Wine grapes grow, with few exceptions, only in bands delineated by latitudes 30-50 degrees North and 30-45 degrees South of the equator. Unlike most crops, grapes don’t require fertile soil. The thinness of the soil restricts the quantity of the crop, producing fewer grapes of higher quality.

The best wines are produced from soil that would be considered poor quality for other agricultural purposes. The stellar wines from Bordeaux are made from grapes grown in gravelly soil, atop a base of clay or chalk. Fewer grapes are grown, but high in quality. The pebbly earth allows for good drainage — grapevines require access to adequate, but not excessive, water. As the roots reach down further, more complex minerals are absorbed.

Vineyards are most often founded in river valleys, with slopes that provide abundant sunshine. Vines there are most often of the European species vitis vinifera, from which many common wines are made, such as Chardonnay, Cabernet Sauvignon, and Merlot.

Viticulture, the practice of growing grapes for wine, is today one of the most complex agricultural undertakings. A master vintner (today, sometimes called an oenologist), must be an expert in soil chemistry and fermentation, climatology and several other ancient arts and modern sciences.

In addition to categorization by variety, the products of these vines are classified by vinification methods – sparkling, still, fortified, rosé, blush — or by region — Bordeaux, Burgundy and Alsace — and of course by vintage, as well as a dozen other methods.

After the farmer, chemist and manufacturer have had their say, the businessman must take over. In 2002, 595 million gallons of wine were sold in the U.S. alone, representing over $20 billion in consumer spending. France led the pack with 22% of export volume, with Italy a close 20% behind.

The bold artists of wine must possess a sensitive nose and palette and balance dozens of time-sensitive factors such as when to harvest, how long to ferment and age, when to bottle. And that’s before considering modern manufacturing and marketing requirements, not to mention legal restrictions.

The focus has always been on wine here. Vivat Bacchus has five wine cellars holding some 20,000 bottles with around 1000 labels. Although many of them are from South Africa, home of the owners and where this concept originated, France and the rest of the world are also well represented. On the restaurant wine list, the price for a bottle ranges from £17.90 for an Australian Coriole Chenin Blanc to £995.00 for a Petrùs (Pomerol, Bordeaux) 1978, or a La Tache 1982, Domaine Romanee Conti. Because the wine list can only cover about 5% of the stock available, wine waiters invite diners at their basement tables to join them behind the cellars’ glass screens and select their own wines.

The food, of course, has to match the brilliance of the wine options, and Head Chef, Robert Staegemann sees to that. The unfailing availability of springbok on the menu reflects the South African ownership. But, as with the wine, there is an eclectic variety of influences from around the world, and the menu is changed every few weeks, so customers can get a different experience when they come again.

For the £1000 menu, the early courses include such delicacies as sevruga caviar and lobster. The main course is a Wagyu steak – this is from a breed of cattle that originated in Japan and produces extremely fine beef – served with a bottle of Chateau Lafitte Rothschild. A 1963 Taylor’s Port accompanies a board of at least 15 different cheeses. And a Chateau d’Yquem comes along with the dessert.

But you don’t have to pay £1000 to eat and drink at Vivat Bacchus. An average three course meal will set you back about £35, before wine. They also offer good value set lunches of two or three courses at £15.50 and £17.50 respectively, with wine and cheese extra.

Alongside the restaurant is a wine bar and delicatessen, where a tapas selection that includes biltong is served throughout the day. Or you can just choose from the selection of 80 odd cheeses to go with your wine.

So, whatever your budget, if you’re passing through the City of London, this is an experience not to be missed.

Those who retire to The Last Post in Falls Village, Connecticut, will spend their days relaxing in the sun with good friends, taking advantage of recreational activities such as sightseeing and climbing, enjoying good food, and taking leisurely naps. Residents at The Last Post can rest assured that their health will be looked after, and that they will always have a safe, comfortable home.

Before you put your house on the market and start packing, you should know that this is a retirement home for cats. A recent census concluded that there were approximately 200 cats in residence, along with a few dogs, pigs, and goats thrown in for good measure.

As you wander through the four rooms and along the spacious decks at The Last Post, warm little bodies come over to you and press up against your leg, inquiring, “mew?” Cats are everywhere; sprawled across chairs, curled up on pillows, soaking up the sun, batting at toys, and wrestling with friends.

As you wind your way through the maze of cats, you will see many dishes of fresh food and water available, and rooms filled with comfy chairs, couches, beds, and cushions. The air quality, to phrase it delicately, it is surprisingly breathable. This in itself is an impressive feat, considering the number of cats in residence. There are plenty of clean litter boxes available, and there is never a line for the powder room.

While the accommodations are not exactly posh, they are more than satisfactory. In fact, The Last Post provides all of the amenities desired by your average Superbowl crowd: comfortable furniture, snacks, drinks, access to the facilities, and good buddies.

While each resident at The Last Post has a unique story, the majority of the cats have come to The Last Post to retire because of the wishes of their dearly departed owners, as specified in their wills. Knowing that a beloved pet will always be loved and cared for can be a great comfort to people dealing with the myriad of stressful end-of-life issues. Arrangements can also be made for pets whose owners have become disabled or have entered assisted living. Stray cats are often brought to The Last Post, and are usually accepted after they have received the appropriate veterinary care. Many of these cats are available for adoption.
The Last Post is a non-profit organization, located on a beautiful 37-acre nature preserve. It was founded in 1982 by Pegeen Fitzgerald, a New York radio personality, advertising executive, author and animal advocate. Sheila Ball and Jill Reeves are the current full-time shelter supervisors.
