Farli ripassare nella marinatura. Passarli in una padella ben calda con foglie di salvia e rosmarino. Bagnare a metà cottura con cognac o brandy. Soffriggere l'aglio, la cipolla e le acciughe per 10' aggiungere la verdura cruda tagliata a pezzetti e cuocere lentamente per 10'. Bagnare col vino, aggiungere le spezie, cuocere per 30 minuti. Aggiungere tutte le verdure in scatola, ben colate. Cuocere per 15 minuti, aggiustare di sale, peperoncino,pepe. Sgranare il cous cous, riporlo in un piatto da portata, con una schiumarola filtrare e deporvi le verdure. Tagliare fette di 1/2 cm di larghezza, disfare con le mani le rotelle ottenute in una zuppiera, tagliare a pezzetti i pomodorini, tritare il basilico ed unirlo ai pomodorini, unire sale ed un filo d'olio, versare il composto sulle tagliatelle, guarnire con qualche fogliolina di basilico intera! Salare, pepare, aggiungere il riso e tostare per 3', versare il vino e far sfumare, portare a fine cottura col brodo caldo, aggiungere il formaggio, togliere dal fuoco e far riposare 2'-3'. Aggiungere le coste di peperone e far saltare ancora per 2'-3', mettere le acciughe e il brodo. Far cuocere a fuoco lento per 30' con coperchio, togliere i peperoni e disporli su un tagliere, con un cucchiaino separare la polpa dalla pelle. Versare il latte e far cuocere per 20', sbattere le uova, incorporare il formaggio, frullare la crema col minipimer, stemperare l'uovo con una parte della crema, versare tutto in pentola. Versare il riso e far tostare per 2', versare il vino e portare a fine cottura col brodo. A cottura quasi ultimata aggiungere la 2a pianta di radicchio tagliata fine. &lt;/div&gt;</description><app:edited xmlns:app="http://www.w3.org/2007/app">2009-03-02T12:21:34.539+01:00</app:edited><thr:total xmlns:thr="http://purl.org/syndication/thread/1.0">0</thr:total></item><item><title>GNOCCHI SLURP della piccola Vissani</title><link>http://angolo-dello-zio.blogspot.com/2008/12/gnocchi-slurp-della-piccola-vissani.html</link><category>primi</category><category>gnocchi slurp della piccola vissani</category><author>palestresomatos@gmail.com (Master of www.somatos.com)</author><pubDate>Wed, 04 Mar 2009 01:38:56 PST</pubDate><guid isPermaLink="false">tag:blogger.com,1999:blog-5932715782952097214.post-2811487291503877863</guid><description>&lt;span style="font-size:130%;"&gt;&lt;span style="font-weight: bold;"&gt;GNOCCHI DI PATATE AL SUGO SLURP DELLA PICCOLA VISSANI&lt;/span&gt;&lt;/span&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p style="font-weight: bold;"&gt;INGREDIENTI:&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;1Kg di patate per gnocchi&lt;/p&gt;&lt;p&gt;2hg di farina 00( + la necessaria per impastare)&lt;/p&gt;&lt;p&gt;2 tuorli d'uovo&lt;/p&gt;&lt;p&gt;500g di passata di pomodoro&lt;/p&gt;&lt;p&gt;2 cipolle medie&lt;/p&gt;&lt;p&gt;1 bicchiere di latte&lt;/p&gt;&lt;p&gt;2 spicchi di aglio spelati e pestati&lt;/p&gt;&lt;p&gt;qualche foglia di basilico&lt;/p&gt;&lt;p&gt;un rametto di rosmarino&lt;/p&gt;&lt;p&gt;parmigiano grattugiato&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p style="font-weight: bold;"&gt;PREPARAZIONE:&lt;/p&gt;&lt;p&gt;Far friggere in olio per 20 ' la cipolla tagliata fine, colarla dall'olio, salare e versare il latte. Far cuocere per altri 20' a fuoco lento, pepare e frullare nel minipimer. Far saltare in olio per 2' aglio e rosmarino, salare e versare la passata. Cuocere per mezz'ora, togliere aglio e rosmarino, aggiungere il basilico tritato grossolanamente e lasciar riposare fuori fuoco per 5'. Far passare allo schiacciapatate le patate bollite, far raffreddare, aggiungere uova e 2hg di farina e impastare delicatamente, formare delle salcicce di grandezza a piacere. Tagliare dei pezzi uguali e "strascinarli" su una forchetta, far bollire in acqua ben salata e con un goccio d'olio. Quando gli gnocchi salgono in superficie prenderli con una "schiumarola", solo successivamente, deporli in un colapasta e quindi in una zuppiera.
