Thereafter add bananas and oatmeal to the batter.

6. Pour batter into the loaf pan and bake it for about 45 to 50 minutes. Use a toothpick or cake tester and insert in the middle. If it comes out clean your banana bread is ready.

7. Allow the loaf to cool in the loaf pan for 10 minutes before removing from the pan and allowing to cool fully on a wire rack.

    * 1 tsp pure vanilla extract
* 2 large eggs, lightly beaten
* 3/4 cup granulated sugar
* 1/4 tsp baking soda
* 1 tsp baking powder
* 1/4 cup (4 Tbsp) unsalted butter, melted and cooled
* 1/4 tsp salt
* 1/4 cup Dutch-processed cocoa powder
* 1/2 cup white chocolate chips (any chocolate here would be fine)
* 3 ripe bananas, mashed well (about 1-1/2 cups)
* 1/2 cup walnuts, coarsely chopped

DIRECTIONS

1. Preheat the oven to 350°F.

2. Coat a 4×8 inch loaf pan with butter to grease it.

3. Place the walnuts on a baking sheet and bake for about 8–10 minutes until lightly toasted. Let it cool then and then chop coarsely (be sure to leave a few aside for garnishment).

4. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.

5. In a medium-sized bowl, mash bananas. Add eggs, melted butter, and vanilla into the bowl.

6. With a rubber spatula, lightly fold the banana mixture into the dry ingredients until just combined and batter is thick and chunky.

7. Fold in the pecans and chocolate chips.

8. Pour batter in prepared loaf pan garnish with whole pecans.

9. Bake for about 1 hour. Check if the loaf is ready by inserting a toothpick after 50 minutes. If it comes out clean, it’s ready to be taken out of the oven.

10. Place on a wire rack to cool and then remove the bread from the pan. Serve warm or at room temperature.

Sorry for the lack of updates recently, been too busy during the holidays season :S.
Here’s a really interesting recipe to kick off the new year!

PREP TIME: 25 Min
BAKE TIME: 1 Hr
READY IN: ~ 1 Hr 25 Min
SERVINGS: 12

INGREDIENTS FOR THE BREAD

    * 2 cups flour
* 3/4 tsp baking soda
* 1/2 tsp salt
* 1 cup sugar
* 1/4 cup softened butter
* 2 eggs
* 1/2 tsp vanilla extract
* 1/4 cup sour cream (low fat)
* 3 ripe smashed bananas
* 3 tbsp dark rum (apple juice will work if you prefer it non-alcoholic)
* 1 lime zested
* 1/2 cup flaked coconut

INGREDIENTS FOR THE GLAZE

    * 1/2 cup powdered sugar
* 2 limes worth of juice

DIRECTIONS

1. Preheat the oven to 350°F.

2. Coat a 4×8 inch loaf pan with butter to grease it.

3. Beat butter and sugar until well combined. Add bananas, sour cream, rum, vanilla and the zest of a lime (use the smallest holes on a grater to get just the bright green part off the lime) and combine well.

4. Add flour, soda and salt and mix well. Stir in in 1/3 cup of the coconut while saving a little for the top.

5. Pour the mix into prepared pan and sprinkle the top with the remaining coconut.

6. Bake for about 1 hour. Check if the loaf is ready by inserting a toothpick. If it comes out clean, it’s ready to be taken out of the oven.

7. While the bread is baking, get all the juice from 2 juicy limes (you can use more for a more zesty taste). Add powdered sugar and whisk together. To avoid the powdered sugar being lumpy, run it through a sieve first.

8. When the bread is done, let it cool in the pan for about 10 minutes. Place it on a cookie sheet with edges, lined with aluminum foil, so your juice isn’t going to run off onto the counter. Use a fork or toothpick to make a few holes over the warm bread before pouring the glaze on top. Let it sit for a while to absorb the glaze.

9. Remove the banana bread from the glaze pan and serve!

    * 1/2 Cup Milk
* 1 Teaspoon Baking Powder
* 1 Teaspoon Baking Soda

4. In a large bowl, mix the eggs, vegetable oil, and milk together for about a minute.

5. Add the rest of the ingredients: raisins, chocolate, or coconut, then add the banana mash and stir thoroughly for about 3 minutes to obtain an even mix.

6. Pour the whole mix into the cake tin and place it into the oven.

7. Cook for around 45 minutes, check it after 30, and then 5 minutes after.

This is a pretty sinful recipe, so it’s not for the faint hearted! You can actually make use of any banana bread recipe on the site and add cream cheese glaze to it.

PREP TIME: 20 Min
COOK TIME: 60 Min
READY IN: 1 Hr 20 Min
SERVINGS: 12

INGREDIENTS FOR BANANA BREAD

* 2 cups flour
* 3/4 cups white sugar
* 3/4 teaspoon baking soda
* 3 ripe mashed bananas
* 1/4 cup sour cream
* 1/4 cup vanilla yoghurt
* 1/2 cup butter
* 1 tablespoon vegetable oil
* 1 cup chopped walnuts

DIRECTIONS

1. Preheat your oven to 350F. Lightly grease and flour a loaf pan.

2. Mix together the flour, sugar and baking soda. Add walnuts. Coating them with flour should help to stop them from falling to the bottom of the mixture.

3. In another bowl, mix the mashed bananas, sour cream, yoghurt, butter and vegetable oil. Beat together with a whisk until light and fluffy.

4. Slowly add in the dry ingredients and mix just enough so that the mixture remains fairly fluffy.

5. Pour the mixture into the prepared loaf pan and bake for around 1 hour at 350F. Insert a toothpick or sharp knife into the middle to check it is done. When it is ready the toothpick or knife should come out completely clean.

6. Allow the loaf to cool in the loaf pan for 10-15 minutes before removing and placing on a wire rack to cool fully.

INGREDIENTS FOR CREAM CHEESE GLAZE

* 4 ounces of cream cheese, softened
* 3 tablespoons powdered milk
* 6 tablespoons water
* 2 cups icing sugar
* 1 teaspoons vanilla extract

DIRECTIONS

1. Add all the ingredients for the cream cheese glaze into a mixture, gradually adding the sugar to form the glaze.

2. Drip the glaze over the banana bread and enjoy!
