Preheat an oven to 350 degrees.
Sprinkle olive oil in a cake pan and place your trout filet in the center. Then sprinkle flake salt and herbes de provence on the fish and place:
Sage
Thyme
Baby carrots
Sliced shallots
Whole peppercorns

Around the filet and bake for 30 or so odd minutes.
