&lt;ul&gt;

&lt;li&gt;&lt;strong&gt;&lt;span style="text-decoration: underline;"&gt;H&lt;/span&gt;elp&lt;/strong&gt; your family find safe ways &amp;amp; places to celebrate the occasion. Start with costumes--chose re-usable, non-flammable items (safe, frugal and environmentally aware). Use a small amount of healthy &lt;a href="http://www.drlisabelisle.com/2007/08/childrens-health-and-the-paraben-paradox.html"&gt;paraben&lt;/a&gt;-free makeup instead of a mask.&amp;#0160; Wear reflective clothing and carry a flashlight (preferably one that can be used again).&amp;#0160; Walk in large groups and ALWAYS know where your children are--even the older ones.&amp;#0160; Consider throwing a Halloween gathering or attending one sponsored by a local community group if you are unfamiliar with your area.&lt;/li&gt;
&lt;/ul&gt;
&lt;ul&gt;
&lt;li&gt;&lt;strong&gt;&lt;span style="text-decoration: underline;"&gt;H&lt;/span&gt;ave&lt;/strong&gt; a good meal before Halloweening. Kids will likely be excited, so
make the occasion festive with special, nutritious treats such as
brightly colored veggies &amp;amp; hummus, cut fruit, veggie nachos or mini
sandwiches.&amp;#0160; Kids who eat well before roaming will be in much better
moods and everyone will be happier--plus it will cut down on
pre-bedtime treat snacking.&lt;/li&gt;
&lt;/ul&gt;
&lt;ul&gt;
&lt;li&gt;&lt;strong&gt;&lt;span style="text-decoration: underline;"&gt;H&lt;/span&gt;and&lt;/strong&gt; out healthy treats and enjoy the ones you receive moderately. Try non-candy eats, such as pretzels or other bagged snacks.&amp;#0160; When looking for sweets, consider those flavored with fruit juice (We found some &lt;a href="http://www.yummyearth.com/"&gt;Yummy Earth&lt;/a&gt; gummies &amp;amp; lollies at &lt;a href="http://www.wholefoodsmarket.com/"&gt;Whole Foods&lt;/a&gt;).&amp;#0160; Consider going food-free entirely with pencils, stickers or other small toys--watch out for potential choking hazards for children under two.&amp;#0160; When your children return home, be sure to inspect their eats to make sure the packaging remained intact.&amp;#0160; Consider decreasing the candy load through a program such as Dr. Michelle Shems&amp;#39; candy buy back program in Falmouth.&amp;#0160; FMI, call &lt;span class="mphone"&gt;781-5655.&lt;/span&gt;&lt;/li&gt;

Rosemont Market on Munjoy Hill in Portland, and &lt;a href="http://www.rrnf.com"&gt;Royal River Natural Foods&lt;/a&gt; in Yarmouth. &lt;/p&gt;&lt;p&gt;This week&amp;#39;s local &lt;a href="http://www.BOUNTIFUL-BLOG.COM/2009/09/gratitude-saturday-bountiful-eating-assigment.html.html"&gt;bountiful basket&lt;/a&gt; o&amp;#39; fun showcased Rosemont:&lt;/p&gt;

&lt;ul&gt;
&lt;li&gt;a locally grown mini-pumpkin, garlic, cranberries, and cucumbers,&lt;/li&gt;
&lt;li&gt;Delicata squash from Black Kettle Farm,&lt;/li&gt;
&lt;li&gt;Black Turtle beans from Exeter,&lt;/li&gt;
&lt;li&gt;and Jalepeno peppers from Jordan Farm (Cape Elizabeth).

<content:encoded>&lt;p&gt;This time of year is perfect for the savory combination of wild rice and winter squash.&amp;#0160; The apricots lend a bit of sweet, which is nicely accented by the crunch of the pecans.&amp;#0160; Adding the chickpeas for protein makes it a reasonable main course, especially when served on a bed of steamed greens.&lt;/p&gt;&lt;p&gt;Consider having this be a part of your Thanksgiving meal--and let me know what you think!&lt;/p&gt;&lt;p&gt;&lt;strong&gt;Wild Rice with Apricots, Pecans &amp;amp; Winter Squash&lt;/strong&gt;&lt;/p&gt;&lt;ul&gt;
&lt;li&gt;2 Tbsp chopped dried apricots&lt;/li&gt;
&lt;li&gt;1 cup wild rice (we use Lundberg organic)&lt;/li&gt;
&lt;li&gt;1 tbsp extra virgin olive oil&lt;/li&gt;
&lt;li&gt;1 shallot, peeled and diced&lt;/li&gt;
&lt;li&gt;2 cloves of garlic, peeled and minced&lt;/li&gt;
&lt;li&gt;2 carrots, washed, peeled and diced&lt;/li&gt;
&lt;li&gt;2 celery stalks, washed and diced&lt;/li&gt;
&lt;li&gt;1/2 tsp ground sea salt&lt;/li&gt;
&lt;li&gt;1 cup low sodium vegetable broth&lt;/li&gt;
&lt;li&gt;1 cup water&lt;/li&gt;
&lt;li&gt;1 Tbsp fresh rosemary, finely chopped&lt;/li&gt;
&lt;li&gt;1 cup winter squash, cut into 3/4 inch cubes (acorn, butternut and buttercup squash work well)&lt;/li&gt;
&lt;li&gt;1 cup canned chickpeas, rinsed well&lt;/li&gt;
&lt;li&gt;2 Tbsp pecans, toasted and chopped&lt;/li&gt;
&lt;li&gt;¼ teaspoon black pepper, or more to taste&lt;/li&gt;
&lt;li&gt;additional salt, to taste&lt;/li&gt;
&lt;/ul&gt;
&lt;p&gt;Soak apricots in a cup of water for at least an hour--ideally overnight.&amp;#0160; Soaking rice overnight is also recommended, though not necessary if time is an issue.&lt;/p&gt;&lt;p&gt;Heat olive oil in a large saucepan with a tightly fitting lid.&amp;#0160; Saute shallots and garlic in the oil, stirring frequently until shallots are translucent--approximately 3-5 minutes.&amp;#0160; Add carrots and celery.&amp;#0160; Sprinkle with salt.&amp;#0160; Cook until just tender, about 5-7 minutes. &lt;/p&gt;&lt;p&gt;Add broth, water, rosemary and squash.&amp;#0160; Drain apricots and add these as well. Bring mixture to a boil.&amp;#0160; Stir once and cover with lid.&amp;#0160; Reduce to simmer.&amp;#0160; Cook 30 minutes.&amp;#0160; Stir in chickpeas. Cook an additional 10-20 minutes, or until chickpeas are warm and all water is absorbed from the rice.&lt;/p&gt;&lt;p&gt;Fold in pecans.&amp;#0160; Season with pepper and salt. This year I uncovered a bounty in Deering Oaks Park during my final Farmers&amp;#39; Market foray, and shared them with the girls on our 7-8 year old soccer team at our end-of-season celebration.&amp;#0160; &lt;/p&gt;&lt;p style="font-family: Georgia;"&gt;~Foliage of unparalleled brilliance, which greeted me upon my return from Virginia.&amp;#0160; The week arrived cloaked in a glory of scarlet and gold, and has slowly shed this celebratory garment to reveal a more solemn, yet classically beautiful burnt-umber.&lt;/p&gt;&lt;p style="font-family: Georgia;"&gt;~Friends like my artistic, Doc-walking, office optimizing, cooking-class assisting, Yeti-walking, breast cancer striding chum, Rhonda, who is blessed to call today her birthday. It is inexpensive--we bought ours for $1.39 a pound--and in fact is often used for bird food.&amp;#0160; &lt;br /&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="text-decoration: none;"&gt;&lt;/span&gt;&lt;span style="text-decoration: none;"&gt; The key to cooking &lt;/span&gt;&lt;a href="http://en.wikipedia.org/wiki/Millet"&gt;millet&lt;/a&gt;&lt;span style="text-decoration: none;"&gt; is the washing/pre-roasting process.&amp;#0160; Some people soak it, and our recipe reflects this.&amp;#0160; Another important consideration is the fluid to grain ratio.&amp;#0160; Ours is 3:1.&amp;#0160; Some people use 5:2.&amp;#0160; We found that &lt;/span&gt;&lt;a href="http://en.wikipedia.org/wiki/Millet"&gt;millet&lt;/a&gt;&lt;span style="text-decoration: none;"&gt; cooking can be tricky at first--too much water and it comes out mushy.&amp;#0160; Too little and it remains chewy.&amp;#0160; As with all grains, practice makes perfect.&lt;br /&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="text-decoration: none;"&gt;&lt;a href="http://aerieriver.typepad.com/.a/6a00e5508c4bdf88330120a6195ff3970b-pi" style="float: right;"&gt;&lt;img alt="IMG_1788" class="asset asset-image at-xid-6a00e5508c4bdf88330120a6195ff3970b " src="http://aerieriver.typepad.com/.a/6a00e5508c4bdf88330120a6195ff3970b-320wi" style="margin: 0px 0px 5px 5px;" /&gt;&lt;/a&gt; Thank you to our friend, Rhonda, who has proven to be an invaluable cooking class assistant.&amp;#0160; She is responsible for the class pictures you see posted here.&lt;br /&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="text-decoration: none;"&gt;We enjoyed spending time with

&lt;li&gt;1 cup millet&lt;/li&gt;
&lt;li&gt;1 cup apple cider&lt;/li&gt;
&lt;li&gt;2 tablespoons chopped dried apple&lt;/li&gt;
&lt;li&gt;2 tablespoons raisins&lt;/li&gt;
&lt;li&gt;2 tablespoons chopped dates&lt;/li&gt;
&lt;li&gt;2 tablespoons chopped, toasted walnuts&lt;/li&gt;
&lt;li&gt;1/2 teaspoon cinnamon&lt;/li&gt;
&lt;li&gt;1/4 teaspoon salt&lt;/li&gt;
&lt;li&gt;1 cup rice milk&lt;/li&gt;
&lt;li&gt;approximately 1 cup water&lt;/li&gt;
&lt;li&gt;2 tablespoons maple syrup&lt;/li&gt;
&lt;li&gt;Optional: ground flax, sesame seeds, chia seeds, fresh fruit.&lt;/li&gt;
&lt;/ul&gt;
&lt;p&gt;Rinse millet and soak overnight.&amp;#0160; Remove all water from millet.&amp;#0160; Toast millet over medium heat, stirring constantly until fragrant and golden brown.&lt;/p&gt;&lt;p&gt;Place the apple, raisins, dates &amp;amp; walnuts in a bowl.&amp;#0160; Cover with apple cider and allow to soak for at least an hour.&amp;#0160; &lt;/p&gt;&lt;p&gt;Strain soaked fruit and nuts out of apple cider.&amp;#0160; Add enough water to remaining cider to make 2 cups of liquid.&amp;#0160; Bring this liquid and rice milk to a boil. Add millet, cinnamon and salt. Lower heat, cover and simmer for 30 minutes (until water is completely absorbed). Institute of Allergy and Infectious Diseases&lt;/a&gt;, one out of every ten
Americans has difficulty digesting milk and milk products. As we
discussed in a previous “Three-fer Tuesday” health segment with Ray
Richardson &amp;amp; Ted Talbot on &lt;a href="http://www.wlobradio.com"&gt;WLOB&lt;/a&gt; 95.5 FM, many other individuals are allergic or sensitive to common foods such as shellfish, nuts, eggs and wheat. &lt;/p&gt;&lt;p&gt;I addressed this topic in the September/October 2009 issue of Parent
&amp;amp; Family newspaper, in the article&amp;#0160; &lt;a href="http://www.drlisabelisle.com/2009/09/food-sensitivities.html"&gt;Food Sensitivities &amp;amp;
Stress: School Stomachaches, Headaches and Other Brain-Gut Syndromes&lt;/a&gt;.&amp;#0160; After
posting this on Facebook, several friends (including my friend, Amy,
and Beth George of the &lt;a href="http://www.speltrightbaking.com/"&gt;Spelt Right Bakery&lt;/a&gt; commented that food ADDITIVES were
another potential problem.&lt;/p&gt;&lt;p&gt;Given the importance of the issue, we
discussed several common additives in this week&amp;#39;s Three-fer Tuesday
conversation with Ray, Ted and guest co-host, Joe Bruno, including:&lt;/p&gt;&lt;ul&gt;
&lt;li&gt;Mono
sodium glutamate (MSG), which is added to foods as a flavor enhancer.&amp;#0160;
This may cause flushing, a sensation of warmth, headaches, chest
discomfort and feelings of detachment.&amp;#0160; Look for MSG in Asian food,
instant drink mixes, packaged soups.&lt;/li&gt;
&lt;/ul&gt;
&lt;ul&gt;
&lt;li&gt;Sulfites, which are
preservatives that can also occur naturally.&amp;#0160; These can irritate the
lungs, especially among people with asthma.&amp;#0160; People with sulfur
allergies are usually sulfite sensitive. Look for sulfites in dried
fruits, meats, fruit juice concentrates and wine.&lt;/li&gt;
&lt;/ul&gt;
&lt;ul&gt;
&lt;li&gt;Tartrazine, also
known as FD&amp;amp;C Yellow# 5 - E102, which is a food dye linked to
asthma and allergies, thyroid tumors, chromosomal damage. People with
aspirin allergies are frequently sensitive to this product.&lt;/li&gt;
&lt;/ul&gt;
&lt;ul&gt;
&lt;li&gt;FD&amp;amp;C
Yellow# 6 - E110, which is another food dye linked to allergies,
hyperactivity, kidney tumors, chromosomal damage, indigestion and
abdominal pain. &lt;/li&gt;
&lt;/ul&gt;
&lt;p&gt;For listeners/readers who may be worried about a possible food or food
additive sensitivity, I suggest keeping a “&lt;a href="http://www.BOUNTIFUL-BLOG.COM/mmm-dr-lisas-three-m-food-sensitivity-journal-for-adults.html"&gt;Food Sensitivity Journal&lt;/a&gt;.”&amp;#0160; &lt;/p&gt;Think food additives may be causing you distress? Focus on whole,
unprocessed foods, such as the ones Kevin &amp;amp; I will be cooking in
our next cooking class (see the blog sidebar for more information).&amp;#0160;

weekly &lt;a href="http://www.BOUNTIFUL-BLOG.COM/2009/09/gratitude-saturday-bountiful-eating-assigment.html.html"&gt;bountiful basket&lt;/a&gt; o&amp;#39; fun.&amp;#0160; This week our veggies came from the
Rosemont Market in Yarmouth.&lt;br /&gt;&lt;p&gt;Joe Bruno was especially interested in the Red Bor kale
from Jordan Farm in Cape Elizabeth.&amp;#0160; His wife apparently uses kale in a

your doctor gave you regarding an important laboratory test?&amp;#0160; Due to
low literacy levels, &lt;a&gt;26% of American adults&lt;/a&gt; (1 person out of 4) struggle with these situations. In recognition of this important problem, last week&amp;#39;s Three-fer Tuesday health conversation with Ray
Richardson &amp;amp; Ted Talbot on &lt;a href="http://www.wlobradio.com"&gt;WLOB&lt;/a&gt; 95.5 FM/WPME TV covered the &amp;quot;Three Ls of Health Literacy.&amp;quot;&lt;/p&gt;

&lt;p&gt;As the medical advisor to the statewide &lt;a href="http://www.raisingreaders.org"&gt;Raising Readers&lt;/a&gt; program, I have a special interest in literacy.&amp;#0160; Our program has been making books available to Maine children, ages 0-5, for almost a decade.&amp;#0160; We have distributed more than a million books through well child visits at pediatric provider offices.&lt;/p&gt;

&lt;p&gt;Here are the &amp;quot;Three Ls of Health Literacy:&amp;quot;&lt;/p&gt;

&lt;p&gt;For more Wednesday fun, remember to attend tomorrow&amp;#39;s 7th Annual &lt;a href="http://www.BOUNTIFUL-BLOG.COM/2009/10/dinner-at-the-garden.html"&gt;Yarmouth Community Garden Harvest Dinner&lt;/a&gt;.&amp;#0160; My friend, &lt;a href="http://www.BOUNTIFUL-BLOG.COM/2008/01/i-love-that-foo.html"&gt;Marjorie&lt;/a&gt;, tells me that the &lt;a href="http://www.BOUNTIFUL-BLOG.COM/2008/04/building-commun.html"&gt;YCG&lt;/a&gt;&lt;/p&gt;&lt;blockquote&gt;&lt;p&gt;&lt;font face="Arial" size="2"&gt; &lt;em&gt;had a good year, despite all that rain and 
gloom in June and July and then losing ALL of our tomatoes to late blight (that 
was a real bummer). But still we&amp;#0160;rented 145 plots (we started with only 
25&amp;#0160;six years ago!), taught children about &lt;span class="yshortcuts" id="lw_1255475743_6"&gt;organic gardening&lt;/span&gt; and compost and 
pests and bees and all kinds of good stuff in the Garden Explorers program, and 
most important, have distributed close to 2000 pounds of vegetables to seniors 
and &lt;span class="yshortcuts" id="lw_1255475743_7" style="border-bottom: 1px dashed #0066cc; cursor: pointer;"&gt;local food pantries&lt;/span&gt;. &lt;br /&gt;&lt;/em&gt;&lt;/font&gt;&lt;/p&gt;

This number includes my friend, &lt;a href="http://www.megwolff.com"&gt;Meg Wolff&lt;/a&gt;, my grandmother, one of my favorite patients, two of my neighbors and two of my son&amp;#39;s friends&amp;#39; mothers--four of whom were diagnosed in the last two years.&amp;#0160; Last year I marked &lt;a href="http://www.nbcam.org"&gt;National Breast Cancer Awareness Month&lt;/a&gt; with &lt;a href="http://www.drlisabelisle.com/2008/10/arms-legs-and-breast-cancer-awareness.html"&gt;an article written for Switch&lt;/a&gt;, called &amp;quot;&lt;a href="http://www.drlisabelisle.com/2008/10/arms-legs-and-breast-cancer-awareness.html"&gt;Arms, Legs and Breast Cancer Awareness&lt;/a&gt;.&amp;quot;&amp;#0160; &lt;/p&gt;&lt;p&gt;This year I recognized this important observance with Ray Richardson and Ted Talbot on &lt;a href="http://www.wlobradio.com"&gt;WLOB&lt;/a&gt;, as we discussed the &amp;quot;ABCs of &lt;a href="http://www.nbcam.org"&gt;National Breast Cancer Awareness Month&lt;/a&gt;.&amp;quot;&amp;#0160; Ray remembered that cruciferous vegetables such as cauliflower (see below) and
Brussels sprouts (see last week&amp;#39;s &lt;a href="http://www.BOUNTIFUL-BLOG.COM/2009/09/gratitude-saturday-bountiful-eating-assigment.html.html"&gt;bountiful basket&lt;/a&gt;) are cancer-preventive.&amp;#0160; &lt;/p&gt;&lt;p&gt;Ray also remembered that he loves bell peppers, which he ate raw from the basket during the break.&lt;/p&gt;
&lt;p&gt;In addition to cauliflower and baby bell peppers, this week&amp;#39;s local &lt;a href="http://www.BOUNTIFUL-BLOG.COM/2009/09/gratitude-saturday-bountiful-eating-assigment.html.html"&gt;bountiful basket&lt;/a&gt; o&amp;#39; fun showcased:&lt;/p&gt;

<content:encoded>&lt;p style="text-align: center;"&gt;&lt;a href="http://aerieriver.typepad.com/.a/6a00e5508c4bdf88330120a5d5b0a2970b-pi" style="display: inline;"&gt;&lt;img alt="IMG_2580" border="0" class="asset asset-image at-xid-6a00e5508c4bdf88330120a5d5b0a2970b " src="http://aerieriver.typepad.com/.a/6a00e5508c4bdf88330120a5d5b0a2970b-500pi" title="IMG_2580" /&gt;&lt;/a&gt;&lt;/p&gt;&lt;p&gt;Eleanor Roosevelt said, &amp;quot;You must do the thing you think you cannot do.&amp;quot; Last Sunday I did one of those things: I ran a marathon.&lt;/p&gt;&lt;p&gt;A longtime runner, I am relatively late to the marathon game.&amp;#0160; Following a cartilage transplant in my right knee almost a decade ago, the surgeon suggested that I would probably never run a marathon.&amp;#0160; I believed this to be true.&lt;/p&gt;&lt;p&gt;The transplant had become necessary after a series of injuries and surgeries beginning when I was in high school.&amp;#0160; Done with cartilage and bone taken from my own hip, the surgery ultimately required intensive rehab.&amp;#0160; It also required three months on crutches--six weeks completely non-weight bearing.&amp;#0160; Needless to say, this had a huge impact on my life.&amp;#0160; At the time I was commuting to a preventive medicine fellowship at the University of Massachusetts in Worcester (2 1/2 hours away) from our home in Yarmouth. I had a six year old and a four year old. My husband was an associate attorney who worked long hours in Lewiston.&amp;#0160; I was driving, working, caring for children, folding laundry and making meals on crutches.&amp;#0160; &lt;/p&gt;&lt;p&gt;When I look back, I&amp;#39;m not sure how I did it.&amp;#0160; &lt;/p&gt;&lt;p&gt;I&amp;#39;m also not sure how my friend, &lt;a href="http://www.megwolff.com/"&gt;Meg Wolff&lt;/a&gt;, a cancer survivor and amputee, does it every single day.&amp;#0160; &lt;/p&gt;&lt;p&gt;In part, this is why I decided to try the marathon.&amp;#0160; I decided to run 26.2 because I wasn&amp;#39;t sure if I could.&amp;#0160; I had been doing long runs of 12-15 miles each week for more than two years, but I had not been specifically training for a long distance.&amp;#0160; The most I had done was a few half marathons.&lt;/p&gt;&lt;p&gt;So two weeks ago, my husband and I signed up for the &lt;a href="http://www.mainemarathon.com/"&gt;Maine Marathon&lt;/a&gt; as a relay team.&amp;#0160; The plan was to find others who wanted to join us, though we knew this wasn&amp;#39;t likely given the late date.&amp;#0160; This did prove to be the case: when race day rolled around, he and I remained the only two members of the &amp;quot;K-Dog &amp;amp; LB&amp;quot; team.&amp;#0160; My job was to run the first three legs of the relay; he would run the last leg.&amp;#0160; My distance would total 21 miles, which was the most I had ever run at one time.&lt;/p&gt;&lt;p&gt;And run it I did.&amp;#0160; I kept a reasonable pace.&amp;#0160; Not fast; not slow.&amp;#0160; I stopped to take iPhone pictures along the way and post them to Facebook (the photo above is from Mile 4).&amp;#0160; I stopped at every water and Gatorade station.&amp;#0160; I stopped to hug relatives and friends, including my son, Campbell, whose soccer team was manning the first water station--and my friend Christine, who was watching the marathon on Route 88.&amp;#0160; I gave encouragement to fellow runners, and expressed appreciation to volunteers and bystanders.&amp;#0160; I wasn&amp;#39;t trying to win.&amp;#0160; I was trying to finish 21 miles.&lt;/p&gt;&lt;p&gt; &lt;/p&gt;&lt;div style="text-align: center;"&gt;&lt;a href="http://aerieriver.typepad.com/.a/6a00e5508c4bdf88330120a5d5b0a2970b-pi" style="display: inline;"&gt;&lt;/a&gt;&lt;a href="http://aerieriver.typepad.com/.a/6a00e5508c4bdf88330120a62c3b9d970c-pi" style="display: inline;"&gt;&lt;img alt="IMG_2581" border="0" class="asset asset-image at-xid-6a00e5508c4bdf88330120a62c3b9d970c " src="http://aerieriver.typepad.com/.a/6a00e5508c4bdf88330120a62c3b9d970c-500pi" title="IMG_2581" /&gt;&lt;/a&gt; &lt;br /&gt;&amp;#0160;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;em&gt;Maine Marathon, Mile 11&lt;/em&gt;&lt;br /&gt;&lt;/div&gt;&lt;p&gt; Which I succeeded in doing.&amp;#0160; My legs were wooden by the time I reached Kevin at the Pine Grove school relay point, but I got there.&amp;#0160; &lt;/p&gt;&lt;p&gt;And then...I kept going.&amp;#0160;&lt;/p&gt;&lt;p&gt;My husband generously slowed his relay leg pace so that I could run with him.&amp;#0160; After cooling his heels for more than two hours, he dedicated the next 45 minutes to offering me encouragement.&amp;#0160; He pointed out the heron wading in the Casco Bay shallows.&amp;#0160; He waited as I stopped to pick up a horse chestnut just before the Martin&amp;#39;s Point Bridge (a tradition I began in my half marathons of previous years).&amp;#0160; He asked how I was doing and accepted non-verbal &amp;#39;thumbs up&amp;#39; in response. He kept us going fast enough so that we could break 4 hours.&amp;#0160; &lt;/p&gt;&lt;p&gt;And when the finish line loomed, he grabbed my hand and half-dragged my stiffened carcass past the timers. Official time: 3 hours 56 minutes.&lt;/p&gt;&lt;p&gt;Not bad for an unplanned marathon.&amp;#0160; One that I have come to call my &amp;#39;stealth marathon,&amp;#39;&amp;#0160; because I ran it unofficially as an individual, and because I tricked myself into it. I started with 21 miles in mind, and finished 26.2.&lt;/p&gt;&lt;p&gt;And this, my friends, is what I am grateful for this Saturday:&lt;/p&gt;&lt;ul&gt;
&lt;li&gt; a supportive husband,&lt;/li&gt;
&lt;li&gt;two knees that work, &lt;/li&gt;
&lt;li&gt;and the chance to do the thing I thought I could not do.&lt;/li&gt;

<content:encoded>&lt;p&gt;Soup!&amp;#0160; There&amp;#39;s no better way to start a meal.&amp;#0160; It &lt;a href="http://www.BOUNTIFUL-BLOG.COM/2008/03/belly-warming.html.html"&gt;warms the belly&lt;/a&gt; and provides a rich source of nourishment.&amp;#0160; It&amp;#39;s also economical.&amp;#0160; Some of the best soups come from &amp;quot;leftover&amp;quot; veggies, grains and beans.&amp;#0160; Our family loves soup so much that we hosted a &amp;quot;soup party&amp;quot; last winter--and we can&amp;#39;t wait to do so again. &lt;/p&gt;&lt;p&gt;In the meantime, we cooked up a pot of soup to share at an impromptu potluck hosted by our friends, Steve and Karin, this past weekend.&amp;#0160; We used summer squash, zucchini, Swiss chard, carrots and basil from our &lt;a href="http://www.BOUNTIFUL-BLOG.COM/2009/09/farmshare-wow.html"&gt;final farmshare&lt;/a&gt;, coupled with a beautiful purple onion from this week&amp;#39;s &lt;a href="http://www.BOUNTIFUL-BLOG.COM/2009/09/gratitude-saturday-bountiful-eating-assigment.html.html"&gt;bountiful&lt;/a&gt; &lt;a href="http://www.BOUNTIFUL-BLOG.COM/2009/09/gratitude-saturday-bountiful-eating-assigment.html.html"&gt;WLOB basket o&amp;#39; fun&lt;/a&gt;.&lt;/p&gt;

&lt;p&gt;It was quickly consumed--no leftovers to be had. My friend, Kelley, asked that I write down the recipe, so here it is!&lt;/p&gt;

&lt;p&gt;&lt;span style="color: #333300;"&gt;&lt;span style="font-weight: bold;"&gt;Summer Squash &amp;amp; Swiss Chard Soup with Basil&lt;/span&gt;&lt;br /&gt;&lt;/span&gt;&lt;/p&gt;

&lt;ul&gt;
&lt;li&gt;&lt;span style="color: #333300;"&gt;2 Tbsp extra virgin olive oil&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;1 large onion, sliced&lt;span style="color: #333300;"&gt;&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;&lt;span style="color: #333300;"&gt;3 gloves garlic, minced&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;2 celery stalks, chopped&lt;/li&gt;
&lt;li&gt;2 carrots, chopped&lt;/li&gt;
&lt;li&gt;1/4 tsp salt&amp;#0160;&lt;/li&gt;
&lt;li&gt;1 can garbanzo beans, drained and rinsed&lt;/li&gt;
&lt;li&gt;2 cups chopped summer squash and/or zucchini&amp;#0160;&lt;/li&gt;
&lt;li&gt;4 cups organic low sodium vegetable stock (more as needed)&lt;/li&gt;
&lt;li&gt;2 cups water&lt;/li&gt;
&lt;li&gt;1 bunch Swiss chard &lt;/li&gt;
&lt;li&gt;1/4 cup (packed) finely chopped fresh basil&amp;#0160;&lt;span style="color: #333300;"&gt;&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;&lt;span style="color: #333300;"&gt;additional salt and freshly ground pepper, to taste&lt;br /&gt;&lt;/span&gt;&lt;/li&gt;
&lt;/ul&gt;

&lt;p&gt;&lt;span style="color: #333300;"&gt;Drizzle oil in a large, deep saucepan or stockpot over
medium heat. Add onion and garlic.&amp;#0160; Saute until softened and translucent, about 3-5 minutes.&amp;#0160; &lt;br /&gt;&lt;/span&gt;&lt;/p&gt;

&lt;p&gt;&lt;span style="color: #333300;"&gt;Rinse Swiss chard well, by immersing in
water several times.&amp;#0160; Remove stems from leaves.&amp;#0160; Shred leaves.&amp;#0160; Discard
stems, or chop and add into vegetable mixture with celery in next step.&lt;/span&gt;&lt;/p&gt;

&lt;p&gt;&lt;span style="color: #333300;"&gt;Fold celery, carrots into onions and garlic.&amp;#0160; Sprinkle with salt. 
Cook until the vegetables are softened, approximately 5-10
minutes. Add squash and beans.&amp;#0160; Cover with stock and water. &amp;#0160; Stir.&lt;/span&gt;&lt;/p&gt;

&lt;p&gt;&lt;span style="color: #333300;"&gt;Bring to a boil, then lower heat to simmer. Cook until beans
are tender, adding stock or water as necessary if the
mixture becomes too thick.&lt;/span&gt;&lt;/p&gt;

&lt;p&gt;&lt;span style="color: #333300;"&gt;Stir in the chard and basil, cook for another five minutes. Taste, adjust seasoning.&amp;#0160;&lt;/span&gt;&lt;/p&gt;

&lt;p&gt;and my friend, Rhonda, artist and committee member for the upcoming American Cancer Society Event, &amp;quot;&lt;a href="http://main.acsevents.org/site/TR/MakingStridesAgainstBreastCancer/MSABCFY10NewEngland?pg=entry&amp;amp;fr_id=19930"&gt;Making Strides Against Breast Cancer&lt;/a&gt;&amp;quot; walk, which will take place in Portland (Maine) on October 18.&lt;/p&gt;&lt;p&gt;After walking the &lt;a href="http://www.pinelandfarms.org"&gt;Pineland&lt;/a&gt; 5K loop, Rhonda and I joined Meg &amp;amp; Tom for a veggie burger and fruit lunch under the tent, enjoying music by a local steel drum band.&amp;#0160; &lt;/p&gt;&lt;p&gt;Before leaving, I purchased a few locally grown items for &lt;a href="http://www.BOUNTIFUL-BLOG.COM/2009/09/three-ps-of-prostate-health-with-ray-ted-on-wlob.html"&gt;Dr. Lisa&amp;#39;s WLOB bountiful Basket o&amp;#39; Fun&lt;/a&gt;. &lt;/p&gt;&lt;p&gt;All in all, it was a worthwhile visit to &lt;a href="http://www.pinelandfarms.org"&gt;Pineland&lt;/a&gt;, despite the necessity of &lt;a href="http://en.wikipedia.org/wiki/Yeti"&gt;Yeti&lt;/a&gt;-ness.&lt;/p&gt;&lt;p&gt;&amp;#0160;&lt;a href="http://aerieriver.typepad.com/.a/6a00e5508c4bdf88330120a5b96408970b-pi" style="display: inline;"&gt;&lt;img alt="DSC01486" border="0" class="asset asset-image at-xid-6a00e5508c4bdf88330120a5b96408970b " src="http://aerieriver.typepad.com/.a/6a00e5508c4bdf88330120a5b96408970b-500pi" title="DSC01486" /&gt;&lt;/a&gt; &lt;br /&gt; &lt;br /&gt; &lt;/p&gt;&lt;p&gt;On a non-&lt;a href="http://en.wikipedia.org/wiki/Yeti"&gt;Yeti&lt;/a&gt; note, today is Saturday, which means gratitude time.&amp;#0160; This week I am especially grateful for my firstborn child, who turned sixteen on Thursday.&amp;#0160; Campbell (shown in the misty-afternoon soccer shot above, on the left) was born the year after I married, during my second year of medical school.&amp;#0160; &lt;/p&gt;&lt;p&gt;I gave birth and took mid-terms in the same week.&amp;#0160; &lt;/p&gt;&lt;p&gt;Campbell and I studied together--ok, he nursed and I studied--attended med school classes together, and ultimately grew up together.&lt;/p&gt;&lt;p&gt;I am very, very grateful for my boy.&lt;/p&gt;

Thanks to Cordelia and Lily for keeping us well-stocked with produce for the past three+ months. We&amp;#39;ve enjoyed our Tuesday farm visits and look forward to returning again in June.&lt;/p&gt;&lt;p&gt;Beginning in November, we will travel to Freeport&amp;#39;s &lt;a href="http://www.laughingstockfarm.com/"&gt;Laughingstock Farm&lt;/a&gt; to take advantage of a winter share for the first time. According to their website, our bi-monthly allotment &lt;span style="font-size: 14px;"&gt;will include&lt;span style="font-size: 13px;"&gt; &amp;quot;&lt;/span&gt;&lt;span style="font-size: 13px;"&gt;fresh mesclun, arugula, lettuce, baby carrots, 
hakurei turnips, and radishes from [their] greenhouses, [and] 
traditional storage vegetables such as beets, cabbage, carrots, turnips, and 
rutabaga.&amp;quot;&lt;/span&gt;&lt;/span&gt;&lt;/p&gt;Speaking of beets, cabbage, carrots and turnips, we fell a bit behind in posting our weekly &lt;a href="http://www.newelmfarm.com/"&gt;New Elm&lt;/a&gt; &lt;a href="http://www.drlisabelisle.com/2007/03/of-sweet-corn.html"&gt;farmshare&lt;/a&gt; photos.&amp;#0160; In case you are wondering what one receives in a &lt;a href="http://www.BOUNTIFUL-BLOG.COM/2008/03/farmshares-fran.html"&gt;share&lt;/a&gt; (at least when one lives in southern Maine), take a gander at the pictures of our September &lt;a href="http://www.BOUNTIFUL-BLOG.COM/2008/03/farmshares-fran.html"&gt;shares&lt;/a&gt; (below). <content:encoded>&lt;p&gt;From high cholesterol to horses...&lt;/p&gt;&lt;p&gt;Previously on our Three-fer Tuesday health segment on &lt;a href="http://www.wlobradio.com"&gt;WLOB&lt;/a&gt; 95.5 FM, we covered &lt;a href="http://hp2010.nhlbihin.net/cholmonth/"&gt;National Cholesterol Education Month&lt;/a&gt; with Ray Richardson (Ted Talbot was in Washington DC).&amp;#0160; Last week we moved on to horses, or more specifically &lt;a href="http://www.maine.gov/dhhs/boh/ddc/epi/vector-borne/eee/faq.shtml#EEE_Q01"&gt;Eastern Equine Encephalitis (EEE)&lt;/a&gt;. &lt;/p&gt;&lt;p&gt;As of our radio conversation on September 22, &lt;a href="http://www.wcsh6.com/life/programming/local/207/story.aspx?storyid=109218&amp;amp;catid=2"&gt;eleven&lt;/a&gt; cases of this potentially fatal disease had been diagnosed in horses around Maine; five horses have died from EEE since August.&amp;#0160; There have thus far been no human cases of EEE in Maine.&amp;#0160; &lt;/p&gt;&lt;p&gt;EEE is transmitted from horses to humans by mosquitoes that bite infected horses: it causes &lt;/p&gt;&lt;ul&gt;
&lt;li&gt;high fever (103-6 degrees Fahrenheit)&lt;/li&gt;
&lt;li&gt;stiff neck&lt;/li&gt;
&lt;li&gt;headache&lt;/li&gt;
&lt;li&gt;coma&lt;/li&gt;
&lt;li&gt;death (1/3 of cases are fatal).&lt;/li&gt;
&lt;/ul&gt;
&lt;p&gt;&lt;/p&gt;&lt;p&gt;Here are the &amp;quot;Three Es of&amp;#0160;&lt;a href="http://www.maine.gov/dhhs/boh/ddc/epi/vector-borne/eee/faq.shtml#EEE_Q01"&gt;Eastern Equine Encephalitis&lt;/a&gt;&amp;quot;&lt;/p&gt;&lt;ul&gt;
&lt;li&gt;&lt;strong&gt;&lt;span style="text-decoration: underline;"&gt;E&lt;/span&gt;liminate&lt;/strong&gt; standing water on your property as part of your fall clean-up routine. Mosquitoes need water to lay their eggs. Empty or cover barrels, pails and other rain-collecting devices.&amp;#0160; Drain pools and puddles.&amp;#0160; &lt;/li&gt;
&lt;/ul&gt;
&lt;ul&gt;
&lt;li&gt;&lt;strong&gt;&lt;span style="text-decoration: underline;"&gt;E&lt;/span&gt;njoy&lt;/strong&gt; the outdoors safely.&amp;#0160; Wear long sleeves and pants, especially at dawn and dusk--peak mosquito hours.&amp;#0160; Bugs particularly enjoy humans who have been exercising, as they give off both heat and increased carbon dioxide.Use insect repellent on yourself and your children.&amp;#0160; (See &lt;a href="http://www.drlisabelisle.com/2005/07/the-deet-dilemma.html"&gt;Protecting Your Family from Bugs: The DEET Dilemma and Safe Solutions&lt;/a&gt;.)&amp;#0160; Cover infant strollers with mosquito netting, and repair window screens in your house.&amp;#0160; If you have a horse, consider EEE vaccination. &lt;/li&gt;

&lt;li&gt;&lt;strong&gt;&lt;span style="text-decoration: underline;"&gt;E&lt;/span&gt;at Immune-Boosting/Bug-Repelling Foods.&lt;/strong&gt;&amp;#0160; Indulge in pungent foods, such as garlic and onions, to ward off flying pests.&amp;#0160; Decrease salty, sugary and high-potassium foods--mosquitoes seem to enjoy these the most.&amp;#0160; Want to include more veggies in your diet?
